INTRODUCTION

This is one of the most important concerns of modern society. In this time of the century when

IODINE
Most people know of iodine as a solution applied to the skin to kill germs.
However it is also used in nutrition, even though it is surprisingly under-represented in
literature on its effects on human health.
On a sideline, iodine is actually playing a role in our environment. For instance, the iodine level
in the atmosphere of the earth is known to be correlated to the stability of our ozone layer.
This atmospheric iodine in turn is linked to the balance in the soil and in the vast oceans.
Furthermore, studies have shown that iodine concentration in plants can help to offset the
stress mechanism place on plants due to the excessive concentration of salt in the soil.
Historically, iodine was discovered in 1811 by a French chemist Bernard Courtois.
Due to its involvement in the Napoleonic Wars, France was in dire need of saltpeter, which is a
vital component of gunpowder.
Saltpeter was produced from French niter beds and required sodium carbonate, which was
isolated from seaweed. In the isolation of sodium carbonate, Bernard Courtois noticed a cloud
of purple vapor when it crystallized on cold surfaces and formed dark crystals. That was the
beginning of the discovery of iodine.
So, now back to human health…
While related studies are not as extensive as they should be, one area in which iodine is
intimately involved in our human function is in the workings of our thyroid gland.
Let’s take a closer look at iodine.
Being a chemical element and trace element, iodine is required by the body for its daily
functions. However we are unable to make it on our own, therefore iodine must come from our
diet.
Iodine is absorbed from the blood by the thyroid gland for the synthesis of thyroid hormones,
thyroxine (T3) and triiodothyronine (T4). These hormones are then released into the
bloodstream.

Thyroid hormones play a key role in our metabolic system and regulate the metabolic rate. At
the same time, they maintain the lipid levels in our tissues and have been shown to affect
cholesterol levels too. With the absence of the hormones, the metabolic rate would decrease.
In other words, the thyroid gland regulates the amount of body fat you have. Other than that, it
can also manipulate how our fats are used for bodily function and maintenance.

The Dietary Reference Intake for iodine is as follows:
Infants (up to 12 months) - 110 – 130 micrograms

Iodine can be found in the following sources:
Fish (cod, salmon, sardines, scallops, shellfish, shrimp)
Kelp

Peanuts and other seeds or nuts

In fact, it has even been said that brown sea vegetable species (kelp, wakame) are richer in
iodine concentrations than the red varieties.
It is obvious from the above that people who are into sea-food are likely able to meet their
Daily Reference Intake needs.
For those people who completely avoid seafood for various reasons of their own, they may
consider iodized salt.
Iodized salt is mainly a fortified form of table salt. Crucially, it contains a high amount of iodine.
As you can see, it is apparent that we may be able to get our iodine sufficiently from a diet of
the above sources. Yet, iodine deficiency can still occur.
In the States, the risk is quite substantial. Since the 1970, the average urinary iodine has
dropped by more than half.
There are 2 reasons why iodine levels are dropping:
Bakers and bread manufacturers are moving away from iodine-containing compounds, because they want to keep their dough fresh.
The average household is doing less cooking. With less cooking, and more commercially-packed food (fast food, ready-to-eat, and prepackage food), there is less iodine absorption. Even if the commercially-packed foods are heavily salted, the salts may not have been necessarily fortified with iodine.
Indeed, as with other mineral or vitamin deficiency, iodine deficiency can result in medical
conditions.
For instance, iodine deficiency can give rise to hypothyroidism (symptoms include depression,
fatigue, goiter, low basal body temperature and weigh gain) and intellectual disability. Other
conditions can include cancers of several kinds: breast, ovarian, prostate and stomach.
Furthermore, iodine deficiency during pregnancy is a serious matter for both mother and child.
For the mother, it may lead to high blood pressure. For the unborn child, it may lead to mental
retardation.

The most common forms of thyroid conditions are hypothyroidism and hyperthyroidism.
To simplify, hyper- refers to the excess of, while hypo- refers to the lack of.
In hyperthyroidism, the excess amount of the hormones may be caused by the overproduction
from the thyroid gland or the pituitary gland (releasing excessive TSH, or thyroid stimulating
hormones).
With the excess, symptoms such as diarrhea, difficulty in sleeping and heat intolerance etc are
experienced.
In hypothyroidism, the thyroid gland may not be fully functioning and thus results in a drop of
thyroid hormone levels.
In this case, people suffering from the affliction may be diagnosed also with sleep apnea,

L-GLUTAMINE
Glutamine is a very important amino acid for athletes. It is the most abundant non-essential
amino acid in the body, making up about 60 per cent of the extracellular and intracellular
amino acids, and is also known as L-Glutamine.
On a daily basis, our body produces 50 – 120 grams of glutamine. Most of it is stored in the
muscles, and then the lungs.
It is not considered an essential amino acid because it can be synthesized from other aminos –
glutamic acid, isoleucine and valine.
Glutamine plays a major role in liver function. At the same time it acts as cellular fuel to the
muscle and other tissues in the body, and may also regulate protein synthesis.
Glutamine is also used in several medical treatments, such as being used to counter the side
effects of chemotherapy (for cancer), nerve pain treatment and so on.
It is also effective in boosting the immune system and digestive system for those people who
are undergoing radiochemotherapy for esophageal cancer.
In a nutshell, strenuous exercise stresses our immunity system.
Here, we refer to the 1997 Los Angeles marathon where a study revealed that participants who
fell sick after the race were about 6 times higher than non-participants who were training at
the same level.
According to the 1997 issue of European Journal of Applied Physiology, researchers reported a
decrease in the plasma levels of glutamine in athletes after an exhausting marathon.
After the event, the researchers found that glutamine levels continued to fall.
Subsequently, it took about 16 hours more for the glutamine level to resume back to the
normal concentration.
Unfortunately, lymphocytes (white blood cells) require glutamine for their growth.
Thus, when the glutamine levels fell after the strenuous marathon, the lymphocyte
count also drastically dropped.

Due to this, and other effects of the marathon on the body’s immune system, it brought about
the high rate of incidence of illnesses among the athletes.
To validate their findings, the researchers turn to another country next – England.
According to their observations and studies, they found a similar effect, a relationship between
glutamine supplement and the rate of illnesses in trained athletes.
For their study, they recruited about 200 runners and rowers. Amazingly, the results revealed
nearly the same thing – the athletes were more prone to illnesses after intense training. And
the longer the training period, the severity in infection or illnesses were reported.
To continue the study further, the researchers divided the participants into 2 groups.
The first group was given a dose of 2.5 grams of oral glutamine to be consumed immediately
after a strenuous training event. 2 hours later, they were to consume another 2.5 grams.
On the other hand, the second group was given a placebo.
The following week, 19% of the first group participants reported an illness or infection.
However, the second group which took the placebo reported an overwhelming 51% incidence
rate of illness.
Indeed, while the body can produce glutamine, it is not sufficient for the body’s usage.
Especially after strenuous exercise, the demand for glutamine would be too great and the body
is not able to produce sufficient amounts. This is where glutamine supplements come in.
Besides playing an important role in the immune function, glutamine also figures largely in the
elimination of lactic acid from our body.
Lactic acid is produced when glucose and glycogen stores are burned by the body to produce
energy and fuel for exercise.
Glutamine regulates lactic acid levels by producing bicarbonate ions which neutralizes lactic
acid in the bloodstream.
In the meantime, glutamine is also used in the European countries, where they are being
administered to hospital patients to treat stress or trauma. Trauma here refers to burns, or
from diseases or surgery procedures.

To an athlete, the size of the glutamine pool in the muscle cells is very important.
When there is sufficient glutamine in the body, the other aminos will not be conscripted into
glutamine production. This also means that the skeletal muscle which athletes work so hard to
build up would also not be broken down to be diverted for glutamine production.
Dietary sources of glutamine include the following:
Beef, pork, poultry etc
Milk, yogurt, cheese etc
Cabbage, parsley, spinach etc
For the matter of glutamine supplementation, studies have shown that between 50% and 85%
of a large dose of glutamine ingested orally does not reach the bloodstream. Instead, it is used
by the mucosal cells of the intestinal tract.
In that case, then what is the best to consume glutamine supplement?
There are two schools of thought as to the best way around this.
According to one, the advice is to consume a very large amount (5 grams or more) of
glutamine, all at once so that it does not matter that a significant amount is destroyed.
On the other hand, researchers suggest that it is best to have an intake of 2-3 grams four or
more times throughout the day.
As for the timing, the general advice is immediately after training and before bed.
