What is bubble tea?

Bubble tea is usually made by mixing tapioca pearls with milk tea. Tapioca is a starch

extracted from a plant called cassava (木薯).

The drink is usually served with a wide straw so that we can suck up the milk tea together with the tapioca pearls sitting at the bottom.

Tapioca pearls are made by tapioca flour, brown sugar and water:

1 In a saucepan, dissolve 40 g of brown sugar in 80 g of water.

2 Boil the solution in step 1. Once it boils, turn off the heat. Add 115 g of tapioca flour into the saucepan. Stir well. Knead the ingredients into small tapioca pearls.

3 Cook the tapioca pearls in a pot of water. They will sink at first.

4 The pearls will gradually float to the top. Take out the pearls and stir them with 35 g of the brown sugar. That’s it!

Bubble tea, a ‘calorie bomb’?

Tapioca pearls is an important source of sugar and energy in bubble tea.

The research found that the average energy level of a cup of bubble tea could reach 400 kcal. This is equal to the energy provided by two regular bowls of rice. The tapioca pearls contributed over 40% (170 kcal) of the total energy.

To reduce the threat of this ‘calorie bomb’, bubble tea lovers are advised to request fewer pearls or choose a smaller serving size of the drink.
