It has certainly been a mild winter here in Rhode Island, and as this issue hits the streets, spring’s officialarrival—March20—islessthanthree

weeks away! Some days in February felt as if spring were already upon us. In fact, our crocuses are well on their way to full bloom. As things begin to turn greenandcometolifeseeminglyovernight,Iamoptimistic about 2012. Perhaps it is the energy I feelorthewaythenewsseemsmorepositivethesedays.Whateverthereason,Iholdgreatexpectationsfor the year and for all of us here to experience and enjoy this momentum. Onceagain,BillandIhaveredoubledoureffortstostayinshapeandeatright.WhenIthinkaboutourconversations,Ilaughalittleattherealizationofjusthow much time we spend discussing food. What will we eat, where, with whom, andwhen.Wetrytokeephealthydietapartoftheconversation,butit’snoteasy.Let’sfaceit,foodisalargepartofmostpeople’slives;evenoursociallivestendtorevolvearoundit.Healthyfamiliesswearbythepowerofeatingtogethertosharetheday’sstories;holidaysarescheduledaroundwhoishostingandwhat’sonthemenu;andopportunitiestomeetupwithfriendsofteninvolvefood.Weareconstantly bombarded with food options and challenged by the desire to eat en-joyable, healthy and affordable choices. On page 20, Judith Fertig has some great pointers in Eating Well on a Budget. A well-stocked pantry, smarter shopping and eating less meat are all ways we can work toward that. Moreandmorefolksarebecomingconcernedaboutwheretheirfoodcomesfrom,whichisdrivingthehigherdemandforlocalandorganicoptions.Weareallfortunate that this increased demand has brought about a growing number of farm-ers markets that offer us fresh, local products. This popularity has actually resulted in them growing by more than 5,000 in the last two decades, with more than 40 hereinRhodeIsland!YoucanreadaboutthevariousreasonsforthisincreaseinChanging the Way America Eats,byMelindaHemmelgarn,onpage24.Oneofthemost fascinating statistics in the article is that we are spending only half as much of our disposable income for food, and twice as much on health care. The relation-ship between what we eat and how we feel is becoming harder to ignore. Protecting our farmland and our farmers by encouraging the relationship be-tween them, hospitals, restaurants, schools and the consumer is a win-win for all involved.Whetheryouobtainyourfoodfromfarmersmarketsoryourowngarden,it’s almost spring! Health care was changing, and time with patients was becom-ingevenmorelimited.Patients

withseverementalillness,forexample,werebeingapprovedforonly15-min-ute sessions. Feeling as if her time with themwasnotsufficientenoughtohelpthem heal, she began searching for other alternatives;somethingthatwasfocusedon the whole person. What she found was Chinese medicine.“Iwasimpressedbythefocuson the patient-practitioner relationship, confidentiality,trust,theimportanceofnot judging patients, and of course, treat-ingthewholeperson,”saysSommerville. She immediately applied to the NewEnglandSchoolofAcupuncture,the oldest graduate school for the study ofEastAsianMedicine(EAM)intheUnited States, and is now licensed to practiceEAMinbothMassachusettsand Rhode Island. She also went on to earn the credential of Diplomate of Acupuncture from the National Certi-ficationCommissionforAcupunctureandOrientalMedicine. Ten years ago, she founded Ho-listic Health Rhode Island (HHRI) as a privatepractice.However,afterafewyears of referring patients out for other modalities,sherealizedhowconvenientitwouldbetohaveateamofpractitio-

nersandserviceprovidersallunderoneroof. New MichiganStateUniversity(MSU)research suggests that foods high in fiber—butnotnecessarilylowinsatu-ratedfatsorcholesterol—aretiedtolowering the risk of heart disease and Type2diabetesinteens;it’sagenera-tionnotedtobeathighriskfordevel-oping chronic disease, due in part to the popularity of processed foods with this age group. The researchers found that due to low consumption of fruits, vegetables,wholegrainsandbeans,theteens’totaldietaryfiberintakewasabout 13 grams a day, well below the recommended 26 grams and 38 grams for female and male adolescents, respectively. “Ourstudyreinforcedthecur-rentdietaryrecommendationsforfiberintakebyincludingavarietyofplant-based foods,” says lead author Joseph Carlson, a registered dietitian and associateprofessoratMSU.“Itmaybebetter to focus on including these foods than to focus, as is commonly done, on excluding foods high in saturated fat.” Teens are not the only ones that benefitfromafiber-richdiet.Arecentreport published in the Archives of Internal Medicine showed that adult women and men that eat at least 26 gramsand30gramsoffiberaday,re-spectively,hadareducedriskofdeathfromcardiovascular,infectiousandrespiratory diseases.

What’sdrivingthesurge?Incentivesinclude our appreciation of scrumptious seasonalflavor,acomfortingsenseofcommunity and the

reassurance of knowing exactly where ourfoodcomesfromandwho—oftenonafirst-namebasis—greworproducedit. Good, healthy food germinates in genuinerelationships—betweengrow-ers and consumers, and farmers and the Earth.Localmarketsboosthometowneconomies,too;theUSDApredictsarecord $7 billion in such food sales this year,deliveringagreaterproportionoffood dollars directly to farmers. When the National Young Farmer’s Coalitionrecentlysurveyed1,000beginning farmers, it found that access to capital, land and health insurance presented the biggest hurdles to entering farming as a career. StickerPriceVersus Hidden CostsTo consumers coping in a down econo-my, the cheapest price may sometimes seem like the best choice. John Ikerd, professor emeritus of agricultural eco-nomicsattheUniversityofMissouri,notesthat,“Americans,onaverage,are spending only half as much of their disposable income for food today as theywereinthe1960s.”However,atthesametime,“Thepercentagespenton health care has doubled.” Scores of studies show that many of today’s chronic diseases are related to poor diet. Factor in medical costs associ-ated with food-borne illnesses, antibiot-ic-resistant bacteria and pesticide- and hormone-contaminated food and water, andit’seasytounderstandwhyMichaelCarolan, author of The Real Cost of Cheap Food, declares,“Cheapfood...isactuallyquiteexpensive.” Onewayforfamiliestosavemoney on food costs is to reduce waste. Jonathan Bloom, author of American Wasteland, says Americans waste more than 40 percent of the food we produce for consumption, throwing away $100 billion-plusinfoodayear.Mostofitendsupinlandfills. Inspiring TrendsStephanie Coughlin, a farmer in San Diego,California,says:“Ifyoudon’thavelocalfarms,youdon’thavelocalsecurity.” Across the country, communi-tiesareprovinghowafewconsciousbuyerscanimproveeveryone’saccesstohigh-qualitylocalfoods. Farm to Hospital: As director of nutritionservicesatFletcherAllenHealthCare,inBurlington,Vermont,Registered Dietitian Diane Imrie has the powertoinfluencetheeconomicsecu-rity and sustainability of her community and surrounding region. Imrie sources approximately 40 percent of the food servedatherhospitalfromfarmslo-catedwithinaday’sdrive.Inherwork,she helps keep farmers on their land whileprovidinghigherqualityfoodtopatients and staff. The facility also supports onsite gardens, which yielded $2,000 worth ofproducein2011,despiteVermont’sshort growing season. The hospital food issopopularthatitscaféservesdown-town businesspeople, further bolstering profitabilityandcommunitybenefits. For local maple sugar producer Bernie Comeau, Imrie’s consistent pur-chasesprovideanincomehecancountoneverymonth.Imrieisgladtonotethat for farmers, selling their food to the hospitalis“likeastampofapproval.” MarydaleDeBor,whofoundedandledthe“plowtoplate”compre-hensivefoodanddisease-preventioninitiativeassociatedwithConnecticut’sNewMilfordHospital,maintainsthat,“Institutionalleadershipiscritical.”ShesaysthatthankstoasupportiveCEOthatbelievedinbringingfarm-freshfoodstohospitalfoodservices,theirretailcafémorethandoubleditsrevenuewithintwo years. DeBorbelievesthathospitalfoodshould set an example for public health.

“Weneedtosupportbeginningfarmers,and more food hubs and new distribu-tion systems to facilitate access,” she says. “Consumersneedtolettheirhospitalsknow they should focus on good food and nutrition.” Farm to Restaurant: Leigh Lock-hart,ownerofMainSqueezeNatural Foods Café and Juice Bar, in Columbia, Missouri,buyssuppliesdirectlyfromlocalorganicfarmersandneverquibblesabout price. She composts any food waste in her garden, where she grows some of the produce used in her restau-rant. Relationships with chefs are impor-tanttofarmers,advisesCarolAnnSayle,owner of Boggy Creek Organic Farm, in Austin, Texas. Farmers can rely on a sure buyer;chefsappreciatedependableandhighqualityfood;andcustomersreturnbecause of the great taste. Farm to School: Organic farmer Don Bustos, program director for the AmericanFriendsServiceCommitteeofNewMexico, trains beginning farmers andranchersinwaystoprovidefoodtotheAlbuquerquePublicSchoolDis-trict and beyond. For example, farmers grow crops during the winter in solar-powered greenhouses, and aggregate their products to meet school needs. Mobilemeatprocessinganddistribu-tion networks also create jobs while keeping small farmers economically andenvironmentallyviable,explainsBustos. Local agriculture fuels strong communities and fresh local foods help childrenthrive.InthePacificNorthwest,Ameri-CorpsvolunteerEmmaBrewsterworkswith the Real Food Challenge, a national youth-based program that encourages collegesanduniversitiestoshift20per-cent of their food budgets to farm-fresh, locally sourced foods. Brewster works with Lucy Norris, project manager for the Puget Sound Food Network, which creates opportunities beyond farmers’ markets for local area farmers to connect with regional processors, distributors and end users, including Seattle Public Schools.

Whenthebillcomesupforrenewaleveryfiveyears,thepublichasachancetovoicesupportforagreener,healthier,moresustainablefoodandfarmingsystem. Sign up for Farm Bill updates and action alerts from the National Sustainable Agriculture Coalition (website below), and talk with members of Congress about concerns. MarydaleDeBor,whoworkstoimprovefoodqualityinConnecticut,recommendsthatcitizensalignwithfarmadvocacyorganizations.“Ad-vocacyisthesinglemostimportantneednow,aroundtheFarmBillandstate policies,” she says.

InternalRevenueService(IRS)taxauditscanbecomplicat-ed and time-consuming, but the right tax preparation can make them less stressful. Taxpayers facing an audit should rememberthesefivethings:

Be concise. TaxpayersshouldonlygivetheauditorcopiesofdocumentstheIRSspecifi-callyrequestsandanswerallquestionshonestly.Donotvolunteerinformationthatisnotrequested.

Appeal. If taxpayers disagree with an auditor’s findings,theycanfileanappealwiththe IRS. Appeal options include meet-ingwiththeauditor’ssupervisor,orfilinganadministrativeappealtotheU.S. Tax Court, U.S. Claims Court or the local U.S. District Court.

Of course, the best audit is the one that doesn’t happen. To lessen the likelihood of being audited, taxpayers should re-port all income and only claim credits and deductions they are entitled to.

Choose different main ingredients: If you’re primarily relying on a chicken and rice diet, switch the pooch to something completely different, like a duck and sweet potato or bison and barley diet, advisesVeterinarianSeanDelaney.

It’s okay to change brands: Although some food manufacturers havedevelopedfoodlinesdesignedtorotateamongitems,you can always try out different brands and formulas. Stick to the high-qualitymixesforoptimalnutrition,saysVeterinarianTracyLord.

Change the menu regularly: If you plan to rotate a dog’s commercially prepared diet, consider buying a new blend eachtimeyoushop,advisesVeterinarianRebeccaRemillard.
