Cinnamon  is  a  spice  (http://www.curejoy.com/content/cinnamon­6­reasons­why­i­think­you­should­say­yes­to­it/) obtained from the inner bark of several trees from the genus Cinnamomum  inthe  family  Lauraceae.  While Cinnamomum  verum  is  sometimes  considered  to  be  “true  cinnamon”,most cinnamon in international commerce is derived from related species, which are also referred to as“cassia” to distinguish them from “true cinnamon”.

Cinnamon is the brown bark of the cinnamon tree, which when dried, rolls into a tubular form known asa quill. Cinnamon is available in either its whole quill form (cinnamon sticks) or as ground powder. Thename  “cinnamon”  comes  through  the  Greek  kinnámōmon,  possibly  from  Phoenician:  qinnāmôn.  Inseveral European languages, the word for cinnamon comes from the Latin word cannella, a diminutiveof canna, “tube”, from the way it curls up as it dries.

Cinnamon’s  unique  healing  abilities  come  from  three  basic  types  of  components  (cinnamaldehyde,cinnamyl  acetate,  and  cinnamyl  alcohol)  in  the essential  oils  found  in  its  bark,  plus a wide  range ofother volatile substances.

 

Ceylon Cinnamon v/s Cassia Cinnamon:While  there  are  approximately  one  hundred  varieties  of  for  cinnamon,  Cinnamonum  zeylanicum(Ceylon  cinnamon  known  as  “true  cinnamon”)  and  Cinnamomun  aromaticum  (Chinese  cinnamonknown  as  “cassia”)  are  the  leading  varieties  consumed.  While  both  are  relatively  similar  incharacteristics and both  feature a  fragrant, sweet and warm  taste,  the  flavor of  the Ceylon variety  ismore refined and subtle. Cassia, the less expensive variety,  is the most popular variety  in the UnitedStates.
