About IIFPTIndian Institute of Food Processing Technology (IIFPT), formerly Indian Institute of Crop Processing Technology (IICPT) is a National level research and academic institution under the Ministry of Food Processing Industries, Government of India. The Institute has its origin way back in 1968 when it was started as a tiny R&D laboratory in the Modern Rice Mill Complex of Tiruvarur Co-operative Marketing Federation (TCMF) at Tiruvarur, Tamil Nadu, India. The objective of the first lab was identifying technologies for preserving high moisture paddy. This laboratory was later upgraded as a national laboratory and renamed as Paddy Processing Research Center (PPRC) in 1972. The focus of PPRC was to solve problems related to post harvest processing and preservation of paddy. Later, the institute was shifted to its current location at Thanjavur in 1984. The Honorable Union Minister of Food Processing Industries has rechristened IICPT as Indian Institute of Food Processing Technology (IIFPT) on 31st March 2017. In its upgraded form, IIFPT will focus on providing solutions to all food processing areas including fish, meat and dairy products through intensive research and development activities.

Director’s MessageOn behalf of the Organizing committee of International Conference on Recent Advances in Food Processing Technology (iCRAFPT 2018), I am delighted and honored to invite all the national and international dignitaries and delegates to this conference, to be held in Thanjavur, the cultural capital of South India. I’m sure that this conference would provide a platform for the sharing of scientific findings, exchanging of ideas, and render strong networking opportunities. We, the Team iCRAFPT 2018, envisage the conference to be an august gathering with the active participation of scientists, academicians, research scholars, industry personnel and students from around the globe. Indeed, the participants of iCRAFPT 2018 can also experience Thanjavur’s rich culture, art, architecture and music, which are world-renowned!
Food processing has always been an essential factor in providing enough as well as quality food to the people. At the outset of the conference, it would be an opportune to sketch the importance of this sector and what prompted us to envisage such an event. In the current scenario of continuous pressure on producers and food processors to produce abundant quantity of high-quality foods, newer inventions, discoveries and their applications become indispensable. The rising global population poses many challenges, amongst which food safety, security and sustainability are very important. Despite impressive production, most of the fresh produce in the developing countries perish owing to inadequate processing and storage. This is rather alarming, and there is a global urge to combat the situation. The non-farm sectors such as those involving fish, poultry and meat also warrant a deep attention. The upcoming sectors of nutraceuticals, food additives and nanotechnology hold tremendous promise. However, the laboratories should endeavor to establish the impact, applications and diversity of these promising fields. It is more urgent to bridge the gap between the farm and fork, than ever before. These would only be possible through a forum as this, for ignition of newer ideas and approaches in the minds of the participants. The attendees would certainly gain from colloquy of notable and eminent scholars of the field. The themes of the conference have been identified which reverberate with the sectors of immediate attention and offer significant developmental opportunities.
The conference aims not only to showcase the presence of distinguished personnel of this field and their discourses, but also facilitate the exchange of research findings and ideas of those actively involved in research. The event has received the patronage of participating journals such as Journal of Food Process Engineering (Wiley), Drying Technology (Taylor & Francis), Journal of Food Science and Technology (Springer), Journal of Food Processing and Preservation (Wiley), Environmental Chemistry Letters (Springer) and Food Engineering Reviews (Springer). The participants of iCRAFPT 2018 would get an opportunity to publish in these journals through the conference. Besides, the conference would also have a proceeding publication, with all the selected abstracts. During the event, student activities such as quiz, short film and a Hackathon would also be conducted. Rewards and awards are included to encourage the participants.
I would like to thank all those involved in organizing the conference, and the eminent personalities who have consented to participate. I welcome all those who practice food science to this summit, to make the gathering a rich experience of scientific excellence!

How To ReachThanjavur is the headquarters of Thanjavur district. It is about 322 km from Chennai and is connected with Chennai-Trichy rail route. Tiruchirappalli airport is about 60 km from Thanjavur. Buses connect Trichy and other nearby cities. IIFPT is about 7.0 km from the city railway station.
About ThanjavurThanjavur is the cultural capital of Tamil Nadu state, located in the Cauvery delta. It is famous for its temples, arts and handicrafts. Thanjavur is located at 10.8°N 79.15°E. Thanjavur is also a prominent center for rice cultivation and is therefore called the ‘Rice bowl of Tamil Nadu’. The city shot into prominence as the capital of the mighty Cholas between 11th and 14th century and was developed as an important center of art and culture. Thanjavur was under the Cholas, Pandyas, Nayaks; Marathas took over the city in the late 17th century from the Nayaks. In 1855, Thanjavur was merged with the Madras Presidency. Brahadeeswarar Temple stands testimony to the wealth and might of the Cholas. The main attraction of the city is the Brahadeeswarar temple, built in the early 11th century by Rajaraja Chola I.
