2012 Fiery Foods & BBQ Show

The year between shows—2011 to be exact—was a wild and crazy one in the world of chile peppers. We were bombarded with superhot chiles from all angles, and the record for the world’s hottest pepper changed so many times that the typi-cal chilehead was not only bewildered but getting a bit tired of what is essentially a meaningless quest for the title. I mean, after all, can anyone tell the difference between a 500,000 SHU chile or one that registers 1.2 million SHU or more? I don’t think so. That said, fresh superhots are in great demand, as Marlin Bensinger proved by selling every single pod grown in his one-acre superhot plot in Las Cruces. Another astonishing development was a hot sauce actu-ally winning the top prize in the 2012 Scovie Awards Competition—for only the third time in sixteen years of competitions! Our congratulations to Pan-Cali Foods and their wonderful Panama Red hot sauce. It’s great to see the return of that name—not sung by the New Riders of the Purple Sage or smoked in a bong—but rather spicing up all kinds of food in the DeWitt house-hold. It continues to amaze me that Chile Pepper magazine, which I founded with Robert Spiegel and Nancy Gerlach in 1987,

is still being published after going through how many owners over the years? Maybe seven? I wish the new owners, McAby Media of Houston, good luck with a publication that’s now in its 25th year. Our show will celebrate 24 years of existence with the 2012 show and I’d like to thank all the exhibitors and devoted attendees who have hung with us over all these years. How Did ‘Bhut Jolokia’ Peppers Come to India?It’s fitting that a British Lord should be the one to carry one of the hottest chile peppers in the world from Trinidad to India in 1854. During a search for Caribbean Capsicums between 1700 and 1910, this quote popped up: “One species called ‘devil’s pepper,’ introduced by Lord Harris, from Trinidad, is so intensely hot that the natives can hardly manage to use it.” It was from the Cyclopædia of India and of Eastern and Southern Asia, edited by Edward Balfour and published in Madras, India in 1871. My first thought: who the hell was Lord Harris? It took me only a minute to discover that he was George Francis Robert Harris, Third Baron Harris, later Third Lord Harris, born in 1810. He was among the highest elite in England, but he still had a career. He served as governor of Trinidad, and later, as governor of Madras. An enthusiastic supporter of the Royal Botanic Gardens in Port of Spain, Trinidad, Harris lived in an era much influenced by the “Golden Age of Botany,” the eighteenth century. The garden undoubtedly provided the “Devil’s pepper” seeds that Lord Harris

carried to India the year he left Port of Spain for Madras, 1854.

Do Men Like Spicy Food More Than Women Do?When it comes to eating chile, there’s no proven biological link between gender and preference. If anything, blame the misconception that hot peppers are a “guy thing” on Madison Avenue. Whether they’re marketed as such or not, we all tend to think of everyday items, including food and beverages, as one gender or the other, says James Wilkie, a doctoral candidate in marketing at Northwestern University in Illinois. According to Wilkie, humans instinctively categorize other individuals as male or female, but they don’t stop there. He says, “we tend to almost reflexively apply it to things that perhaps it’s not relevant to apply it to.” In a 2010 study, Wilkie examined how gender preconceptions affect people’s food choices. Men, more than women, he found, tend to be more concerned about choosing foods that conform to gender norms. For instance, they often choose rib-eye steaks, gravy and dishes described as “hearty” over supposedly feminine foods like salads. So screw the salad, girls…hot sauce isn’t just for guys.

Don’t you dare call The Shed a restaurant. It’s a joint. The first one cropped up in Ocean Springs, Mississippi, but now there are four other joints—in Florida, Alabama, and Louisiana. Brad Orrison and his two siblings Brooke and Brett (what’s the deal about family groups winning Scovie Awards?) have taken the classic American honkeytonk to a whole new level, combining award-winning barbecue with top-flight blues music played live, as God intended it. One look at their web-site tells you that The Shed must be a damn fun place to grab a bite and kick back. They even have a posse of fans that go from joint to joint called “Shedhop-pers,” who are sort of like Dead-heads (but with better music).

Considering that The Shed’s initial “design concept” was based on the fact that its owner was a compul-sive junk collector—what many folks call a “picker”—it’s no surprise that their winning package is based on a paint can. Competition was particularly fierce for the 2012 awards, with product entries up 177 over 2011. In all, 161 companies entered 792 products for a chance at Scovie glory.
