Belgium Comes to Michigan From the very beginning, Ashley’s has been about enriching peoples lives through great beer. We’re proud to have been an early part of the ongoing success story that is Michigan craft beer. We’ll always support the passionate people of our state’s now more than 100 independent breweries producing fresh, flavorful brews – many of which are recognized as among the best in the country. But we also believe great beer knows no borders. When we traveled to Belgium to survey one of the world’s most intriguing and respected beer cultures, we were awed by what we discovered. Michigan’s brewing revival has taken place largely within the last 20 years. Many of Belgium’s small breweries have been in the same families for generations. We found the exact same spirit of dedication, craftsmanship, and enthusiasm among Belgian’s artisanal brewers that we’ve come to know and expect from their Michigan counterparts. Also like Michigan’s craft brewers, Belgium’s traditional family-owned breweries face an uphill battle against the international mass-production conglomerates which are squeezing them through massive ad budgets rather than better beer. The smaller breweries know they need to reach out to markets outside of Belgium if they are to survive. So the annual Ashley’s Belgian Beer Festival was born to experience the world of Belgian beer. We’ve brought to Michigan a wide range of amazing, boutique Belgian beers. Many are lesser known or were previously unavailable in our state. What you’re not going to see at this Festival are Leffe, Hoegaarden, Palm, Stella, etc. as we want to focus (as we always do) on the craft brewers. This Festival is also pure Belgian beers. Although Michigan and American craft brewers are brewing Belgian-style beers we are going straight to the source. Why have imitations when you can have the real thing?

There are several special events throughout the Festival. We have multiple brewers coming over from Belgium for the festival, if you speak Flemish or French, this is your chance to practice up. We hope you enjoy your time exploring the culture, cuisine, and, of course, the beers of Belgium at this Festival. It already ranks among the largest of its kind anywhere. In fact, we can’t find any place in Belgium with this many of their beers in one place. Please let us know what you like, as well as what you would like us to do better. We’re always looking to improve your Ashley’s experience of good times, good food, and good beer.

Beer Meets FoodIn Belgium, beer is incorporated into all aspects of Belgian cuisine. Beer may be included in the preparation of food or simply as a beverage to enhance the flavors of the food. The importance of beer in Belgian cuisine is apparent in many traditional Belgian dishes. In order to provide a broader Belgian beer experience, we have prepared mussels with four different broths, each featuring a different style of Belgian beer. Since the Belgians claim to have invented the chipped fried potatoes that we know commonly as fries, our mussels are served with a side of fries (frites) accompanied with a tomato basil mayo for dipping. A portion of freshly baked baguette is also provided to savor the extra broth.

The trick to eating mussels like the Belgians is to use a discarded shell as a spoon to scoop out the plump little delicacies and of course the flavorful juices. All of our mussels are steamed in beer. We recommend a glass of the beer they are cooked with.

BRASSERIE DE SILLY Brasserie de Silly, a six generation independent family brewer, is located South West of Brussels in the Hainaut Province of Wallonia. Silly is a little dormant farming village just outside the old city of Enghien, once world famous for its tapestries. Larger farms used to have their own brew-eries up to well into the 20th century. For centuries on the Western side of Wallonia, the large farms of Hainaut were cultivating barley and hops and they all brewed their own beer. Today, the cultivation of hops has disap-peared and the brewing activity became an independent activity. Brasserie, which is the french word for brewery, de Silly is a perfect example of this evolution. The written history of the Brasserie de Silly starts in 1850, when Nicolas Meynsbrughen bought the farm and started to keep records on his brewing activities. On this farm was also the local mill, where all kind of local grown grain was milled. During WWI the brewery painted the copper tuns black to look like wrought iron to hide them from the Germans, who could use this material in their war machine. Right after the war a Scottish regiment of the British army, choose this brewery to brew for the occupying forces. A strong German dry and hoppy characteristic was clearly present in some of the breweries beer, since the Enghien area has been ruled by German nobility for over 500 years. The Scots brought the rich tradition of their own Scottish ales. This combination of three beer cultures, Belgian, German and Scottish, is the reason for the outstanding quality and uniqueness of Silly’s beer. Besides the Double Enghien, and the Scotch de Silly, the brewery brews a few other remarkable beers: La Divine Triple, a Belgian WIT named Titje, a great Saison, and its own lager. The farming activities were stopped around 1950 and all efforts were concentrated on the brewery. In 1973 the brewery changes it name into “Brasserie de Silly,” but keeps the logo of St. Michel, the angel who fights drag-ons. This Saint has his statue in the Church of Silly, and is also depicted on top of the Brussels City-hall. You do not find the picture of the Saint on the cap of the bottle, but the picture of a land worker.In 1975, the brewery of Enghien (say ‘engine’), a town near Silly, was bought by the Brewery de Silly. The brewery of Enghien was famous for its Double Enghien Blonde (Golden) and Brune (Brown). After the acquisition, these two beers are brewed in Silly. Brasserie de Silly brews about 200 times a year for a total of around 35,000 barrels of beer. The malts come from Belgium and from France. The hops comes from Kent (UK) and from Saaz and Hallertau in Germany. Approx-imately, 60% of the production is top-fermenting ales. This puts the Brasserie de Silly with the top Belgian micro-breweries. They brewed the Titje WIT since 1990. Today, Lionel Van Der Haegen and his cousin Bertrand Van Der Haegen, Brewmaster mange all operations of the brewery with help from their Dads, Didier and Frances Van Der Haegen.

Dubuisson, the maker of the Scaldis line of premium Bel-gian beers, has been brewing continuously since 1769—before Belgium was a country and longer than the Trappist breweries. Dubuisson is a shining example of the civic brewer and proud protector of the tradition. Hugues Dubuisson is the eighth- gen-eration family member to direct the business, which is thriving. U.S. sales increased at twice the rate of the dynamic domestic craft beer rate. Both Peche Mel and Scaldis earned Gold medals in World Beer Championships this past year. Prestige has main-tained perfect 100s on RateBeer. Dubuisson is in the hamlet of Pipaix, just outside Tournai and in the heart of French-speaking Wallonia. The province where Scaldis is brewed is called Hainaut. The word means “land of groves” and indeed it is the richest agricultural province in Belgium. Jim Galligan of the Today Show recently published a superb review of Scaldis Prestige de Nuits:“Prestige de Nuits pours a deep amber red with a lovely cream-colored head. The beer we sampled had lots of small dregs floating about the glass, but it had recently been in John’s car, so things were stirred up a bit. This wouldn’t have been an issue if we had let sit for a while before opening, but none of us wanted to wait. Can you blame us?The nose is a bit sneaky on Prestige de Nuits, as it reveals only a small part of the beer’s true character. You get a bit of the Burgundy from the barrel, as well as some cherries, a waft of toffee and hint of alcohol, but it doesn’t really prepare you for the rush of flavors that follow. Take a sip and this beer makes an immediate impression on your palate. The flavor starts off very vinous and slightly sour, evocative of port wine and dark dried fruits. These wine-like characteristics give way to richer notes of chocolate and cherries, with a little oaky vanilla and just a hint of spice dancing in the background. Trust me, your toes will curl in pleasure. As this rich middle recedes, you’re treated to a sweet and dry finish, with flavors of red raspberries and slightly tart grapes. Prestige de Nuits warms your chest as it goes down, but you wouldn’t guess this beer is 13% alcohol by volume, as the booziness is very well masked. A good beer will have a beginning, a middle and an end that all flow in harmony and offer distinct, individual pleasures. A truly special beer will provide an odyssey of flavor, with each part of its taste being a journey onto itself. Prestige de Nuits falls into the latter category – it is a truly remarkable fermented beverage, one to be savored.”Dubuisson is a member of the Belgian Family Brewers The members of the non-profit association are Belgian breweries which have been brewing beer in Belgium for at least 50 years non-stop. Together they represent 15% of Belgian brewers, with a total of more than 3,500 years of experience in traditional beer brewing.

Belgian Beer and

Chocolate Pairing

You may not think that beer and chocolate go together. But Belgian beers do pair well not only with savory foods but also sweets. Their rich malt flavors and very mild hop bitterness compliment sweet desserts and chocolates. For the festival we contracted with Schakolad Chocolate Factory in Ann Arbor to create some exclusive chocolates not only to pair with beer but made with beer. They made a rich ganache center for their truffles with bittersweet chocolate, heavy cream and four different beers. The ganache centers were then covered with either Milk or Dark chocolate. Schakolad was blown away and said they were some of the best chocolates they had ever tasted. They are only available at Ashley’s (while supplies last)

A Brief History of Belgian BeerBeer has been brewed in Belgium since the Middle Ages. Although there is no written proof, it is believed that beer was brewed at monasteries during this time. Today, approximately 125 breweries are in operation in the country of Belgium and they produce roughly 800 standard beers. When including one-off beers, such as those brewed for specific holidays and celebrations, the number increases to nearly 8700.

Belgian beers are unique in that they do not adhere to the idea that water, barley, yeast and hops should be the only ingredients used in the brewing process. In some instances, they also disregard the conventional practice of pitching yeast and allow the wild yeast of Belgium to ferment their beer; the result of this spontaneous fermentation is the “wild” ale. In Belgium, brewing is a family affair. Generations of brewers simultaneously pioneer experimental brewing processes while upholding the traditional brewing practices of Belgian beer.

Some of the most famous beers from Belgian are those of the Trappist monasteries. There are only seven Trappist monasteries in the world, six of which reside in Belgium, the other of which is in the Netherlands. In order to be deemed a Trappist beer, the brewery must be in a monastery, the monks must be involved in the production and policies, and the profits from the sale of the beer may only be used to support the monastery or social programs. The breweries that currently maintain a Trappist certification are Achel, Chimay, Orval, Rochefort, Westmalle, Westvleteren, and La Trappe (previously Koninshoeven, Netherlands). Westvleteren is the only beer that is unavailable for sale in the United States.

Although the monasteries continue to brew their beer following age old traditions, other brewers are engaging in more experimental brews. Due to a growing demand for more than yellow fizzy stuff, brewers look to one another for inspiration. There is evidence of American influence on Belgian beer in those such as Troubadour Magma and Urthel Hop-It, in which a much more liberal use of hops is apparent in the aroma and flavor. These beers, in turn, have led to an increase in the production of Belgian IPA’s in the United States. At the same time, some of the most raved about American Breweries, such as Jolly Pumpkin, The Lost Abbey, and Russian River are brewing ales using the most traditional Belgian-brewing practices.

This menu features a wide variety of beers that originate in Belgium. With over a hundred breweries and thousands of beers, it is nearly impossible to provide a complete education on Belgian beer in one sitting. In order to better appreciate the beer, it is important to have an understanding of what each beer is meant to accomplish. Please refer to this menu, in combination with Ashley’s Beverage Guide to direct you through a tour of Belgian beers.

The Glass and The PourBefore tasting a Belgian beer, it is important to understand what you are seeing and smelling. Often times, the novice beer drinker is put off by the Belgian beer glass. Do not be afraid of the glass; it serves a greater purpose than the ignorant heckling of your friends. As soon as the beer enters the glass, the color, aroma and taste are transformed. Unseen distinctions come to light, colors glisten, and the overall experience of the beer becomes complete. If you were to order a beer in Belgium, when you receive your beer, it would be accompanied by a glass specifically engineered for that beer. In fact, some breweries have been known to design beer to fit the glass, rather than the glass to fit the beer. Unfortunately, Michigan law prohibits the use of glassware with logos when serving beer on-premise, however, Ashley’s does its best to provide a glass similar in shape and size to enhance the Belgian beer experience.

The shape of the glassware also affects the development and retention of the head of the beer, which is important because the foam acts as a net for several of the volatiles in beer. Such aspects include compounds that create aroma, yeast fermentation by-products, spices, fruity esters and additional ingredients. Different levels of head and retention are desired with different styles of beer.

So, rather than regard the Belgian beer glass as an affront to one’s masculinity, resist the temptation to request a “normal” glass, and recognize that the glass is designed to enhance the flavor of the beer. The next time your buddies poke fun at you, use the opportunity to educate them, and know that the glass provides you the ultimate experience of that particular beer.

For Ashley’s Belgian Beer Festival we have obtained special permission to use beer branded glassware (normally not legal in Michigan). This is only valid February 6 - 16. The Styles (Belgian Beer 101)Although some beers may seem to fall into several categories of style, understanding the expectations set for a particular style makes it less of a surprise to the palate. We wish to provide you with a clear idea of some of the most common Belgian beer styles. The following specifications are derived from the Beer Judge Certification Program (BJCP).

Belgian Blonde AleAppears light to deep gold in color. The flavor is initially smooth with light to moderate Pils malt sweetness, but finishes medium-dry to dry with some smooth alcohol becoming evident in the aftertaste. Medium hop and alcohol bitterness to balance. May be spicy or earthy and has a very soft yeast character. History: A relatively recent development to further appeal to European Pils drinkers.

Belgian DubbelAppears dark amber to copper in color, with an attractive reddish depth of color. The aroma of the beer gives way to the flavor: rich, complex medium to medium-full malty sweetness on the palate, yet finishes moderately dry. Complex malt, ester, alcohol and phenol interplay (flavors of raisin are common, as well as dried fruit flavors, and potentially clove-like spiciness). Balance is toward the malt. History: Originated in monasteries in the Middle Ages and revived in the mid-1800’s.

Belgian TripelAppears deep yellow to deep gold in color. The tripel is a union of spicy, fruity and alcohol flavors that are supported by a soft malt character. Low to moderate phenols are peppery in character. Scent is citrusy, often orange or lemon. Alcohols are soft, spicy, and often a bit sweet and low in intensity. Substantial carbonation and bitterness lends a dry finish with a moderately bitter aftertaste. No diacetyl. History: Originally popularized by the Trappist monastery in Westmalle.

Belgian Golden Strong AleAppears yellow to medium gold in color. Flavor is a combination of fruity, spicy alcohol flavors supported by soft malt character. Scent is reminiscent of pears, oranges or apples. A low to moderate spicy hop character is often present. Bitterness is typically medium to high from a combination of hop bitterness and yeast-produced phenolics. Substantial carbonation and bitterness lends to the dry finish with low bitter aftertaste. No diacytel. History: Originally developed by the Moortgat brewery after World War II as a response to the growing popularity of Pilsner beers.

Belgian Dark Strong AleAppears deep amber to deep coppery-brown in color (dark implies that it is darker than golden). The aroma is indicative of the flavor. Moderately malty and sweet with a variable finish, depending on the interpretation of the style: it may finish dry or sweet, few being slightly bitter. The complex and varried flavors should blend harmoniously. History: Most versions are unique in character reflecting characteristics of individual breweries.

Grand CruGrand Cru is a term that is borrowed from vintners (the wine world) and refers to a special offering, release and/or vintage dated selection. The term was “coined” by Pierre Celis when he labeled his annual release the Celis Grand Cru and in Belgium, it was a stronger version (with additional spicing) of his regular witbier that was only brewed for special celebrations.

Flanders Red AleExpect this beer to be a deep red, burgundy to reddish brown color with average to good head retention. It maintains an intense fruitiness, commonly including plum orange, black cherry or red currant flavors. A mild vanilla and/or chocolate character is often present. Spicy phenols can be present in low amounts for complexity. Sour, acidic character ranged from complementary to intense. An acidic, tannic bitterness is often present in low to moderate amounts and adds a red wine-like character. Diacetyl is perceived only in very minor quantities, if at all, as a complementary flavor. History: The indigenous beer of West Flanders, typified by the products of the Rodenbach brewery, but reflective of earlier brewing traditions. It is aged for up to two years, often in large oaken barrels which contain the resident bacteria necessary to sour the beer.

Flanders Brown Ale/Oud BruinAppears as dark reddish-brown to brown in color. It tends to be malty with fruity complexity and some caramelization character. Fruitiness commonly includes dark fruits such as raisins, plums, figs, dates, and black cherries. A malt character of caramel, toffee, orange or chocolate is also common. Spicy phenols can be present in low amounts for complexity. A slight sourness often becomes more pronounced in well-aged examples, along with some sherry-like character, producing a “sweet-and-sour” profile. The sourness should not have a notable acetic/vinegary character. History: An “old ale” tradition, indigenous to East Flanders, typified by the products of the Liefman Brewery. It was historically brewed as a “provision beer” that would develop some sourness as it aged. It is not aged in oak.

Straight (Unblended) LambicIt will appear pale yellow to deep golden in color, but age tends to darken the beer. Young examples are often noticeably sour and/or lactic, but aging can bring this character more in balance with the malt, wheat and barnyard characteristics. Fruity flavors are simper in young lambics and more complex in older. Served uncarbonated. History: Spontaneously fermented sour ale from the area in and around Brussels stem from a farmhouse brewing tradition that is several centuries old. It is typically not found in bottle form, but may be found on draught in and around Brussels from traditional brewers such as Cantillon, Drie Fonteinen, and Giardin.

GueuzeAppears golden in color. A moderately sour/acidic character is classically in balance with the malt, wheat and barnyard characteristics. A low, complementary sweetness may be present But higher levels are uncharacteristic. While some may be more dominantly sour, balance is the key and denotes a better gueuze. History: See Straight Lambic. Geuze is traditionally produced by blending one, two, and three-year old lambic. “Young” lambic contains fermentable sugars while old lambic has the characteristic “wild” taste of the Senne River Valley. Gueuze is served with carbonation. (Can also be spelled Geuze)

Traditional Fruit LambicAppearance is generally determined by the variety of fruit, although a lighter colored fruit may have little influence on the color. The flavor of the fruit added to the beer should be evident. A sour and acidic character are often present. As it ages, the flavor of the fruit will fade and the flavor of the lambic will dominate. History: See Straight Lambic. Not to be confused with the more recent development of untraditional fruit lambic in which the fruit is added post-fermentation as opposed to the traditional addition of fruit half-way through aging the lambic. The addition of fruit after fermentation gives way to a sweeter drink because the yeast does not ferment the sugars from the fruit. The most common fruit flavors used include framboise (raspberries), kriek (cherries), and druivenlambik (muscat grapes). Overly sweet lambics (Lindemans), may be categorized as Belgian Specialty.

Achel 8° Blond TrappistDifficult to find, even in Belgium. All our Achel is aged at least one year. Pale, strong, fruity, and hoppy, it is a surprisingly refreshing beer, considering the 8% alcohol by volume. It is lightly filtered, but wholesomely hazy with the remaining yeast. Belgian Blond Ale/Trappist Ale. Achel Monastery. 8% abv. 11.2 oz 14.00

Achel Bruin TrappistPours chestnut brown with a tight beige head. The aroma has brown sugar, toffee, rich earthiness, figs, raisins and a hint of coriander. It maintains a medium body with soft carbonation and finishes with a mellow spiciness and a hint of pepper. Belgian Brown Ale/Trappist Ale. 8% abv. 11.2 oz 14.00

Achel Extra TrappistYou will find this a very satisfying beer, with just a little malt sweetness, dried fruit flavors, warm sherry notes, and a brisk balancing backdrop of fresh hop bitterness. 9.5% abv. 750ml 44.00

Alvinne Undressed SourA Flemish old brown ale using Alvinne Brewery’s house yeast: Yeast Morpheus - a yeast culture from nature (Auvergne - France). The yeast was selected, isolated and cultivated by monks until they were able to obtain a desired yeast culture. They named it Morpheus Yeast. This beer is also made from a culture of 2 beer yeast (Saccharomyces cerevisiae) and lactic acid bacteria (Lactobacillus). 11.2oz 9.50

Armand HoppyVery aromatic due to its dry-hopping usage of the American hop “Cascade” where the nose is fruity with grapefruit and citrus and the taste is dominated by well-balanced hop notes. Ufiltered ale, 7% abv. and is slightly hazy. 750ml 11.00

Bavik Pils*The beer displays a round malt trait with a slight buttery touch that remains gentle in the middle, where the spiciness of the hops takes over. 5% abv. 4.00 (pint)

Belgian Coast IPA* HoppyA collaboration with St. Feuillien and Green Flash. The bitterness is high and very complex. The malt backbone supports the strong hop character and provides the best balance. 6.5% abv 25cl 8.00/ 12cl 4.25

Biere du Boucanier* Dark Dark with a striking, creamy strong head. It is the sweetest of the three Bieres du Boucanier, caramelized and malty. 9% abv 25cl 8.00/ 12cl 4.25

Biere du Boucanier Xmas* XmasDark and slick, malt with dried fruit, honey and some coriander. Spare beige head, sweet and spicy at the same time. 9.5% abv 25cl 8.00/ 12cl 4.25

Bellegems Bruin SourA traditionally-brewed Flanders brown ale is blended with 18-month old lambic to create this tart, refreshing, medium-bodied benchmark ale. Reddish-amber with a tan head. Hints of tart fruit and an underlying light lambic sourness dominate the nose. 5.5% abv 750ml 17.00

Bink Grand Cru QuadA special reserve from Kerkom. Dark, rich, warming. 13% abv 750ml 26.00

Bink Tripel TripleA beer that is earthy, deep and complex, but light in color and on the palate. It is hopped more than the typical tripel, but not so bitter that it should deter those that are not yet enamored with the hop. Brewery Kerkom. 9% abv. 750 ml 28.00

Blanche de Namur WitFine fruity with a scent of the used spice, coriander and bitter orange. Smooth beer, thirst-quenching but mild, slightly acidulous, powdery consistency on the tongue, not bitter. 4.5%abv 11.2 oz 7.75

Bornem Double* DubbelVery dark, coffee color. Soft as velvet, this double with warm darkbrown colour and burgundy undertones has a fruity taste and hoppy after taste. Its creamy, rich and firm foam head crowns it. 8% abv 25cl 7.50/ 12cl 4.00

Brugse Zot Dubbel* Begins with a malty aroma and a full bodied palate. Notes of molasses contribute to a big flavor without much hop. Brewey De Halve Maan. 7.5% abv. 25cl 8.00/ 12cl 4.25

Brugse Zot (unfiltered)* BlondeA golden blond beer with a rich froth and a fruity flavoring. Brewed with four different kinds of malt and two aromatic varieties of hop which provide its unique taste. A well-balanced, easy drinking beer with character. It is refermented in the bottle which provides the beer with a longer natural life. Brewery De Halve Maan. 6% abv. 25cl 8.00/ 12cl 4.25

Cantillon Vigneronne SourIn October, time of the grape harvest, Italian muscat grapes are added to a few casks of two-year old lambic. After three months, the grape-flavored lambic will be blended to create a small amount of Cantillon Gueuze Vigneronne, a rare traditional style, unique to the Cantillon brewery, with a mild white wine grape aroma and flavor. 5% abv. 750ml 49.00

When the season’s spectrums have changed from a vivid rainbow of flora, fauna and fair weather to a monochrome blanket of snow, slush and frigid temperatures, so must one’s beer. A spicy, crimson brew that completes the Delirium Trilogy, the Noel brings color and zest back to the cold winter months and to your cheeks. Delirium Tremens* TripleOne of the most well-known beers of Belgium, elected best beer in the world and easily recognized by the pink elephant. Des Roc Grand Cru QuadA rich, complex fruit aroma of cherries, golden raisins, peaches, and assorted dried fruits, laced with honey and caramel. The taste is smooth with rich flavors reminiscent of cherries dipped in caramel, finishing with notes of chocolate, roasted almonds, and a hint of molasses. Brasserie de Rocs. 9.5% abv. 750ml 19.00

Des Roc Triple Imperial* Triple (Abbey)A very dark color. The taste is fascinating, soft with enormous scale of flavors due to the several different types of barley used. This excellent and very elegant appetizer feels like it is made exclusively for kings and emperors. 10% abv. 25cl 7.00 / 12cl 3.75

De Ranke Noir de Dottignies DarkA very rich taste, coming from the six different kinds of malt. These malts also give it that rich, dark, nearly black colour and flavours of berry and a hint of chocolate. The royal doses of Challenger and Saaz hops bring the typical balance between sweet and bitter. 9% abv 750ml 23.00

De Ranke Guldenberg Triplebears no resemblance whatsoever to any Tripel you may have sampled, except in color perhaps. It is very hoppy and malty. 8.5% abv 750ml 23.00

Saison d’Erpe Mere* SaisonA blonde beer brewed according to the ancient Saison tradition of the province of Hainaut. This beer is brewed exclusively with natural ingredients: artesian water, barley and wheat malts, liquid sugar, hops and yeast. The result: dry, hoppy, fruity and slightly veiled beer. No herbs or spices are used to create the fruity and spicy profile, which is unusual for a saison. Brewery de Glazen Toren. 6.9% abv. 750 ml 25.00

DeuS Brut des Flandres Biere du ChampagneDeuS undergoes a lengthy, costly maturation in the Champagne caves of France. The elegant and labor-intensive “methode Champenoise” produces the best sparkling beverages in the world. DeuS has characteristics of both sparkling wine (fine, velvety carbonation) and specialty beer (rich maltiness) but also exhibits a fragrant, herbal and spicy character quite unique and special. Flavors of anise, mint, malt, lavender, and a barely perceptible hoppiness make DeuS a treat. 11.5% abv. 750ml 50.00

Caracole Nostradamus DubbelA complex Wallonian brown ale with the aroma of chocolate and port wine. It is rich, warming and a bit piquant in the mouth with licorice, mocha flavors, pear and toasted bread background notes. Perfect for an after-dinner drink or night cap. 9.5% abv. 750ml 15.00

Chimay Grand Reserve “Blue Label” Trappist

Infused fruits with thick black skins appear immediately. As it warms up, it brings palate-heated aromas of raw cocoa, vanilla, and new leather. Wonderful texture – think of whipped cream melting furiously from applied heat. Trappist Abbey Ale. Chimay Monestary. 9% abv. 11.2 oz 11.50

Chimay Premiere “Red Label” Trappist Dubbel

Topped with a creamy head, it gives off a light, fruity apricot aroma produced by the fermentation. The taste perceived in the mouth is a balance confirming the fruity nuances noticed in the fragrance. 7% abv. 11.2 oz 9.00

Chimay Cinq Cents “White Label” *Trappist Triple

The beer’s flavour, as sensed in the mouth, comes from the smell of hops: above all it is the fruity notes of muscat and raisins that give this beer a particularly attractive aroma. 8% abv. 11.2oz 9.00

Cuvee des Jacobins* (and bottle)SourFlemish Sour Ale, red in color with a beguiling balance of malty sweetness and acidic sharpness. It is made from spontaneously fermented and barrel-aged beer of at least 18 months in age. 5.5% abv. 11.2oz 15.00 25cl 8.50/ 12cl 4.50

Cuvee des Trolls Blonde* BlondMade with all blond malts and a touch of orange peel, Trolls is hazy blond, with a lovely, doughy, fresh malt aroma. 7% abv. 25cl 7.50/ 12cl 4.00

De Dolle Special Extra Export Stout DarkThe stout is brewed only a couple of times each year, with roasted malt, caramel malt and pale malt, Nugget hops and the same fermentation as Oerbier. 11.2 oz 11.00

De Dolle Stille Nacht Reserve XmasThis version of Stille Nacht is matured for 18 months in Bordeaux wine casks. De Dolle Reserva has been especially made with the Christmas season in mind. 12% abv 750ml 69.00

Delirium Nocturnum* TripleA sweet bouquet greets your nose, full of spices and fruit. It is vinous with berries, cherries, melons, and grapes. Highly hopped, marvelously carbonated, with a great malt spine. Brewery Huyghe. 8.5% abv. 25cl 7.50 / 12cl 4.00

Discovery Amber Ale Gluten FreeMedium-bodied with subtle caramel and nut flavor nuances. Refined, herbal hop aroma and finish. 6%abv 16.9oz 12.00

Double Enghien Blonde* DubbelIn harmony with its aroma, its taste is a bitter orchestra with a well controlled touch but without severity, offering fullness where necessary in the middle and at the back of the mouth. It is a harmonious recital of getting the most out of the quality of its hops and the purity of its malts. 7.5% abv. 25cl 8.00/ 12 cl 4.25

Duchesse de Bourgogne* SourA dark ivory colored beer with a high fermentation. The show piece of the brewery. Thanks to its soft and unconditionally genuine aroma, the beer can be warmed and aged like red wine. Sint Bernardus Abbey. 8.5% abv. 25cl 7.50 / 12cl 4.00

Duvel BlondGuaranteed not fresh! Duvel goes through an unusual triple fermentation process that takes three years or so. Duvel actually gets better in the bottle. The draft is the same product as Duvel bottles except the draft does not get the third fermentation (bottle conditioning). 8.5% abv. 11.2 oz 7.25

Ecaussinnes Ultra Blonde Blond Smells of apple butter made with ripe Granny Smith apples. Yeasty with sweet vinous notes, almost sauternes-like. Belgian Tripel. Brasserie D’Ecaussinnes. 8% abv. 11.2oz 9.25

Echt Kriekenbier FruitTraditional Flemish cherry ale. This refreshing ale is based on Vichtenaar and has the aroma of Kirsch cherry brandy, smooth, vanilla-like oaky palate and late surge of passion-fruit flavors with some acidity. Local sour cherries are added during the maturation process to the wooden casks containing Vichtenaar. The final product is a blend of one, two and three years old beers. 6.8% abv. 11.2oz 9.50

Ename Cuvée’ 974 QuadRed-Amber color with a fruity aroma with a sweet caramel taste perfectly brings out the extra spices of the beer and ends with a slightly bitter aftertaste. 7% abv 25cl 8.00/ 12cl 4.25

Ename Triple TripleA faint, malty aroma, is balanced with hints of citrus fruit, and unspecified peppery spices. The first taste is not overpowering but subtle and builds up with every sip: a rounder mouth feel with a spicy tickling on the tongue and a somewhat bitter finish. 8.5% abv. 11.2oz 7.25

Ichtegem’s Grand Cru* (and bottle) SourA Flemish red ale. This unique style of beer is brewed as two separate beers, that are blended together to form the final product. Similar to the lambic geuze, one beer is brewed to be aged in oak barrels. This beer is aged for two years, where exposure to oxygen, the wood of the barrels, and naturally occuring microflora alter its flavor, making it dry and sharp with an acidic tang. Kapittel Abt QuadAbt is Dutch for “abbot”, the head of the abbey. Refermented in the bottle, only good to drink after a few months aging, which is done at the brewery, and ready to be aged for up to 30 years. As with most Belgian triples, the color tends to be paler, in this case amber, with good head retention. Malheur Dark Brut DarkThe bouquet is extremely complex! Sherry, vanilla, wood ... with a coffee flavour as a result of the roasted malt. Its taste is oak dry, so this is a genuine Brut. The ale has been decanted in young American oak that was especially burned for this ale. Its bitterness is nicely balanced with the tannin of the wood and just a sweet zest from the alcohol. Malheur 12 Quada dark brown ale with beautiful and rocky “café latte” light brown foam. The flavour is malty and cereal and might invoke thoughts of fresh cut bread. The taste of Malheur 12° is full, round, with a touch of sweet alcohols, but the ale is still dry and bitter coffee, with touches of nuts, honey and rum from the brown candy sugar. St. Feuillien Noel HolidayThis beer has a generous head, compact and firm. Its slightly brown color is the result of the roasted barley. It has a dark ruby brown color and a very intense aroma. The aromatic herbs and spices used greatly enhance its delicious smell. 9% abv. 750ml 19.00

St. Feuillien Saison SaisonA traditional farmhouse ale with all the rich savor of the fertile land of Southern Belgium. Saison, a warm golden blonde ale, is a top-fermented classique. St. Feuillien Speciale DarkAged for a minimum of 6 weeks in cold tanks and then bottle conditioned in the warm room for 2 more weeks. The result is a beer that has clean, delicious flavor and a beautiful, elegant condition. Carbonation is fine, the foam collar is creamy. 9% abv 750ml 23.00

Tripel Karmeliet TripleBrewed to an authentic beer recipe from 1679 originating in the former Caremelite monastery in Dendermonde. The recipe describes the use of three different grains: wheat, oats, and barley. The name refers to its origin and in the bottle refermentation. The flavor encompasses the lightness and freshness of wheat, the creaminess of oats, and a spicy, lemony, almost quinine dryness. Brewery Bosteels. 8.4% abv 11.2 oz 7.75

Triporteur from Heaven HoppyA heavily hopped beer using 4 home-baked BOM malts. The wheat malt in the unfiltered beer can produce a light cloudiness. He uses Belgian dark and white candy sugar and uses 3 aromatic hops and 3 dry hopping. 6.2% abv 11.2 oz 8.50

Triporteur from Hell DarkA dark beer brewed with 4 hellish burned and roasted BOM malts. The beer reminds us of chocolate, caramel recently brewed coffee and freshly baked bread. He uses Belgian dark cane sugar and 2 different hops. 6.6% abv 11.2 oz 8.50

Tropical Tripel* (and bottles) TripleA collaboration of DeProef and Cigar City brewery in Florida.Tropical Tripel was brewed with a classic Trappist yeast and the lesser known Brux III strain of Brettanomyces. During the boil Magnum and Simcoe hops were added along with Belgian candi sugar and lactose for added mouth feel. The beer is finished with additions of toasted coconut, dried peaches and medium toasted oak. 9.5% abv 750 ml 35.00 25cl 8.50/ 12cl 4.50

Troubadour Obscura* Nitro Version DarkDark in color, as expected from a stout. The flavors are deep, rich and pronounced: malty, clearly roasted with hints of coffee and chocolate. Troubadour Westkust* DarkDark, almost black beer with 9.2% alc. by vol. with a hoppy aroma, roasted malt, coffee and light notes of chocolate and vanilla. The taste is a balance between the taste of roasted malt and coffee followed by a strong but pleasant bitterness that slowly gets the upper hand and ensures a long hoppy finish. 9.2%abv 25cl 8.00/ 12cl 4.25

Verzet Oud Bruin SourMatured in oak wine barrels for at least one year and get blended right before bottling with young “Oud Bruin” to get the complex taste of this unique beer. For the first fermentation, they use a top fermented yeast, second fermentation happens in the oak barrels done by wild yeast like brettanomyces and lactobacillus. 5.5% abv 375ml 19.00

Watou Cuvee* BlondAlthough this beer is recognized as a strong Belgian blond, you’ll discover a lightly sour-sweet yeasty fruit on a par with mildly malts and a refreshing flow of really fragrant, fruity hops with a mild bitterness. 9% abv 25cl 7.50/ 12cl 4.00

Westmalle Dubbel TrappistA reddish brown trappist ale, malty and fruity, featuring a three week secondary fermentation. Bottle conditioning provides a fluffy, pillowy head and a crisp mouthfeel. Westmalle Tripel TrappistPours a gorgeous golden color with abundant carbonation. Yeasty, light banana and close scents. The taste is an amazing cream and biscuit flavor. Has a succinct hop tinge with notes of earth and herbs. Described by many as “the perfect beer.” . Westmalle Monastery. 9.5% abv. 11.2oz 11.00

Witkap Simulo SingleWitkap Singel is the lightest of the Trappist style beers and is typically drunk at the midday meal. A blond beer that sparkles like champagne, it has an extremely estery nose with typical abbey notes of banana and berry. Unusually, this is followed by a light body and lemony finish. 6% abv. 750ml 16.00
