    Chef Rodolfo started his culinary career at a very early age in short order kitchensbefore working for American Golf at their Tatum Ranch and Ancala Country Clubs.Chef Rodolfo has since worked in every type of food outlet from the four-starRadisson Resort and Spa in Scottsdale to freestanding restaurants, major cateringcompanies and business hotels, and eventually owning his own catering companyfor three years. He attended culinary school in Scottsdale and has been a valleyresident since 1994. He lives in Phoenix with his wife Gloria, his daughter Mayahand three dogs (two Great Danes and a Coonhound mix). Whenever theres freetime, Rodolfo enjoys spending time with his family, watching soccer, going to thelake/beach and traveling.

    Weve been happy members of the Sun CityFestival Community since 2008. A chance

    meeting with a Pulte Realtor while touringFestival with friends in 2008 led us to buyingour retirement home. We werent here to buya home, but were made an offer we couldntrefuse! The Festival setting and the resort-style amenities sold us!

    A year later, while here on vacation, the company we both worked for since the1970s, Caterpillar, Inc. in Peoria Illinois, offered us both early retirement. Anotheronce in a lifetime opportunity we couldnt refuse so we retired and moved in full-timein May 2009. No more shoveling snow!Everyone living in Festival has a common bond which makes it great. We all enjoythe west, Arizona, the beautiful outdoor lifestyle, and the Festival community.

    Jim stays busy with the Softball Club, the Hiking Club, plays golf and uses theSage Center facilities. Judy is busy volunteering with the Town of Buckeye, being amember of FABs and the Hiking Club, and gathering donations for local VeteransOrganizations. When not volunteering, she is a voracious reader of biography/historybooks.We both enjoy traveling throughout Arizona, the US, and the world. Our dinner group,movies, attending sporting events also keep us busy. When our blended family offour kids visit they are always jealous!

    We are luckier than we deserve to be, retiring here in Festival!

    What is cholesterol? Its something in our body which should not be too highand can cause heart problems. But, what IS cholesterol?

    Cholesterol is a waxy, soft, fat-like substance found in our blood and in all thebodys cells. Used for producing hormones, vitamin D and cell membranes,cholesterol serves many needed functions in our body. Our bodies produceabout seventy-ve percent of our cholesterol. Twenty-ve percent of our cho-lesterol comes from foods we eat. Cholesterol is found only in animal products.Unable to dissolve in the blood, cholesterol must be transported to and fromcells by special carriers called lipoproteins. The most important of these arehigh-density and low-density lipoproteins (HDL and LDL).

    LDL is known as bad cholesterol. Too much LDL can clogarteries and will increase risk of heart attack and stroke. Ourbodies naturally produce LDL with some of us inheriting genescausing overproduction. Eating saturated and trans fats canincrease our LDL.

    HDL is known as good cholesterol. HDL prevents LDL fromsticking to artery walls and causing clogs. These clogs canlead to heart disease, heart attacks and strokes. Research

    shows HDL can be increased with regular exercise and eatinga balanced, nutritious diet low in trans fats.

    Triglycerides are another form of fat in the body. Like other cholesterol, triglyc-eride comes from the foods we eat and the bodys natural production. Triglyc-erides are also produced when consumed carbohydrates are not immediatelyused in our tissues and need transport to fat cells for storage. When the bodyneeds fats for fuel, hormones release triglycerides from cells, so they can beburned.

    While cholesterol is a necessary compound in our body, too much can behazardous and lead to clogged arteries, heart disease, or stroke. Cholesterolin our body comes from natural production and

    from our diet. Optimal levels of cholesterol areless than 200 mg/dL for total cholesterol, lessthan 100 mg/dL for LDL, and greater than 40/50mg/dL for women and men, respectively.Triglycerides should be lower than 150 mg/dL.Cholesterol is best controlled through regularexercise, working with a physician (includingscreening), a diet low in cholesterol and saturat-ed fat, and maintaining a healthy body weight.
