Dear Friends,

When this catalog first becomes available we will already be into the month of December. It has been a very busy fall here at the Center and we are certainly excited to be able to offer you another great selection of activities and tours for you to join in the Spring/Summer of 2015.

In addition to some Center favorites, like our annual Chinese New Year trip to Di Hua Street and our hands-on dumpling making class, we have quite a few new instructors and activities to introduce in 2015 of which we can only name a few:

• Korean cooking with Jayoun Kim• California/Italian style cooking with Bob Chau—one class at his downtown bistro and a second

class at the Center• Wine tasting with Mark Pygott and John Imbrogulio• A new hike to Silver Stream Cave with Richard Saunders• A Printmaking Workshop at Yili Arts Studio in Tianmu• A summer Photography Workshop with Darren Melrose

Behind all the daily learning and fun that goes on at the Center is the core of what we offer—our professional and confidential counseling services. Please don’t forget that whether you arrived last week or five years ago, the Center is here for you.

So, take a few minutes to look over the catalog and sign up for some classes and tours. You will be so glad that you did.

Advance registration and payment is required for all Center activities. Registrat ion may be done by phone, emai l or in person; onl ine pre-registration is also available via the Center’s website. Please go to www.communitycenter.org.tw/whats-on/pre-register.

Payment for most activities is due at least one week prior to the start or actual date. Should a class become fully subscribed and a wait list created, payment is due upon request.

Please note that we cannot guarantee your place until full payment is made. If you are unable to visit the Center, please call us for alternative payment options.

Center office hours are Monday - Friday, 9:00 am - 5:00 pm.

CancellationsThe Center reserves the right to cancel any activity or program that does not have sufficient enrollment. We make every effort to notify registered participants promptly.

Refund and Credit PolicyActivities cancelled by the Center:

• Full refund will be issued. Refunds may be collected until the last day of the semester.

When a participant cancels a tour or activity registration, no refund will be issued. However, credit is available on the following terms:

• A full credit will be issued if you cancel your registration at least one week prior to the first meeting. After that time, we are unable to give credits.

• Credit may be applied to other Center activities within the current term or to the term that immediately follows.

On the other side of town, far away from Tianmu, is a small neighborhood known as “Little Burma.” Join Ivy as she walks you through this tiny enclave of spice shops and small eateries. If you're not too full after snacking on some of the tasty treats available, you can stay and join Ivy for an optional lunch.

Beitou was one of the major hot spring resort areas set up in Taiwan during the Japanese colonial period, and a century later remains one of the finest places on the island to explore hot spring culture and to take a hot spring bath. This tour begins with a visit to the Beitou Hot Spring Museum (housed in a beautifully restored Japanese bathhouse), pays a visit to the natural lake of boiling-hot spring water at Hell Valley, and pauses beside the hot-water stream below, where we can dip our feet in the hot water. The tour ends with an introduction to a couple of Beitou's best/most historic hot spring bathhouses and resorts.

Originally built in 1661, Guandu is Taiwan’s oldest temple and is dedicated to Mazu, Goddess of the Sea. It is one of the Taipei areas' most interesting to visit as it is built against a cliff and features two caves, one of which extends quite far into the hillside and houses many deities representing the God of Wealth. Join Jennifer to learn about this fascinating temple, explore the caves, and be one among the many seeking their fortune for the upcoming Year of the Sheep.

This tour begins at Nanmen Market, one of the oldest public traditional markets in Taipei. Offering a wide variety of food, delicacies and prepared sauces, this is where locals go to buy the ingredients needed to create dishes from their childhood. Afterwards, we will walk to the nearby National History Museum located in the Taipei Botanical Garden for a tour and stroll through the lovely gardens. The Museum's collection comprises works donated by over 400 private collectors, including rope-pattern pottery, Han ceramics, Tang-era tri-color glazed ceramics, bronze vessels, porcelain, and other precious works.

World: An Evening of Wine Tasting

Join the Center for a special evening of wine tasting, led by Mark Pygott and hosted by John Imbrogulio. Mark, previously an assistant winemaker in England and France, a student on the Master of Wine Program, and currently a wine educator, consultant and trainer in Taiwan, will lead you on an exploration of the differences between Old World (France, Spain, Italy) and New World (USA, Argentina, Australia) wines. This class includes seven wine tastings and a light fare of tasty nibbles to pair with each wine. Spend a great Saturday evening with the Center!

From the Jingmei MRT station we will begin our adventure with a short, but steep climb up concrete steps to the Fairy Footstep Rock to see a lovely piece of countryside in the middle of the city. Legend has it that the foot prints embedded in the rock face belong to one of the Eight Immortal Gods. We’ll end the tour with a visit to a tiny, but old temple in the Jingmei Night Market below. Wear proper walking shoes; bring water, snacks and rain/sun protection as needed.

9Sky Lanterns and

Waterfalls: Pingxi and Shifen

This tour begins with a quick stop at the historic town of Pingxi, famous for its annual Lantern Festival. We will then carry on to see the beautiful Shifen Waterfall, the widest in Taiwan. Our last stop will be the quaint Shifen Village where you will have the chance to decorate and send off your own sky lantern. After a bit of wandering and time to shop and eat we will take our bus back to Taipei. You may bring a packed lunch or purchase some local snacks and treats. All other costs including one sky lantern included.

History, Rumors and Secret Tunnels

Back by popular demand! Join the Center for a fascinating tour of the Grand Hotel and learn about its history, folklore and colorful past. This is also your chance to visit one of its secret passageways, which for many years was the object of much speculation. Where it leads, no one really knows. If they do, they aren't telling!

Magnificent: Silver Stream Cave Hike

Silver Stream Cave is a tiny temple built into a cliff face behind a tall waterfall in the hills around Xindian. This hike starts by climbing up to the temple, passes right behind the waterfall (offering magnificent views through the water and out over the hills below); then continues deeper into the wooded hills, climbs over a ridge, and descends to reach the terminal station of the Maokong Gondola. Here, one may pause to enjoy a cup of tea, or take the Gondola straight back down to Muzha Zoo MRT station. This hike is largely on dirt trails, with steps at the beginning and end. There's one short, moderately steep climb, but the hike is suitable for walkers who regularly hike in Yangmingshan and are confident on dirt trails. Walking shoes with a good grip are essential.

The only outdoor sculpture museum in Taiwan, the Juming Museum is located in the beautiful mountainside town of Jinshan. Its expansive grounds feature a multitude of spacious outdoor exhibitions that allow visitors to get up close to the artworks on display. While most of the sculptures are displayed outside in natural surroundings, the Museum also has two interior exhibition spaces, featuring works by Juming himself and a variety of other artists. Don’t miss the chance to visit this lovely museum and wander through the beautiful artworks of a very talented artist. Includes bus, admission fee, and an English-speaking museum guide.

Four Animals Mountain, looming above Taipei 101, is a popular destination for expats and locals alike. On this very scenic hike we'll climb two of the peaks: Elephant and Tiger; and explore the area around the remaining two: Panther and Lion. We will enjoy fine views over the cityscape and pass a series of remarkable Taoist relics, including an impressive statue carved into a sheer cliff. This is a moderate hike, on stone-surfaced paths, with some steep steps and short climbs. Wear proper hiking shoes; bring water, snacks and appropriate rain/sun protection.

Temple and Indigo Dye Center Tour

Join Jennifer for an adventure to Sanxia, with its endearing old street and beautiful Zhu Shi Taoist Temple. Included in this tour is a visit to one of the town’s indigo dye centers where you will have the option of creating a hand-dyed item of your choosing (cost not included). Explore Taiwan the way the locals do—using MRT and public bus. Bring your Easy Card and a packed lunch. Tasty local snacks are also available to try.

Do you have a nice DSLR camera but haven’t quite figured out how to use it? Are your photos not coming out as you had imagined? Would you like to be able to capture those special moments with your kids or when out and about on a vacation or local adventure? Then, hurry up and register because this is the class for you! Join Justine who will teach you how to shoot in manual mode so you can take control of how you take photos and have them turn out the way you want them to look. Learn about shutter speed, F-stops, ISO, and much more! Bring your digital camera and laptop to class.

29 Discover Yourself Through Paper Cutting Thu Apr 23 to May 07 10:00am -

Tim Budden is an established Welsh artist living in Taiwan who uses paper cutting as his medium and has made the craft of paper cutting into a unique and personal art form. In this second Taiwanese-style class Ivy introduces you to a local hand-held favorite—the Chinese Hamburger or “Gua Bao." Served in a fluffy cut bun, this “hamburger” is traditionally filled with pork belly, mustard greens, ground peanuts and cilantro, but Ivy likes to serve hers with a variety of fillings and will prepare a selection suitable for meat eaters and vegetarians alike. Ivy will also prepare Stir Fried Beef with Morning Glory (kong xin cai) and a seasonal vegetable for you to enjoy.
