Phosphates are a necessity for various industries in providing customers with improved quality foods. They are safe for consumption and without them many food products will not be able to reach the shelf. They impart desired properties to the food and improve quality, taste, shelf-life and other characteristics. In food industry the
demands of phosphates are increasing day by day with increasing incomes and per capita consumption of processed food. Asia holds the biggest share in consumption of industrial and food phosphates. How do Phosphate additives act on food?Phosphates change the properties and structure of proteins. They can change the
pH, ionic strength and binding properties of the proteins. They can bind with proteins or react with their charged groups to form complexes. These actions of phosphates on proteins induce different properties like hydration, swelling, gelation and stability. Following are some of the ways phosphate impacts the food properties:
Phosphate AdditivesRESEARCH
Polyphosphate binds with protein found at the surface of fish making a film. The film acts as a seal and fluids don’t flow. During frozen storage, it will minimize the thaw drip in fish by reducing moisture loss.
In beverages low level phosphates additions solublize the proteins.
In bakery products leavening agents are used to make the batter porous and light. It gives the product volume, crumb texture and palatability. The baking soda is used as a leavening agent with an acid which contains phosphate. They also act contrib-utes to uniform texture of bread.
Phosphates are used as preservatives because they inhibit the growth of molds and rope bacteria. In bread if small quantities of phosphates provides protection to every particle of the loaf.
In cheese, they act as emulsifiers to provide smooth texture, slicing property enhancer and also makes cheese fat leakage free.
As an anticaking agent it acts when to prevent the uptake moisture which results in caking.
The water binding capacity is enhanced in meat when phosphates are applied. The addition of phosphates increase the pH of meat and it creates a space between the actin and myosin due to electrostatics repulsive forces causing more water to bind. It also does sequestration of the metal ions like Ca2+, Mg2+, Fe2+ , Fe3+ etc. Particularly the binding of phosphates with Ca2+ and Mg2+ which are present in actomysosin complex. They also do the separation of actin and myosin complex.
The color of meat is retained due to buffering properties of phosphates.
Mode of action,safety & applications

Phosphate is an essential nutrient and it is required by the body to carry out many functions. Its normal levels should be main-tained to carry out biological functions properly. Phosphates additives are charac-terized as safe by Food and Drug Adminis-
tration and European Food Safety Authority. The Dietary Reference Intake (DRI) for phosphorus for men and women 19 years of age and older, including pregnant and lactating women, is 700 mg/day. The phos-phate in food additives has quite minute
quantities when it is compared to dietary intake of phosphorous as a whole as shown in table.1.
Phosphates being SafeRESEARCH
Table.1: General levels of phosphorus found in foods commonly manufactured with phosphate food ingredients or phosphoric acid
When phosphate is taken in excess quantity it is removed from the body by kidney. If a person is already eating imbalanced protein rich diet high then it will cause health complications. The rich diet is particularly referred to as meat diet which arises health issues rather than phosphate additives.
