Vineyard Located at the crest of a 400-foot hill, just miles inland from Long Island Sound, our vineyard benefits greatly from the moderate growing conditions found here. Glacial till soils, full of local stones lends minerality and a sense of place to our wines. With every row mechanically tiled (drained), and forgoing irrigation, our dry farming technique is used to maximize each growing season by focusing fruit intensity. 2 distinct clones add complexity to the wine and prolific leaf thinning keeps vegetative flavors at bay. Winemaking Hand harvested and very gently crushed to just break the skins; the must is separated into two lots. A portion is fermented in tanks using pump overs, and the remainder in open top fermenters using punch downs. In addition to separate fermentation techniques, 2 separate yeasts are used to add complexity. Pressed and aged in barrels for one year adds oak nuances but does not dominate this wine. Tasting Notes A mid-weight red with gorgeous color reveals soft cherry, cranberry and spicy nuances. A smooth lingering finish of cinnamon and nutmeg complements a broad mouth feel. Alcohol: 12.4% pH: 3.62 Acidity: 6.5 g/L Cases: 580 2016 Cabernet Franc | Estate As our only estate grown red wine, Cabernet Franc has firmly established itself as a consistent producer of spectacular fruit. Always able to shrug off our winter cold and producing a consistently heavy crop, this 2-acre vineyard is a joy to grow. 2016 led to some challenges after a cold winter in 2015, but our Cabernet Franc flourished, continuing to prove that is a true workhorse variety in New England.
