Marketing Matters: Consider creating a value added productA creative bumper crop solution

Joe Mullin describes the equipment andfacilities available to farmers and foodentrepreneurs at the Ontario Agri-FoodVenture Centre.The long, hot summer days of 2016 helped to create one of the best tomato crops Ontario has seen for a long time.Many farmers were faced with a bumper crop. So what can a farmer do with all those extra tomatoes?
If you live in or near Northumberland County and you are considering creating a value added product with some ofthe fruits and vegetables you grow, the stars have aligned for you.
Northumberland County and the federal government have invested almost $3 million in a new facility just outside oColborne. The Ontario Agri-Food Venture Centre (OAFVC) opened its doors in June 2015 with the goal of helpingfarmers and food entrepreneurs grow. It is a state-of-the-art, 15,000 square foot building that has all the equipmentnecessary to take your product from the field to the consumers’ fork. One of its biggest assets is Joe Mullin. He isthe person in charge of the day-to-day operations at the facility.
During a recent tour, Joe highlighted the centre’s dedication to helping people take their recipes to store shelves bysharing Dotty’s story. Dotty was in her late 70s when she came for a tour of the facilities a few months ago. She hadan old family recipe for BBQ sauce that she had dreamed of commercializing for more than 20 years. When sheapproached Joe after the tour with her idea, she kept saying: “It’s probably too late to do this now.” Joe guided Dottythrough the process of developing a label, choosing jars for her sauce and batching up the recipe. In just over amonth, she had bottles to take to local stores for them to sell on their shelves. Dotty did all the marketing legworkherself and is now supplying eight stores in the area.
The tour took us through the spotless, modern facility. The processing room, commercial kitchen and developmentlab are all available to rent at hourly and daily rates. Cold and freezer storage as well as dry storage are available atreasonable monthly rates.
OAFVC has a supportive environment where a farmer could work out all the kinks in their recipe and get a feel forwhat food processing is all about. The alternative is to invest in hundreds of thousands of dollars in equipment onlyto find out that food processing is not really for you.

Over 200 people attended the event that
included live music, no speeches and great
food tastings presented by 15 of the centres
clients.
According to Joe, the centre has just passed the one year mark and it is doing well. It is a non-pro t
centre funded by 3 tiers of government and so is not expected to make a pro t. That said, given its
popularity it is due to break even in under two years from the date of opening. An accomplishment
that speaks to the foresight and creative implementation of Trissia Mellor, Agricultural Manager with

Multi -funded, the facility serves
Northumberland clients as well as those
outside of the County. “About 98% are
Northumberland people,” Joe says. The
remaining are within an hour’s drive. Although
the OAFVC has had clients from Sudbury and
Ottawa region, Niagara, Ontario.
The commercial kitchen has been booked solid for the past three months he says. April is 75%
booked at this point. He can see the facility going to a second shift “pretty soon.”
What are people producing?
“A lot of sauces, a lot of beverages. We expected a lot more farmers doing produce but because of the
drought last year it hit hard. .. We are thinking it is going to be much better this year.”
“One of our fellows here tonight has ve main hot sauces. He has won fourteen awards. Won an
award in New York City just a few weeks ago. He has done extremely well. He is in over 200 stores now.
Such as Sobeys. That’s before he won these awards. He is taking off like crazy. He had been doing sauces
for ve years. And he outgrew his current kitchen.”

food producers he says. The process of small food
production goes like this, “We sit down. Talk about
their dreams. What is it that they want to do. Once
we nd out where they want to go, we help them.
We bring in the resources … experts as they need
them. We have a chef on board. We bring in food
scientists as we need them. “
The facility helps with cooking, food
processing, labelling, labelling and packaging
including design.

cording to Jeremy Clarke and Joanna Bastas who
run Buddha Belly Bakery in Oshawa, “The facility
has been great. We started out making our Buddha
bars here. It was real easy to transition from our
place to here. It was real easy to get started out.
Which made it real easy to transition out. So now
we are in our own facility and we still come back to
have our labels done and printed for us. We heard
about the place through the Cobourg Farmer’s
Market.”

labels were designed by their graphic artists. They
have a corporate chef. He will do tastings us and
then we do the actual testing in the lab for
ingredients. Then the bottling, sealing and
labelling. The whole deal.

afford to do this on our own.
We are at Blackburn’s Winery. We have a retail space in the back.”
Elizabeth Kiser who runs the Exhale Pilates and Yoga Studio in Port Hope, says she started producing
her Karma Clusters in May 2016 in preparation for (http://www.cramahenow.com/wp-

Taste of Toronto show in June. Reception for the
product has been good. In August Karma Clusters
were featured in a pop-up shop at Holt Renfrew.
It has since become nalist in the Gluten Free
Awards in Vancouver in January.
Along with nancing help from the Canadian
Futures Development Corporation Northumberland, she is purchasing a machine from Europe that
will make the KC product. At present it is being made by hand in the AGFVC. When the machine arrives

If Saucy Dotty’s Original Gourmet Sauce don’t get to you, the story of its creator will. Either way, you
are going to be a better person for knowing about Saucy Dotty’s Original Gourmet Sauce. So
pull up a rib, splash on some of Saucy’s Sauce and let me inform you of the salience of Saucy Dotty.
The story of the sauce’s creator, Dorothy Worobetz is a story is one of persistence and re-
invention. Dorothy has had more heart attacks than I have had crowns installed on my overused
molars. Yet they haven’t stopped her. She’s been a college prof at Loyalist and St. Lawrence
colleges in electronic assembly, the owner of a �eet of taxis in Picton and Belleville, a country
’n western bar owner as well as a restaurant owner in Welland Ontario. Head of the Brighton
Ladies Legion Auxillary. President of Brighton Probus.
She’s 77. That’s right. Seven of Seven. And still bringing it. Used to be a redhead she says which
explains why she is dogged, combative and determined. She went toe-to-toe with the Big C last
year. And still, she kept on going. That was when she launched Saucy Dotty’s Original Gourmet
Sauce. Worked through the pain. Literally.
Her latest adventure started quite innocently. During a tour last year at the Ontario Agri-Food
Venture Centre in Colborne, the group was asked if any of visitors had an idea for producing
something at the facility. The large setup in the industrial part of the town provides everything the
small producer needs to take a raw food item from �eld to a �nished, marketable product. Recipe
development, cooking, blending, freezing, packaging, labeling, etc.
Dorothy’s hand shot up. She had Aunt Agnes recipe for gourmet sauce that she has been turning
out by the gallon for friends and family for years.
It wasn’t long after that she was in there having put some of her savings up to pay for ingredients and
containers and everything else associated with the costs.
She along with help from her family and the
people at the facility started producing 35 box
batches. She has been back since then. Special
E�ects in Brighton, a furnishing and home
decor store at 85 Main Street has sold 22 cases
on its own.
It has been a good association with the OAFVC,
she says. “Without them, I wouldn’t be here…I
wouldn’t have done that..” But she adds, “I am
their poster child.”
At present Saucy Dotty’s Gourmet Sauce is in
12 specialty stores in Northumberland and Quinte. She likes to do tastings when she presents her
sauce on meatballs. She has had great success getting the word out about it.
“One bite and they are buying it. Of ten that try it, 7 or 8 buy it. “
“We are looking 4 litre bottles because I believe there is a very big market in restaurants and
bars.”
“It is sweet with a little bit of a bite. It is its own taste People are actually putting it on a spoon and
eating it. It is unique.”

As for how she balances the slog to increase her customer base and problems of distribution against
the fact of her age and her goals to �nd a distributor, she says, “When it happens it happens…I am
one of the most positive people you ever meet You give me a negative I will give you ten
positives back. There isn’t anything you can’t do. As sick as I was I got through last year. With a lot of
peoples help.”
“I am determined. I am just doing. I don’t have a business plan. Never had one. If it goes it goes. I am
anxious for it to hit big. I am really working at it because I have so much con�dence in this
sauce….I don’t think it will �zzle out.”

Northumberland Agri Food Fund Pilot Program launched with Eastern
Ontario Development Program Support

The Northumberland Agri Food Fund Pilot Program will benefit from an investment announced today in
Cobourg, Ontario by Northumberland Community Futures Development Corporation (CFDC) and Kim Rudd,
Parliamentary Secretary to the Minister of Natural Resources and Member of Parliament for
Northumberland−Peterborough South.
The Northumberland CFDC is pleased to support this local business development pilot program initiative with
an investment of $50,000 under the Eastern Ontario Development Program’s Business Development stream,
with a total project cost of up to $150,000 towards the launch of the Northumberland Agri Food Fund Pilot
Program. The funding investment will enhance the growth of the existing agri food business and is a joint
venture pilot program between the Business & Entrepreneurship Centre Northumberland, Northumberland
County, the Province of Ontario and Northumberland CFDC.
The goal of the Northumberland Agri Food Fund Pilot Program is to attract and support up to 10 projects
focused in the local business sectors of agriculture, food and beverage with business support resources and
micro-financing of up to $10,000 a project. This pilot program is positioned to enhance local effective business
startup and sustainability, support local supply chain opportunities within the agri-food sector and promote the
Ontario Agri-Food Venture Centre.
Application intake is currently open, with active local interest underway.

NORTHUMBERLAND - A contract position with Northumberland County’s Ontario Agri-Food Venture Centre (OAFVC) in Colborne has beenextended for another six months as the centre continues to grow.
One of those ways is through an innovative program with Loyalist College of Belleville.
County councillors agreed with the recommendation made to continue the contract by its economic development director Dan Borowec atcouncil’s most recent meeting.
When asked for details, county spokesperson Kate Campbell stated in an e-mail that “the contract extension is for the Innovation ImmigrationCoordinator position out at the OAFVC ...currently staffed by Chef Emilio Ojeda.
“Northumberland was previously successful in acquiring funds which supported the creation of a one-year, part-time contract position toenhance the economic integration of newcomers through the Ontario Agri-Food Venture Centre. There are now a variety of new opportunitiesthat have presented themselves for supporting this position, in particular collaboration with Loyalist College on the ‘Elevate’ program, and asettlement and integration project focused on food-preparation and training classes.”
The college connection is described in a county report councillors received.
“Loyalist is pleased to announce the College will work with local manufacturers to facilitate delivery of an adult retraining program thatcombines literacy and essential skills with job-specific training for the food processing industry. Elevate is a joint partnership with EssentialSkills Ontario and the Food Processing HR Council, designed to support vulnerable individuals who are unemployed or receive incomesupport. The program is delivered at no cost to students through Loyalist Training and Knowledge Centre (LTKC). Elevate is part of a pan-Canadian research project evaluating whether the direct involvement of employers in the design and delivery of workforce training for low-skilled adults can help sustain longer-term employment.
“Participants will attend six weeks of training, including 17 days of practical in-class studies and 13 days of on-the-job placement with one ofthe partnering manufacturers. The Elevate program is open to applicants with a high school diploma as well as those who have not completedhigh school and candidates who may have credentials from another country.
“The food and beverage processing industry is currently facing a skills gap, with at least 30,000 new positions to be filled over the next severalyears, according to Essential Skills Ontario.”
With the business immigration co-ordinator position vacant since November, 2016 due to illness, these duties have been handled by thisoversight contract position, it also states.

ONTARIO GOVERNMENT HELPING GET MORE LOCAL FOOD ON ONTARIAN’S PLATES New funding supports Local Food Investment Fund project in Northumberland County
Colborne – To cap off Ontario Agriculture Week celebrations, Lou Rinaldi, MPP forNorthumberland—Quinte West announced that the Ontario government is providing theOntario Agri-Food Venture Centre (OAFVC) with $32,400 in funding through the Local FoodInvestment Fund.
The support will allow the OAFVC to purchase a new automated liquid filling and bottlingmachine that will help increase productivity and allow local food entrepreneurs to meet thegrowing demand for natural fruit drinks, edible oils and other bottled product markets.
The OAFVC is one of nineteen local food projects across the province that will receive nearly$500,000 in new investments made possible through the province’s Local Food InvestmentFund, administered by the Greenbelt Fund.

About the Local Food Investment Fund: The Local Food Investment Fund supports farmers, agri-food business and non-profits to getmore local food on Ontario plates. In 2015, the Ontario government provided the GreenbeltFund with $7 million over three years to support initiatives that will help support theprovince’s local food strategy by enhancing consumer awareness and access to local food, aswell as generating demand and supply of Ontario foods and beverages. Overview
While the average age of an Ontario farm operator is 55 years old, multiple generations
may work on the farm. Understanding the demographics of farmers in more detail will
help target programming and services by:
Age
Whether they have off-farm income (e.g. time of day programs are
scheduled)
Whether they have children (e.g. availability of child care)
Business interests (e.g. on-farm diversification, specialty crops, online
retailing)
Agriculture and food incubators/food hubs are cropping up across Ontario to support agri-
food entrepreneurs and fill infrastructure gaps for cold storage, processing, distribution,
and mentorship opportunities. The Ontario government should recognize the value that
these facilities bring to the agri-food sector to support innovation and entrepreneurship,
and it should be promoted to new and beginning farmers.
Many agri-food career opportunities exist, but they are not limited to only graduates with
agricultural degrees. Ontario needs a skilled workforce – tradespeople, students
educated in science, technology, engineering and mathematics (STEM) fields, culinary
expertise, and other fields not typically associated with agriculture. Ontario needs a
concerted effort to promote the agri-food sector within other fields of study, and increase
recognition of the high-skilled, well-paying careers in the agri-food sector.

OFA commented on OMAFRA’s Farms Forever consultation and suggested initiatives to
assist with their objective to “Support New and Beginning Farmers”.
OFA is engaged with the Incubation Acceleration Commercialization (IAC) Agri-Food
Collaborative steering committee to develop a coordinated strategy for organizations that
support agriculture and food start-ups and small business ventures with programming,
mentorship, incentives and small-scale infrastructure. The strategy will encourage a
coordinated effort to support innovation and entrepreneurship through hubs such as the
Ontario Agri-Food Venture Centre (OAFVC) and Food Starter.
OFA Position
OFA believes that new and beginning farmers should have access to programming that
assists them in operating a successful farm business. Business Risk Management
(BRM) programs have been designed to enable beginning farmers to take advantage of
these programs.

Getting food products into the marketplace can be time consuming and costly forsmall farmers and food processors. The Ontario Agri-Food Venture Centre (OAFVC) inColborne is working to change that.
E�ective and inexpensiveOwned and operated by Northumberland County, the OAFVC assists local foodproducers in getting their products onto the shelves of major food distributors andcommunity stores, as well as the menus of local restaurants and pubs. The centre o�ersaccess to food safety expertise, as well as a variety of services across the farm to tablevalue chain — processing, safety testing, bottling, packaging, labelling, freezing, storage,and promotion.
The centre operates on a pay-to-play basis — clients pay only for the time and servicesthey use — making it an e�ective and inexpensive way for local farmers and food start-ups to get their product marketplace ready. “Because we’re small time right now, wecan’t a�ord a professional kitchen to do all the proper testing ourselves, so this facility isjust perfect for us,” says Pete Bradford, owner of Canadian Vinegar Sellers, a craftvinegar enterprise that he and his wife Marla operate in Picton, ON.

product,” says Hayes, who freezes and stores his berries at the facility until he and hiswife Priscilla are ready to process them into jams, syrup, and sauce or sell to local foodentrepreneurs. “We’re now selling to a local distillery that makes cassis, as well asbeermakers, an ice cream maker, cider producer, and a lady using it in her gourmetmustard,” says Hayes.
Transforming the local economyThe high cost of processing equipment has prevented many Ontario farmers fromgrowing and selling hops, a key ingredient for the beer industry. With the centre’s recentpurchase of a hops pelletizer and processor, that barrier has been removed. Farmerscan process their hops there on a �rst-come, �rst-served basis and leave with a market-ready product. This has certainly helped local hops grower Brian Bickle, who was amongthe �rst to try the machine. He now has an exclusive contract with William Street BeerCompany, a 10- to 15-minute drive from his farm. “Because they’re using our local hops,it’s driving tourism to both their brewery and our farm and transforming the localeconomic development,” says Bickle.

Agriculture Week with a signi cant grant to the Ontario Agri-Food Venture
Centre in Colborne.
The OAFVC is getting $32,400 from the Local Food Investment Fund, to buy a
new liquid lling and bottling machine.
That machine will increase productivity and allow local food entrepreneurs to
meet demand for various products like drinks, edible oils and other bottled
products.
The OAFVC, which o ers multiple services to help local food producers get
products to market, is one of 19 similar projects across Ontario to bene t from
$500,000 in investments from the Local Food Investment Fund.

The food, beverage, bio and ag industry is truly an exciting Sector full of growth and new development. It offers a breadth of careerchoices in any number of disciplines and for those with entrepreneurial mindsets, the opportunities are endless!
It’s a constantly evolving and changing landscape that provides career seekers engagement in a boundless variety of roles from field totable and for those seeking to start a business – limitless possibilities and a plethora of resources to enable success!
Entrepreneurs and food enthusiasts are dotted across Ontario and throughout Canada. People of all ages are excited about introducingsomething new to the table. This is a Sector full of growth and development, innovative products and unique equipment, intriguing rawmaterials sourced locally and around the world, and finished goods that adhere to stringent food safety requirements – so much so, that ina study conducted by the Conference Board of Canada in 2014, our Country tied for number one for our food safety systems against 17others. What a wonderful environment to consider exploring - one that is innovative and conducive to idea generation - with a breadth offresh ingredients ready at hand - and a market that embraces many different nationalities and customs, flavours and tastes!
As a budding Entrepreneur in the tea landscape, it was a pleasure to have my Mentee from the University of Western Ontario, join merecently for a special Workshop on Starting a Business in the Food Sector.
This particular event was hosted by the Small Business Centre in London. The focus was to help potential entrepreneurs, such as myfuture Grad, gain a perspective on the requirements in this Municipality to ensure the foundational success for starting such an initiative.
It is safe to say, there is a lot to learn – definitely much to consider – and most importantly of all – help exists through many differentorganizations such as the Small Business Centre, your Municipality, Economic Development, OMAFRA (Ontario Ministry of Agriculture,Food and Rural Affairs), Sectoral Organizations and of course – EMC!
We had three excellent presentations that covered different facets of business start-ups – from Municipality requirements, to Health andFire Inspector needs, to labelling and packaging regulations with the CFIA. We learned about zoning, building, adding additions, and onthe Health Unit side of things we talked about a number of different inspection items and subsequent severity ratings and potentialbusiness impact. Our CFIA Speaker shared information on the Safe Food for Canadians Act, highlighted a great tool on their website todetermine Industry Labelling requirements, reviewed the ten priority Food Allergens, looked at the differences between Manufactured andRetail food requirements, and discussed the Food Safety Investigation Program.
This special Workshop certainly left three key concepts in our minds (I’m sure there are several more – but we’ll stick with three for now!):
1. Planning is key – think about where you are today as you create your business and where you want to be in five or ten years.Business plans are vital and can really enable your success.
2. Reaching out for advice, or to help with planning, is just an email or telephone call away. There are lots of community partners,sectoral organizations, consultants, government agencies, OMAFRA, and of course peer networking opportunities through EMCinvolvement to tap into.
3. Learning is ongoing. There will always be elements of your business that will require your attention: for example, the latest legislativeissues or certification requirements, or hurdles relating to product, people or processes. The key is staying abreast of these and beingproactive where you can. Embrace Workshops and Training Events that keep you in good stead in this regard.
It was great to see a full house for this session and to hear about the different types of food-oriented businesses that people areconsidering. Interesting approaches that I never thought of before which certainly makes you appreciate how innovative our industry truly
is! It is equally exciting to see the number of young people, including my Mentee, eagerly embracing an entrepreneurial journey within theSector – this is wonderful!

This is an amazing facility in its own right with an 8,000 sq foot pilot plant equipped with beverage, baking and vegetableprocessing lines. At this Special Peer Networking Session, we’ll be exploring the current and upcoming regulations and legislative issuesaround “Packaging, Labelling and Innovation” with NSF International. We are also pleased to have Belmont Meats joining us to share theirjourney when it comes to marketing, product and packaging development and Raining Communications Inc. who will be providing aperspective on enhancing success in this arena. Definitely mark the date on your calendar, and come to network with others in industry,connect with key community partners such as the IFPT and our Guest Presenters and take in a great facility tour!
In closing, as I reflect on the information so willingly shared at the Workshop, the questions asked by participants, and discussions afterour session, it is really exciting to see the interest in creating new businesses within the Food Sector and certainly, if you happen to beentrepreneurial-minded, there are so many wonderful organizations and resources available to help you get started!
As I celebrate my Mentees direction in this regard, please know there are many of us, who would be absolutely thrilled to watchyour journey and to see you grow and succeed too!
