[57] Abstract:

The present utility model discloses the formulation of a steamed rice cake from breadfruit (Artocarpus altilis, Fosb.) and squash (Curcubita maxima, Duchesne). Breadfruit is a tropical tree belonging to the genus Artocarpus in the Moraceae family. This fruit is generally seasonal and abundantly available twice to thrice a year. Breadfruit is an underutilized fruit in the Philippines. Plenty of fruits just fall and rot on the ground during its peak season. Traditionally, it is eaten by cooking with coconul milk and or frying in oil. Squash is a widely cultivated vegetable belonging to the Curcubitaceae family. It is rich in nutrients like carbohydrates, proteins, vitamins, minerals, calcium and phytochemicals. The development of steamed Breadfruit-squash rice cake offers a new variety of rice cake with high nutritive value. This product encourages and increases the economic potential of breadfruit and squash.
