Macintosh-Oatmeal Cookies1 1/2 cup sugar
1 cup (2 sticks) margarine or butter, softened1 1/2 cup all-purpose flour
1 teaspoon baking soda1 teaspoon ground cinnamon1 teaspoon vanilla extract
1/2 teaspoon salt2 large eggs2 medium (about 2 cups) Macintosh apples, peeled,
cored and diced3 cups quick-cooking oats, uncooked1 cup dark seedless raisins
1. In large bowl, with mixer at medium speed, beatsugar and margarine or butter until light and fluffy, about 5minutes. Add flour, baking soda, cinnamon, vanilla extract,salt and eggs; beat just until blended, occasionallyscraping bowl with rubber spatula. With spoon, stir inapples, oatmeal, raisins and walnuts.
2. Preheat oven to 350 F. Drop batter by level 1/4 cups,about 3 inches apart, on 2 ungreased large cookie sheets.
3. Place cookie sheets on 2 oven racks. Bake cookies20 to 25 minutes until golden, rotating cookie sheets be-tween upper and lower racks halfway through baking time.With pancake turner, remove cookies to wire racks to cool.

Auld Lang Syne is thesong traditionally played atthe stroke of midnight atparties, festivals andgatherings across theUnited States. In fact, it isthe preferred song for mostof the English-speakingworld on New Years Eve.Many people know thewords and the music, buthave no idea what the songactually means. If you wantto recapture some of themeaning of the song, spendsome time learning about itshistory and what the lyricsactually mean.
The song actuallycomes from a poem byRobert Burns, the greatScottish poet, althoughmany argue that earlierversions of the ballad haveexisted for much longer. Thestory is that the song wasgathered by Burns from anold man, moving the songfrom an oral tradition to awritten one. It is sung to atraditional melody with amournful air at New Yearsand ceremonies that markthe endings of other things,like graduations, funeralsand farewell parties.
The title of the song canliterally be translated as oldlong since, although a morereasonable translationwould be long, long ago oreven once upon a time.The song actually openswith a question, which mostpeople dont know, asking ifold days and oldacquaintances should beforgotten. Most peopleunderstand the song to be acall to remember oldfriendships while movingforward into the New Year.

Preheat oven to 425 F.For pie: Mix sugar, salt, cinnamon, ginger and cloves
together in a large bowl. Add eggs and beat slightly. Addcorn syrup, pumpkin and evaporated milk; blend well.
Pour filling carefully into piecrust. Do not overfill crust.The amount of filling prepared may exceed the capacity ofa 9-inch piecrust.
Bake for 15 minutes; reduce oven temperature to 350 Fand continue baking for 40 to 50 minutes, or until knifeinserted in center of pie comes out clean. Cool on wirerack for 2 hours before serving.
For whipped cream: Pour cream into medium-sizedbowl. Beat cream 3 to 4 minutes until soft peaks begin toform. Gradually add brown sugar, being careful not tooverbeat. Fold in vanilla, cinnamon and nutmeg.
Classic Pecan PiePrep time: 5 minutesCook time: 60 to 70 minutesChill time: 2 hoursYield: 8 servings
1 cup Karo Light or Dark Corn Syrup3 eggs
1 cup sugar2 tablespoons butter, melted1 teaspoon vanilla extract
112 cups (6 ounces) pecans1 (9-inch) unbaked or fro_zen* deep-dish piecrust
Preheat oven to 350 F.Mix corn syrup, eggs, sugar, butter and vanilla using a
spoon. Stir in pecans. Pour filling into piecrust.Bake on center rack of oven for 60 to 70 minutes (see
tips for doneness, below). Cool for 2 hours on wire rackbefore serving.
*To use prepared frozen piecrust: Place cookie sheet inoven and preheat oven as directed. Pour filling into frozencrust and bake on preheated cookie sheet.
Recipe Tips: Pie is done when center reaches 200 F.Tap center surface of pie lightly-it should spring back whendone. For easy cleanup, spray pie pan with cooking spraybefore placing piecrust in pan. If piecrust is overbrowning,cover edges with foil.

Pumpkin pie dates back to at least 1621, when NativeAmericans introduced the crop to the early American
settlers of Plymouth. Hollowed-out shells were probably
mixed with milk, honey and spices and then baked in hotashes, as the early colonists did not have ovens.Tradition says the French were introduced to pecans by
Native Americans and invented pecan pie soon aftersettling in New Or_leans, but no recipes have been foundthat date before 1925. Karo knows from its history that thepopular corn syrup version of pecan pie was a 1930sdiscovery.
Karo syrup has long been an essential ingredient inclassic pecan and pumpkin pies. Typically, light corn syrupis used when a delicately sweet flavor is desired, such asin fruit sauces and jams.

Craving CranberriesCranberries are often part of a holiday feast, but their
nutritious tastiness is worth having anytime. Like manyfruits, cranberries are high in fiber and vitamin C and lowin calories and fat. A fresh cup of these tangy berries has
just 51 calories, 5 grams of fiber and 24 percent of thevitamin C that the average person needs in a day.
Cranberries are packed with antioxidants that mayhelp maintain heart health and reduce cholesterol. Thetannins in cranberries may help prevent gum disease andurinary tract infections. In the lab, cranberries preventbacteria from adhering to the walls of the urinary tract andthe gum line. According to the November 2010 TuftsUniversity Health and Nutrition Letter, a meta-analysis ofrandomized controlled trials investigating cranberry intakeand urinary-tract infections showed that there has beensome benefit established in reducing the number ofinfections in women.
Cranberry juice is often the choice when trying toprevent infection. The fluid in the juice also helps maintainhydration, which is known to help prevent infection.Cranberries are very tart and are often consumed incombination with sugar. For example, a glass of cranberry
juice cocktail has about 30 grams of sugar and 137calories. To add whole cranberries to your diet year-round,try baking cranberry nut bread, sprinkling dried cranberrieson salads or including them in trail mix.
Cranberries also can be used to decorate your homeduring the holidays. Try placing cranberries in a glass bowlwith water and place a floating candle in the middle. Youreonly limited by your imagination and creativity.
The Thanksgiving table would not be completewithout the cranberry sauce. Theres no need to open acan when this delicious Holiday Cranberry Sauce is sosimple to make at home!
HOLIDAY CRANBERRY SAUCE
This sauce can be made ahead and will keep in anair-tight container for two weeks in the refrigerator.Combine cranberry sauce with 2 tablespoons of Dijonmustard and pour it over leftover turkey, baked fish,chicken or pork. Its a delicious way to finish the dish and awonderful use for any Thanksgiving leftovers.
1 1/2 cups chopped, peeled Granny Smith apples(about 1/2 pound)
1 cup packed light brown sugar1/2 cup white grape juice1 teaspoon ground ginger1 teaspoon ground cinnamon1 (12-ounce) package freshcranberries,
rinsed and drained
Combine all of the ingredients in a mediumsaucepan. Bring to a boil; reduce heat, and simmer untilthick (about 15 minutes), stirring occasionally. Cool

This path set in a wooded PA hillside started out as a hobby for a home school familyworking together. Many friends encouraged them to put their things in some craft shows andthen eventually to start a shop. They started out making all their own furniture. And so it wasa family business, as their son Sean worked with his dad,Bruce Ireland; building, paintingand distressing the furniture. And their daughter,Sheena, worked with her mom,TammyIreland; displaying, ordering and taking care of the customers at the store.
The Irelands feel very blessed to have such a successful shop in such a small littlecountry town as Eldred. Because of the uniqueness of the shop it is nothing for the Irelandsto see customers from a hundred mile radius in any direction. Many out-of-state visitors stopby annually, while in the area, to see what has changed at the shop. When preparing for the holiday season, peopleobserve various traditions from decorating a Christmastree to hanging stockings from the mantel to tying a sprigof mistletoe in a doorway. Anyone familiar with themistletoe tradition knows that meeting under it often endsin a kiss, as the song I Saw Mommy Kissing Santa Clausalludes to. But what is the history behind the mistletoetradition?.
Although parasitic by nature, mistletoe has long beenconsidered a mystical, magical plant. Many ancientcultures believed the plant to heal sickness, protect lifeand enhance love and fertility. Europeans often hung itover the entrances to their homes, barns and stables toward off bad spirits.
The plant was also considered a symbol of peace inmany cultures. The Druids, for example, believed it to be
so powerful that warring clans would cease battle uponthe first sight of the plant. In Scandinavia, individualsmeeting under it in conflict could declare a truce or kissand make up.
In the Norse myth of the death of the god Balder, themistletoe has potent but promising properties. Balderdreams he is going to die and tells his mother Frigga.Alarmed, Frigga secures promises from everything andeveryone not to harm Balder, except for the mistletoe.Aware of this, the mischievous god Loki tricks the blindgod Hoder into shooting Balder with an arrow made ofmistletoe. Balder dies, much to Friggas horror. As Friggasheds tears on the mistletoe plant, its berries turn white.Eventually Frigga brings Balder back to life, and incelebration, kisses everyone she meets under themistletoe. From that day forward, the mistletoe brings onlykisses of joy to those who come into contact with it.
The tradition of kissing under the mistletoe was thebasis of kissing balls held in England during the 18th
century. Any girl caught beneath the mistletoe could notrefuse a kiss of friendship or love and would be marriedwithin a year. Today, in some parts of England, themistletoe must be burned on the 12th night so that all ofyoung men and women who have kissed beneath it maymarry.
Mistletoe remains a holiday tradition associated withkissing in many countries today. People often hang up asprig of mistletoe in a doorway or room and exchange akiss whenever they meet beneath it. Legend has it thatcouples in love that kiss beneath the mistletoe will one daymarry and have a long, happy life together.

character in Italian folklorethat delivers gifts to childrenlike Santa Claus but only onEpiphany. She appears onthe eve of January 6 to fillgood childrens stockingswith goodies and naughtychildrens stockings withcoal, garlic and onions. Anelderly woman, La Befanaflies from house to houseon her broomstick, wearinga black shawl covered insoot from her many trips upand down the chimney.

She never didcatch up with them, butaccording to anotherlegend, she did see theChrist child, and having losther own child, sheshowered Him with gifts.
Jesus was delighted anddeclared her the mother ofevery child in Italy.
However the tale of LaBefana goes, her visit onEpiphany remains atradition in many villages inItaly. Long after BabboNatale has visited, childrenremain on their bestbehavior in the hopes thatLa Befana will swoop downtheir chimney and fill theirstocking with sweet treats.

Each year as Christmas
approaches, children allover the world sit down topen a letter to Santa. Sometell Santa how good theyhave been and how muchthey are looking forward tohis visit. Others wish Santawell and remind him whatthey want for Christmas.When finished, the childrenslip their letter into anenvelope, seal it, address itto the North Pole and slideit into the mailbox.Surprisingly, many receivean answer to their letter,thanks to postal workersand other volunteers aroundthe world.
Writing a letter to Santahas long been a tradition.Children in Great Britainused to burn their letters inthe hopes the wind wouldtransport them to the NorthPole. Today, that is nolonger the case. Childrenlook to their post office tohelp them get their letters toSanta. According toestimates, post officesaround the world receiveapproximately a hundredSanta letters a day during
the summer and manytimes that during the holidayseason. In tough economic
times, post offices receivemore than double the usualamount of letters.
While postal workerscould let the letters sit, thatis not an option for many. In1912, U.S. Post ServicePostmaster General FrankHitchcock began permittingpostal workers in New YorkCity to respond to theletters. This was the start ofwhat would become known
as Operation Santa Claus,a program that operates inmany post offices around
the country. Hundreds ofpostal workers andvolunteers take time out toanswer letters. At the
Alaskan North Pole, forexample, over a millionletters have been sent out.
Other nations have theirown version of OperationSanta Claus, includingCanada, Finland, Franceand Germany.
Parties interested in
volunteering to answerletters to Santa shouldcheck with their local post
office first and see if such aprogram is available. Due tosecurity reasons andmailing costs, post officeswill no longer mail or faxletters to volunteers.Volunteers must pick themup in person. If there is noprogram, perhaps one couldbe started. What childwouldnt appreciate aresponse from Santa?

Each Christmas,children across Americahang up their stockings forSanta to fill with toys andtreats. The tradition hasbeen going on for centuriesand is practiced in manynations around the world.
The exact origins of theChristmas stocking traditionare unknown, but manyhistorians point to a 16th-century Dutch tradition inwhich children would filltheir clogs with a treat for
Sinterklaas and hay for thedonkey he rode from houseto house. In turn,Sinterklaas would thank thechildren by filling their clogswith sweet treats or coal ifthey had been bad.
According to historians,the Dutch tradition mayhave stemmed from alegend involving a poor manand his marriage-agedaughters. Upon the deathof his wife, the man had lostmuch of wealth and couldnot provide the properdowries for his daughters.
Unable to marry, thedaughters were very sad,and so was their father.Upon hearing of the familysplight, St. Nick wanted tohelp, but he knew betterthan to offer the poor butproud man charity. Instead,he rode by the familyshouse one day and tossedpurses of gold down thechimney. The gold landed inthe daughters stockingsthey had hung to dry by thefireplace. The familyrejoiced and was verygrateful to God and St. Nick.
Whatever the origins,the stocking tradition was
cemented in print with thepublication of Twas theNight Before Christmas inthe 19th century. In thepoem, the stockings werehung by the chimney withcare,/In hopes that St.Nicholas soon would bethere.
