Grilled Steelhead TacosIncluding Both Spicy & Savory Versions

Spicy Rub Ingredients1 tablespoon smoked paprika1 teaspoon cayenne pepper1 teaspoon salt1 teaspoon garlic powder2 garlic cloves chopped& Cumin to taste¼ cup melted butter  Savory Rub Ingredients2 tablespoons Old Bay Lemon & Herb1 teaspoon garlic powder¼ cup melted butter

1. Wash and dry filets.2. Cover fish with rub.3. Seal into foil pouch.4. Cook on high BBQ heat for 5 minutes. 5. Turn & cook 5 more minutes.6. Reduce heat to low and cut vent in top of pouch.7. Cook additional 3 minutes.8. Enjoy with your favorite taco toppings!

Pan Seared Steelheadwith Jalapeno Blueberry Sauce

Ingredient List

Steelhead Salmon Fillets

Salt & Pepper to Taste

2 T Sugar

½ C Apple Juice

2 C Blueberries

4 Jalapeños, finely diced

1 T Vegetable Oil

1. Wash and dry filets.2. Sprinkle with salt, pepper, & sugar on one side.3. Heat oil in frying pan on medium-high heat.4. Fry fillets spiced side down & lid on 1-2 minutes

per side.5. Bring apple juice to boil in saucepan on medium-

high.6. Stir in 2 T sugar until it dissolves.7. Add in blueberries and jalapenos.8. Reduce heat to medium and stir until thickened.9. Spoon sauce over finished filets.

Broiled Steelhead Troutwith Rosemary, Lemon, & Garlic

Ingredient List

1 lb. steelhead fillet, with or without skin

1 clove garlic, chopped fine

1½ T coarsely chopped fresh rosemary

1 lemon zest

1/2 lemon juice

1/4 t salt

1/2 t fresh ground pepper

1 T olive oil

1. Preheat broiler.2. Line baking sheet foil & brush with oil.3. Wash and dry filets.4. Excluding fish, mix all ingredients into a paste.5. Place fillets skin side down on baking sheet.6. Spread seasoning paste over fish.7. Broil on 2nd rack down until flesh is seared (about 5

min)8. Lower to 3rd rack and bake at 325 until cooked (10

min)9. Serve with steamed veggies or salad.
