Amongst many New Year’s resolutions, a revised health plan can be one of your greatest gifts to yourself. The idea of be-ginning a detox plan to kick off a new fresh start is a wonderful way of creating healthy lifestyle and diet habits to incorporate into our day-to-day living. There are many options on how to cleanse the body and many different “recipes” varying from a 3-day juice fast to month long programs. In general, here are general suggestions when making a commitment to your health and beginning a detox.
Set a goal. Pick a start date and determine approximately how long you will follow your regimen strictly. You may extend this as you begin to feel better and better, more renewed and more energized throughout the process!Completely eliminate sugars, processed foods, refined flours, caffeine and alcohol. Cut back on animal products including meat and dairy to 1-2 times per week. Opt for organic free-range versions free of hormones and antibiotics and for wild caught fish such as Alaskan Salmon instead! Increase fruits and vegetables. Focus on increasing vegeta-bles from the brassicae family (broccoli, cauliflower, brussel sprouts, cabbage, bok choy, kale, collards, etc.) since these are specific for liver detoxification. A high fiber diet is preven-tative for constipation, cardiovascular disease, diabetes and more!Increase whole grains and legumes- experiment with wheat alternatives such as quinoa, amaranth and millet. Increase water intake. Eliminate coffee, sodas and juices. Green tea is a wonderful substitute rich in antioxidants that has been found to aid in weight loss, glucose regulation and hormone regulation.Create a daily exercise routine. 30 minutes of cardiovascular exercise 5 times a week is a great goal. Try to break a sweat since our skin is our largest detoxification organ. By following these general guidelines you can ensure that your 5 channels of elimination remain open. Your kidneys via your urine (WATER), your Bowels (HIGH FIBER), your skin (SWEAT), your liver (Limiting toxins and increasing nutrients that aid in detoxification) and your Lungs (BREATH). Supportive therapies include massage, skin brushing, chiro-practic care, short fasts, colon hydrotherapy, castor oil packs over the liver, etc. You may incorporate juice fasting into your regimen as well. A combination of vegetables and fruits is ideal. A favorite recipe includes Celery, beet, apple, carrot, lemon, ginger and a dash of cayenne pepper. Get creative!

LOS TIERNOS GIGANTESBALLENAS JOROBADAS
Art work was made by Kurt Ziegler
Humpback Whales are the migratory giants of the sea. In Puerto Rico you can catch them on their route to the North Atlantic where the waters is much more comfortable dur-ing the summer months. These gentle giants can grow to more than fifty feet in length and weigh in at an incredible fifty tons. These magnificent, blue giants feed only on small fish, crustaceans and plankton; their magnificent ability to dive down to approximately seven hundred meters to feed is a unique ability. Another amazing attribute is that the male whales sing a unique song to each of their offspring; no song is alike! With merely fifteen thousand Humpback Whales in our oceans it is not very common to spot them, but when you do get to see one of these peaceful, magnificent giants it is truly a special moment. If you visit the northwest re-gion of the island, from the months of January though late March, you have a very good chance of seeing these amaz-ing ocean creatures; this is during their mating and birthing season. All you need to do is stop and relax on one of our

many beaches and wait for that tail to splash in the water at a distance or gaze at one of nature’s most majestic crea-tures jumping straight in the air nose first.
You can see the whales diving, dancing, singing, playing, and splashing in the Caribbean waters from the shoreline of any of the towns facing the Mona Passage including, Isabela, Aguadilla, Aguada, and Rincon. The Lighthouse in Rincon is famous for whale watching since it sticks out fur-thest to the west and faces the Mona Passage. If you want to get closer, you can charter a boat and if you want to get even closer and you are an experienced scuba diver, there are many scuba diving agencies that can take you swim-ming near these gentle giants of the sea.

One-Ten-ThaiOne-Ten-Thai Restaurante Review by Sau Seige
One-Ten-ThaiWinter time hours Wednesday- Sunday 5 p.m.-10 p.m. Regular hours Thursday – Sunday 5 p.m. -10 p.m. A restaurant is not just drinking and dining; it’s an experience built around people. Whether it’s giv-ing cooking classes or planning a local cleanup project, the couple who owns One-Ten-Thai is a great example of what people and com-munity should be and this shines through in their restaurant. It all started in a tiny kitchen in their home. Within a few weekends, it was obvious that they were onto something. After some serious searching, they found a spot on Road (Carr.) 110 and used their magic to turn it into an intimate, groovy, well thought out space. When I’m there, I can’t help the feeling of being in one of those New York restaurants that are al-ways being wonderfully critiqued in the food magazines.Using local, fresh, organic products is a current trend, and of course, these guys are on it. Organically grown greens, local fish, and even thai basil that they grow in a garden beside the restaurant,
are deliciously put to work in the usual thai suspects: curries, soups, noodles, dim sum, and in tantaliz-ing daily specials like: ginger pine-apple mahi-mahi and steamed snapper filet with green mango and red curry crust. The food is excel-lent and the wait staff rocks! (Ap-petizers $4-$6 & Entrees $7-$14)Beer drinkers on this side of the island have always lived without good tap beer but finally, thanks to One-Ten-Thai, those days have come to an end. Some of the micro-brewed craft beers on tap include a stout- Kofresi, a pil-sner- Santa Viejo and a pale ale - Old Harbor, all of which, I can say from experience are a delightful treat. We beer drinkers would like to thank you from the bottomof ourbeer bellies. Also available, are wines, thai tea, hot tea and of course sodas and bottled water. This is one of my favorite eateries and I’m certainly not alone. One-Ten-Thai is always packed, but that is not surprising when you put great people together with fantas-tic food and delicious drinks; you can’t help but have a great time!

With the release of her record “Recuerdos de Grana-da/Memoirs of Granada,” Puerto Rican pianist Brenda Hopkins Miranda has presented a master-piece which displays her luminous talent.
A native of San Juan, Ms. Hopkins is the consummate musician, having excelled as pianist, composer, arranger, improviser, band leader, writer and educator. She holds a Bachelor degree in Clas-sical Piano from the Conservatorio de Música de Puerto Rico, a Masters degree in Contemporary Improvisation from New Eng-land Conservatory in Boston, and completed Doctoral studies in Musicology from the Universidad de Granada in Spain. From 2003-2006 she was appointed Director of the Music Program of the Institute of Puerto Rican Culture.
Her two years studying in Granada culminated in her compos-ing and producing all the innovative music on “Recuerdos de Granada/Memoirs of Granada.” Upon her return, with excellent supporting musicians, the recording for the album was done in San Juan in June of 2009. Drawing from her experience as a pia-nist for a flamenco dance troupe, she offers a unique perspec-tive coupled with a vast knowledge of jazz improvisation, blend-ing well to offer the listener an imaginative cultural adventure.
There is a defined Spanish concept of the record from the open-ing song of “Miranda,” through “Flamenco Borincano,” to the softer ballads and jazz flavored numbers. She has a distinc-tive percussive approach in her repertoire which allows her to perform with authority. Her years on the Latin American music scene honed her skills in dealing with intricate rhythms and complex arrangements, and she employs them all with great tact and precision.
Ms. Hopkins is a dazzling pianist, showcasing her technical vir-tuosity in a variety of settings and tempos as the songs inter-connect perfectly. She takes us on a transcendental voyage to Granada, and it is quite a journey.

The recently established BORINQUEN FIELD / RAMEY AFB MUSEUM is located on the second floor of Hangar 403 (Cargo Terminal) at the east end of Hangar Road on the former Air Force Base. It is open to the public every Saturday from 9AM to 4PM. There is no fee.The museum is a repository and place of safekeeping for documents, photos, historical items and remembrances of Borinquen Field/Ramey AFB as it existed between 1939 and 1973.It serves also to promote the historical significance as well as to educate the public about the original role and function as a strategic air base during WWII and the important role it played during the height of the Cold War.The museum provides material for research and is an educa-tional center dealing with the history of the base and other projects related to aviation history.
The B-29 wreck of Aguadilla’s coast…
By 1938 both Boeing and Consolidated were de-veloping their versions of very heavy, long range bombers: the XB-29 and the XB-32. These mod-els were expected to fly over 5000 miles; these would be the first non-stop, inter-continental air-craft. The Boeing B-29 became known as the “Su-per fortress” and after 6 years of rushed devel-opment was finally introduced in May of 1944. It could carry 20,000 pounds of bombs almost 6000 miles. But it also had its problems. The most serious were the four engines which easily overheated causing oil leakages and fires. Se-vere maintenance procedures and many modifi-cations were ordered. Still, it was the best long range bomber in service with 3970 being built. One mile to the northwest of Punta Borinquén and 120 feet under the ocean lays the silent re-mains of a B-29 bomber that ditched there on 31 May 1945. Although there were never any B-29 bomber squadrons assigned to Puerto Rico, B-29 bomb-er crews did training missions from Borinquén Field over water for great distances. Not uncommon was a practice “bombing” mis-sion from Borinquen to Baltimore and back, the distance round trip from Tinian to Tokyo, which was the main purpose of these “Super fortress-es.” The B-29 that sank in Puerto Rico waters was home-based in Pratt, Kansas, one of several from the 461st Bomb Squadron. Shortly after takeoff on the evening of March 31 oil pressure dropped on engines one and two. Pilot Giacomo declared an emergency and Borinquén Field was immediately closed to all other airplanes. Heavy smoke appeared during the return to the field when engine three also failed.

Giacomo realized that with only one engine and losing altitude fast, the airplane could not rise enough to clear the coastline ridge to land. He called the control tower and declared an emer-gency water landing. He turned the aircraft into the wind and prepared his crew of 13 for a wheels-up ditching at sea. The last message sent was “287 ditching”. The “Super fortress” skimmed across the surface for about 400 feet before it ploughed into a wave. The fuselage broke off midway at the radar room and the tail section sank in less than a minute carrying off three crew members. The pilot managed to remove and inflate a five-man life raft which saved those injured in the ditching. Within minutes the wing section also sank. Army crashboats were quickly on the scene to rescue the ten survivors.
The remains of 42-65287 are visited by SCUBA divers with the skill to descend to 120 feet.

As you walk in to the peach colored room with stained glass windows you smell warm bread baking and hear children playing. The children are building playhouses and inviting each other into their silk-curtained homes, bringing baskets of wooden fruit and veg-etables to share. The teacher is attentively watching from a dis-tance, while she hums and knits a jump rope for them to use outside. It is time to clean up; the teacher stands and be-gins folding a cloth, still humming. A student walks over to help fold and the other students begin putting their toys to sleep in their baskets on the shelves. They all help set the table and sit down together for their organic vegetarian meal they have each helped make. They bless their food, thanking the Earth and the Sun. The children enjoy their nutri-tious meal and then take their plate to the kitchen to wash. They quickly hurry back to their classroom for story-time. The teacher hums and plays a tune on the harp for them, followed by a story-theater of plant-ing a carrot. A good-bye verse is sung all together and the children put on their shoes to play outside. They run out onto the green grounds covered in fruit trees, some jump-ing into the sandbox by the orange trees, others spinning on the tire swings under the mango tree. Igua-nas scatter and birds chirp and sing in the distance. This is the Escuela Micael. The Escuela Micael in Aguadilla provides an alternative bilingual
education for young children on the Northwest side of Puerto Rico. The school, based on the fastest growing educational move-ment in the world: Waldorf or Rudolf Steiner education, offers a creative
and balanced curriculum that integrates nature, the arts, and free play for pre-school children of 3 and 4 years old. Waldorf edu-cation provides an artistic and detailed curriculum, which responds to and enriches every phase of a child’s development. It
cultivates emotional and social intel-ligence, while connecting children with nature. Escuela Micael was founded by Dr. Gustavo Halley and Larisa Molinari. In September the school opened, making history as the first Waldorf based school on the island. Some highlights of the year have been the Candle Walk and the Advent Spi-ral where teachers, staff, parents and children participated together in an enlightening experience with candles, flowers, song, and story. Another special activity was the Ca-ribbean Winter Festival, a commu-nity-wide event to raising funds for Escuela Micael. There were demos offered for the children in the areas of art, music, children’s theater, dance, yoga and environmental awareness. There are hopes to have a Spring Festival and more community events in the semester to come. Registration is now open for the second semester and soon will be open for the next school year. Tours and private orientation are offered upon request and appointment.

Salud!

Attention all beer lovers, there is now dark beer on the island! You may have seen a growing variety of different types of beers in local bars and restau-rants. Among these is stout beer. Originally brewed in England, stouts emerged as variations of the clas-sic London Porter over 200 years ago. Irish brewers, especially Guinness, take credit for perfecting this style of beer over 150 years ago. Stouts are known for their dark color and bold flavors. They are now brewed all over the world (including Puerto Rico) in many different styles. The six official styles of stouts according to the Brew-ers Association are; Classic Irish-Style Dry Stout, Foreign (Export)-Style Stout, Sweet Stout, Oatmeal Stout, American-Style Stout, and American-Style Im-perial Stout. Some breweries also opt to invent even more specialty variations of these styles. The liberal use of roasted malts in the brewing process gives stouts the deep, dark tones as well as their particular flavor profiles. These flavors include espresso coffee, bittersweet chocolate and caramel among others.Stouts are very versatile beers depending on the dif-ferent style you’re drinking. A medium-body dry stout can be mixed with champagne for a starter cocktail. A smooth oatmeal stout pairs incredibly with a grilled steak. Finally, a bold imperial stout pairs well with a dark chocolate dessert. Below is a quick guide to some locally available stouts. Salud!
