Anytypeofmeatcanbeusedformakingsausage:pork,beef,bison,mooseandcaribou,evenantelopemakegreatsausage.Itisimportantwhenpreparingvenisonorotherredgamemeatstotrimallthefatfromthemeat,asredgametallowwillturnrancidinasfewasfivedays.Replacethefatwitheitherporkorbeeffat,dependingonthetypeofproductyouaremaking,ataratioof1pound(0.5kg)offatforevery4pounds(1.8kg)ofgamemeat.

NOTE: Periodically inspect the Auger Bearing forwear. If theAuger Bearing isworn excessively, replace it immediately orHeaddamagecouldresult.

4. PlacetheKnife ontothesquareportionoftheAuger Pin (Figure 2).Besurethebladesofthe Knife arefacingoutward.

5. PlaceoneoftheGrinder PlatesontotheAuger Pin; align the notch in the Grinder PlatewiththePinintheGrinder Head.

6. Install the Front Ring Nut, DO NOTOVERTIGHTEN. Turn the Front Ring Nut untilitmakescontactwiththe Grinder Plate,then make 1/4 turn more to tighten intoplace.

12.AlignthecurvedendsoftheTray Guard withthecurvedsidesoftheTray.TheholeontheTray GuardwilllineupwiththeholeintheTray.

13.ThetabsoftheTray GuardwillfitoverthesidesoftheTray.GentlypressdownontheTray Guard until it fully seatsonto thesidesoftheTray,curvingintotheTray(Figure 6).

14.TightentheAllen Screws withtheAllen WrenchtosecuretheTray GuardontotheTray. DO NOT OVERTIGHTEN the Allen Screws.

6. MakesuretheGrinderisinthe“OFF”position.Attachthe Grindertothepowersupply.

WARNING! Before cleaning, assembling or disassembling the Grinder, make sure the PLUG IS REMOVED FROM THE OUTLET/POWER SOURCE! ALWAYS unplug the Grinder when not in use.

ALWAYS use the Stomper to push meatinto the Grinder Head.

HIGH-SPEED STUFFERASSEMBLY INSTRUCTIONS

NOTE: The High-Speed Stuffing System isdesigned forusewith the10 mm Funnel ONLY. DO NOT attempt to use the High- Speed Plastic AugerwithanyotherFunnels.SERIOUS DAMAGE to the Grinder Head and other components may occur. Followthe “Standard Stuffer Assembly Instructions”locatedinthismanual,whenusingthe20,30,or40 mm Funnels.

1. Insert the Head into the Gear HousingwiththefeedchuteoftheHead facingstraightup. You will need to line up the slot in theHeadwiththePininsidetheGear Housing.BesuretheHeadisseatedfullyintotheGear Housing(Figure 14).

2. TightentheHead Locking Knob tolocktheHeadintoplace.

3. InserttheAuger, withthe Auger Bearing attached, intotheHead (Figure 15).AligntheAuger Splines with theDrive Shaftof theGrinder.

NOTE: Periodically inspect the Auger Bearing for wear. If theAuger Bearingiswornexcessively,replace it immediately or Headdamagecouldresult.

4. Slide the High Speed Plastic Auger onto the Auger Pin makingsure the square part of the Plastic Auger fully seats on to the squareportionoftheAuger Pin.

5. Slidethe10 mm Stuffing FunnelthroughthethroughtheFlangeandplaceitthroughtheFront Ring Nut.

6. Install the Front Ring Nut,DO NOT OVERTIGHTEN. Turnthe Front Ring Nut until it makescontactwiththe Flange,thenmake1/4turnmoretotightenintoplace....INSTRUCTIONS CONTINUEDON NEXT PAGE

7. WiththeTrayinonehand,rotatetheSafety FlapoutofthewaytofullyexposetheHead Opening(Figure 10).

8. PlacetheNeckofthe TrayintotheHead OpeningmakingsurethattheholesintheTray Support Bracket lineupwiththeholesinthePlastic Tray Stand Off (Figure 10).

9. InsertaThumb ScrewthrougheachoftheholesintheTray Support BracketandthenintothethreadedholesintheTray Stand Off (Figure 11).

NOTE: ItmaybenecessarytoadjusttheTray Stand OfftoachieveproperalignmentoftheTraytotheTray Stand Off.

10. InserttheremainingThumb ScrewthroughtheFront Tray TabandintothethreadedholeontheSafety Flap.

11.Loosen the Allen Screws in the Tray GuarduntilthescrewendsareflushwiththeTray Guard (Figure 12).

12.AlignthecurvedendsoftheTray Guard withthecurvedsidesoftheTray.TheholeontheTray GuardwilllineupwiththeholeintheTray.

13.ThetabsoftheTray GuardwillfitoverthesidesoftheTray.GentlypressdownontheTray GuarduntilitfullyseatsontothesidesoftheTray,curvingintotheTray(Figure 13).

14.TightentheAllen Screws withtheAllen Wrench to secure the Tray Guard onto theTray. DO NOT OVERTIGHTEN the Allen Screws.

12.NEVERoperateGrinderwithoutthe Tray andtheTray Guard securedinplace.
