Roasted Baby Beet Salad

Recipe and Design

Preparation:1. Preheat oven to 400°. Trim beet tops to 1/2 inch; gently wash beets. Place beets in a single layer in a shallow baking pan; drizzle with oil, tossing gently to coat. Cover pan tightly with aluminum foil.

2. Bake at 400° for 40 minutes or until tender. Transfer to a wire rack, and let cool 30 minutes.

3.Peel beets, and cut in half. Gently toss beets with 1/3 cup Brown Sugar Vinaigrette. Arrange lettuces on a serving platter. Top with beet mixture, Gorgonzola cheese, and pecans; serve with remaining Brown Sugar Vinaigrette.

For Vinaigrette: Whisk together white balsamic vinegar, minced shallot, light brown sugar, freshly ground pepper, vanilla, and salt in a small bowl. Add olive oil in a slow, steady stream, whisking constantly until smooth.

Instructions:

1. Collect a variety of colorful buttons. Choose different sizes and styles for a more whimsical look.

2. Hot-glue the buttons to the shade. You can go with a scattered look or create a sophisticated touch by placing buttons in even rows around the shade.

3. For an elegant look, try pearl or metallic buttons with a vintage feel.

Creamy Tomato-Balsamic Soup

Instructions

1. Preheat oven to 500°.2. Combine ½ cup of broth, sugar, vinegar, and soy sauce in a

small bowl. Place onion, garlic, and tomatoes in a 13 x 9-inch baking pan. Pour broth mixture over tomato mixture. Bake at 500° for 50 minutes or until vegetables are lightly browned.

3. Place tomato mixture in a blender. Add remaining ½ cup broth and half-and-half, and process until smooth. Garnish with cracked black pepper, if desired. Server with crusty bread.

Notes: Strain through a fine sieve for a silkier soup. Make a double batch if you are feeling really hungry (serving size is small).

SteviaStevia (STEE-vee-uh) is an outstanding, sweet tasting herb that has remarkable health promoting qualities. The sweetness of Stevia is largely due to its complex stevioside molecule that is composed of glucose, sophorose and steviol. A second compound called rebaudioside, which is present in Stevia, also contributes to Stevia's sweetness. Stevia has a taste that is unique and has been described as very sweet with a slight licorice, almost bitter aftertaste. Generally, high quality Stevia contains very little of this bitterness. The sweetness of Stevia is much different than the sweetness of other natural sweeteners, sugar, or artificial sweeteners, but it is delicious. For some people the taste may require some "getting used to," but most people quickly develop a taste for it.

Stevia is a South American shrub whose leaves have been used for centuries by native peoples in Paraguay and Brazil to sweeten their yerba mate and other stimulant beverages. The stevia plant belongs to the Compositae (sunflower family of plants). Centuries ago, Natives of Paraguay used the leaves of this small, herbaceous, semi-bushy, perennial shrub to sweeten their bitter drinks. Originating in the South American wild, it could be found growing in semi-arid habitat ranging from grassland to scrub forest to mountain terrain. The plant made its way to Pacific Rim countries where in recent decades it became cultivated domestically, used in its raw leaf form and now is commercially processed into sweetener. If you've ever tasted stevia, you know it's extremely sweet. In fact, this remarkable noncaloric herb, native to Paraguay, has been used as a sweetener and flavor enhancer for centuries. Stevia is a natural, non-caloric, sweet-tasting plant used around the world for its pleasant taste, as well as for its increasingly researched potential for inhibiting fat absorption and lowering blood pressure.

Stevia is about 300 times sweeter than sugar in its natural state, and much more so when processed. Its medicinal uses include regulating blood sugar, preventing hypertension, treatment of skin disorders, and prevention of tooth decay. Other studies show that it is a natural antibacterial and antiviral agent as well. Stevia is actually good for you! On top of that, it is calorie and carbohydrate free. For anyone who isn't savvy in the ways of wiring, re-wiring, plumbing, and painting, sometimes it pays to invest in the services of someone who knows what they're doing. But sometimes people are a bit hesitant to trust their home renovation plans to a contractor. This can be because they've heard horror stories of unfinished kitchens and swindled friends, or it can be related to the fact that actually financing a major overhaul in any room of the house can take a sizable chunk out of a budget in no time at all.

Just like choosing anyone for any other important service, there are right ways and wrong ways to go about picking a contractor. And knowing what to say and what to look for can help you make the right choice the first time around, as well as know that you are on schedule and accomplishing what you need to. Whether you're deciding on something more utilitarian, like replacing your home's windows, or have your sights on an entirely new kitchen, here are five important steps in choosing the right contractor for your particular project.

#1 - Check references. This might sound like a no-brainer, but sometimes people choose contractors out of the phone book, or Google them and see only stellar reviews. Not bothering to look any further can put you at a major disadvantage, especially since review sites online are easy to manipulate or to flood with good or bad reviews. Take the effort to check references, and rest assured that you have the right kind of professional working in your home.

#2 - Figure out what's the most important part for you. If you have something that you absolutely must have in your kitchen, and are willing to wait longer for it, know that this is your priority. If you have a big wedding or special occasion coming up and simply need everything done before guests arrive, keep this in mind. So figure out if the same contractor might be a good fit for you, and go ahead and get a name and a phone number so you can follow up.

#4 - Know your own budget and needs. If you're serious about that new kitchen or an exciting renovated master bedroom, then you need to know what you want and what you don't want. Know what budget you are working with, and figure out which are things you can live without, and what the cornerstone of your new room is. Being able to accurately explain this to a contractor is a major help for you and for him or her.

#5 - Get a second opinion. If you think that the first person to grace your home is the perfect fit, that's fantastic--but give someone else a chance to pitch their ideas and their estimate to you, too. Sometimes people get swept up in the excitement of re-doing their home, and make major mistakes in terms of choosing based on the first person to walk through the door. If the first contractor to pitch to you was in fact the best, then they will still be there for you to approve in 48 hours.

8 Ways To Spruce Up Your Home For Less

Spring is finally here and after a harsh winter season, many people are excited about shedding a few layers of clothing or a few extra pounds. Cleaning out a closet or a room full of clutter works for some,

while others may just want to redecorate their entire home.

It sounds like they may have a touch of "Spring Fever", that little friendly bug that attacks their senses and gives them the urge to splurge! Much love and admiration goes out to the people that are able to hire interior decorators that can come into their home and work their magic. But for those of you who just want to make a few changes and keep more money in your pockets, here are 8 simple do-it-yourself tips that can help beautify your home and give you the opportunity and pleasure to redecorate for less.

1. Add a splash of color. If you do not want to paint the whole room, just paint one wall. Paint the best wall in the room, the one with the window or the larger size wall with the best angles. Use that fabulous color you always wanted and make that your accent wall. If you already have a nice color in the room and you want to bring out its' best, purchase decorative stencils that come in many different shapes and sizes and paint the stencil design onto the walls to add more zest. To highlight that stenciled area, apply a coat of polyurethane to each desired section for a nice bold effect.

2. Rearrange your furniture. The way to create a new look without buying new furniture is to rearrange the furniture you already have. For example, in your living room or family room; change the direction of your chairs. If you have a sectional, separate it, if you dare! If the room has three or more tables, remove one or two. Do not be afraid of the space. Less will do. If the room does not have tables, place one in the middle or off to the side

and place a few decorative throw pillows underneath. Nice right?

3. Window Dressings work wonders. Either short, medium or long, window dressings not only accent your windows, they also enhance the look of a room. There are so many different styles, colors and patterns to choose from. If you want to step out of your comfort zone with the basic panel, scarfs and swags, try beads. Go retro. Hang a panel of wooden beads which come in various shades. Try Strings. Hang a panel of curtains made of fine string material to add a touch of sheer elegance to your windows.

4. Go Green. Houseplants not only make your home gorgeous all year round, they also help you and your family breathe better. For those of you who do not have a green thumb, there is nothing wrong with an artificial plant to decorate a room, your room is sure to look lovely either way.

5. Pretty as a Picture. They can make a dull wall come to life. Bring your favorite from one room and place it in another room of your home. If you have any color family photos that you adore, change them to black and white and hang them up again and see what it does to the room and your soul. Now, you may not want to take a picture from your kitchen and put it in your bedroom, use your best judgment when it comes to switching your pictures and photos throughout your home.

6. Dress up your floors. Carpeting and various types of flooring can sometimes get boring. Why not lay down an area rug full of color and pizazz? Just a little something to make the room pop! There are so many sizes, styles and colors to choose from. Area rugs are a good way to eliminate wear and tear and preserve the quality of your floors.

7. Bits and Pieces. Conversational that is. There is nothing better than to have a great piece of artwork, pottery or a good book on a table in your room that can strike up a conversation about its' origin and meaning while adding a sense of style. Lighting fixtures and scented candles can also add a nice touch and scent to a room. As always, candles should be kept out of the reach of children and should be under a watchful eye.

8. Boost your Bedding. It does not matter if you sleep on a fold-out sofa bed or any size mattress, whatever the type, make it your platform for comfort. To change the look or feel of your mattress and bedroom, purchase a mattress pad or foam mattress enhancer. Maybe even a bright or pastel colored comfort set; one that flatters your decor and enhances your ability to cuddle up with a good book or your love ones, all the while guarantee a good nights' sleep. There are so many different ways to make your home more beautiful, inviting, relaxing and exciting. Be creative and express yourself. Always make it the place where you would want to be, any time of day. After all, it is your Home-Sweet-Home.
