WINE

and THE WEDDINGWeddings tend to exponentially magnify experiences of the senses. Emotions run high, and beauty is all around, sounds are harmonious, and the perfect wine with the perfect food is the “icing on the cake.” The first thing that comes to mind is the champagne toast. For this situation, an extra dry Prosecco would fit the bill.

They tend to have a touch, almost unnoticeable, of sugar. This is perfect because it allows them to be enjoyed by most without being accompanied of food. Mionetto ($12-$15) and Tosca ($9-$13) are reasonably priced producers with above average quality. If its your plan to spare no expense and go all out, I would recommend

Piper-Heidsieck Extra Dry ($30-$45). Allow the sparkling wine to pair with the appetizer. Sparkling wine may surprise you with its versatility. Keep in mind that experimenting with food and wine pairings is often an exciting part of the wedding process and provides interesting experience.

Page 21: 75ive Issue 2 June 2012

Stone FishIf you pair the main course with lobster or crab, I would consider continuous usage of the sparkling wine. If not; I would pair the lobster with Columbia Crest H3 Chardonnay ($11 – $15) from the Horse Heaven Hills appellation in Washington State. The subtle tropical fruit and buttery caramel combination exploits the lobster and drawn butter combination. If you plan to be adventurous, I would go with Simmern Riesling QBA ($13 - $17) from the Rheingau in Germany. If you chose a red wine to accompany the lobster try a George Duboeuf Beaujolais ($8 - $10). The wine is soft enough to not over-power the lobster, yet has enough acid to refresh palate for another bite.

Filet MignonFilet mignon is one of the easiest to pair. Almost all cabernet sauvignon and merlot will go well with the meat. I would chose villa mt. Eden napa valley cabernet sauvignon ($13 - $15), since the tannins are soft, the body is full, and the oak adds a bit of spice to the wine which would reflect off the fresh ground pepper seasoning of the filet.

Chicken Pairing chicken may seem like the easiest pairing to make; however, it may sometimes be the most difficult as your pair-ing generally comes down to the sauce. If the sauce is white, I would go with Tres Palacios Sauvignon Blanc ($8 - $11) or Chateau de Maligny Chablis ($13 – $16). Both have higher acid structure to match the high acid of citrus based sauces or cut through cream based sauces. If the sauce was red or brown, I would use an American Riesling for white, as the sugar levels tend to be lower than German, and Steel Creek Pinot Noir ($12 - $15) or Layer Cake Primitivo ($13 - $18). The Pinot Noir being the lighter of the two.

SalmonSalmon may be easy or difficult to pair, depending on how you look at it, because of its limited options. I would pair Salmon with either a wine from Chablis or Sancerre. Both wines have body and earthiness to stand up to the full flavor of Salmon. These wines range from $13 - $45.

Italian Italian themed weddings could be the most fun. It seems that most Italian wine works well with most Italian food. Some of your basic Italian wines would be Chianti Classico, Barberra, Valpolicella, and Pinot Grigio. They are priced from $7 to $27. Let us not forget that our Prosecco is from Italy as well!

The Cake Oh yeah, the wedding cake. The rule of thumb is to make sure that the wine is sweeter than the dessert, or the wine will have a metallic taste. Most Auslese quality level Rieslings from Germany will fit the bill. They range from $11 - $150.Please keep in mind that what works for me, may not work for you. Have fun!

The modeling game and the dating game have something in common. You have to have a strategy of how you’re going to win. Where they differ is that in your career, you have to do things that earn respect. In your love life, however, you have

to do things that inspire adoration. There are always signs that show you what a man thinks of you. And even the “right” man is going to test you by pushing your but-tons from time to time. He wants to see what you’re made of…… and

how much crap you take. Here are 3 types of crap that you absolutely DO NOT let slide if you want to be adored by him. How you respond will show him two things: 1. How much you value yourself and 2. How he can treat you.

CONT.

1. Does he call you late at night? (i.e. 1 am or after you would normally be asleep)Then you’re a booty call and taking crap…… Don’t answer the phone after your normal bed-time. Don’t reward bad behavior. Show him that he has to call you early to reach you. Let him think about where you might be. Mystery is good!

2. Does he show up more than 20 minutes late for your date without calling? Then you’re taking crap……….. Wait for 20 minutes and then make other plans. Even if you just stay home, don’t go out with him. You’ll be rewarding bad behavior. Tell him that when you didn’t hear from him you made other plans. He may get mad, however, don’t fall for it. Be gra-cious and with a smile tell him to have a good night. He will either step off completely (which is good) or gain newfound adoration and give you a call next time (even better).

3. Does he stand you up?Then you’re taking crap that is an absolute deal-breaker (unless he died in which case it won’t matter)……….. Don’t answer his call anymore. And don’t call him back after he leaves you that long message about his dog getting run over. If you do you’re rewarding bad behavior. If he doesn’t have the courtesy to let you know he’s not coming then don’t give him the courtesy of your time. Save it for someone who appreciates it.

So take a look at your life. Are you being adored by the men you date? Are photographers ect.respecting you while on set? If not remember, it is often said that we attract to our lives what we want. Modeling may be about how much crap you can take, but love is about how much crap you will take. If you truly want to win, play smart and make sure that you takes no crap!!!!!!

I recently had the opportunity to experience a visit to El Titan de Bronze, which has been family owned and operated in Little Havana since 1995.The first thing you will remember if you ever visit the location is

the friendly greeting by the staff.

Anyone who enjoys a cigar deserves to smoke a great blend, and if you choose at an affordable price. This is what the many and ever growing loyal customers have come to enjoy from El Titan de Bronze. All of the cigars are hand crafted in the USA by “Level 9” rollers who actually work right up front as you enter the front door.

Each highly skilled roller makes about 100 to 125 cigars everyday, in the traditional Cuban style which is then finished off with a beautiful triple cap. Each is then inspected by a Master Roller/Blender, boxed and dated to ensure the cigar is of the highest standard. If you like a bit of personal touch, you can have a bundle of your favorite cigar type crafted by a specific roller.

I am pleased to say I am now one of those loyal customers who could order but chooses to go for a visit first hand. Don’t take my word for it order and taste the magic in each of these quality cigars for yourself and you will find they deliver a taste and quality rarely found outside of Cuba.
