It’s been an exciting summer filled with trips, concerts, and�new experiences! Recently, we went to Philly to check out the�Mets vs. Phillies and take a Duck Tour of the city. The Hot�Topics Group went to the Beacon Theater to see American Idol�

Live. Just about everyone went to see at least one concert at�Bethel Woods. Some of the more recent ones were Lynyrd�Skynyrd, Chicago with Earth Wind and Fire, and Van Halen!�

Dear Reader,�It has been my pleasure to have been the editor of Progressive Times since�its inception in 2007. It is a unique position which has challenged me�to try to encapsulate everything that we strive to accomplish here at�Progressive Health in a few short pages each month. It is with some�sadness I must inform you that I have decided to move on from PHPI and�take on a new vocational challenge. Being the editor of the newsletter�is just one of the many things I will miss from�here when I move on. This is an amazing program�with an awesome group of clients and staff�members all working together so our clients can�enjoy the best that life can offer. I hope we�were able to show you a little bit of what we’re�all about through the pages of Progressive Times�each month. As I depart, I am leaving the�newsletter in good hands. Nicole L. is one of�the hardest working people I know and she will�undoubtedly continue to give you a window into�our program and our people here at Progressive�Health for years to come.�

Preheat oven to 475°F. TossĐplum tomatoes, zucchini, squash,Đpeppers, mushrooms, salt, and oilĐin a bowl. Throw them on the grillĐand cook until soft, about 10Đminutes (or roast for 30 mins).ĐIn a bowl, mix egg white, ricotta,Đ

pesto, and Parmesan. Coat a 9" x 12"Đbaking pan with cooking spray. Spread 1Đcan tomatoes on the bottom. Top withĐ3 noodles. Spoon 1 1/4 cups ricotta mixĐover noodles, then a layer of 3 cupsĐvegetables, then 1/2 cup mozzarella.ĐRepeat this layer, starting withĐtomatoes. Add final can tomatoes,Đthree noodles, remaining ricotta mix andĐvegetables. Top lasagna with last 3Đnoodles and 1 cup mozzarella. CoverĐwith foil. Bake 30 minutes.Đ

Summer Grillin’Đ

1 lb plum tomatoesĐ1 lb zucchiniĐ1 lb yellow squashĐ2 red bell peppersĐ2 green bell peppersĐ1/2 lb mushroomĐcapsĐ1 tsp saltĐ1 Tbsp olive oilĐVegetable-oil cooking sprayĐ1 egg white, lightly beatenĐ2 containers (15 oz each) "lite" ricottaĐ2 Tbsp bottled pesto sauceĐ1/3 cup grated ParmesanĐ3 cans (14 1/2 oz each) diced tomatoesĐwith garlic and onionĐ12 oven-ready lasagna noodles (1 package)Đ2 cups shredded lowfat mozzarellaĐ

6 Hawaiian sweetĐdinner rollsĐ6 tablespoons peanutĐbutterĐ6 tablespoons semisweetĐchocolate piecesĐ2 tablespoons packedĐbrown sugarĐ2 medium bananasĐ1 tablespoon butter, meltedĐPinch saltĐ½ cup marshmallow cremeĐ

1. Split rolls in half. Spread the cut sidesĐof each roll with 1 tablespoon of theĐpeanut butter and sprinkle with 1Đtablespoon of the chocolate pieces. CloseĐeach roll and wrap in foil. (Use grilledĐpound cake if you’re adventurous!)Đ2. Peel bananas; cut each bananaĐ

crosswise into thirds. Coat banana pieces with butterĐand roll in brown sugar. Insert one skewer* into eachĐbanana piece. Lightly sprinkle with salt.Đ3. Place wrapped rolls on grill directly over medium-Đlow heat. Grill about 3 minutes or until warmed, turningĐonce halfway through grilling. Place skewers withĐbanana pieces on grill rack. Cover and grill about 3Đminutes or until heated through, turning once or twice.ĐTo assemble, carefully unwrap rolls and insert slices ofĐgrilled banana into each roll, removing skewer. IfĐdesired, top banana pieces with marshmallow creme.Đ
