The unique format of Old St. Andrews bottles means that most operations are
carried out by hand:
Old St. Andrews designs its products from its UK headquarters in Kent, in
conjunction with the world’s leading whisky blenders in Scotland and gin distillers
from our country’s heartland. We bottle, assemble and pack from our own bonded
warehouse which is also a licensed premises under UK law and have ready access
to an overflow bonded store nearby.
Our excellent production and assembly team maintains high product quality and
compliance with order requirements whilst ensuring that delivery times are kept
under tight control. Pro-active management ensure rapid response to customer
orders and a flexible approach enables us to easily handle special labelling and the
needs of the gift pack industry.

About Scotch Whisky
Scotch Whisky manufacture, what goes into it, where it is made and how are all strictly mandated by National and International law. These laws are
influenced by and policed by the Scotch Whisky Association, which we are members of.
Scotch whisky can be made from any grain which is first fermented to produce an alcoholic liquor which is then distilled to produce the spirit. This clear
spirit is then matured in barrels and it is the barrel ageing that gives ‘Scotch’ its characteristic flavour.
The amount of time the spirit remains in the barrel is important because that determines how much of the ‘barrel flavour’ the spirit absorbs, which is
why you will see an age statement on many Scotch Whiskies such as our 10yo, 12yo or 15yo for example. This refers to the amount of time the spirit
was in the barrel. Unlike wines, vintage year of production and bottle age are unimportant. Scotch Whisky can not be sold as such unless it has been
matured in barrel for at least three years.
Malt Scotch Whiskies are slightly different in that the only grain used is barley, and this barley is malted (allowed to sprout), which converts the grain
starch into the sugar required for the fermentation process. The Scottish climate particularly suits the growing of barley, which imparts a characteristic
flavour to the liquor which is why Malt Scotch Whiskies are appreciated by so many. Another flavour influence comes from the way the grain is dried: if
peat fires are used this imparts a smoky flavour.
Each distillery has different water, climatic conditions, distillation equipment and subtle variations in process that characterises its whiskies. One of the
most important of all of these is the barrel ageing, where the barrels came from, what they were used for and how long the spirit is allowed to mature.
The contents of the different barrels are then mixed in proportions by the blender to produce the ‘house blends’ for that distillery. If an age is given to
the blend (which can be made up from any number of barrels then that age must be the age of the youngest whisky in the mix. These would be called
Single Malt Scotch Whiskies because they are the product of only one distillery and the flavours can be very distinctive. By law Single Malt Scotch
Whiskies must be produced and bottled in Scotland (bottling outside Scotland is not allowed to ensure their provenance).
Blended Malt Scotch Whiskies are simply blends of Single Malt Scotch Whiskies from different distilleries. The blend is assembled by the master
blender who is aiming to achieve a particular balance of flavours and on-going consistency or ‘house style’. The blend can be made up of the output
from any number of distilleries. Our Blended Malt Scotch Whiskies are each very different and carefully balanced with between 12 to 18 single malts to
give the widest appeal to those interested in well aged whiskies. The blender will vary the mix to ensure consistency between batches and this is why it
can be difficult to answer the question ‘Where does it come from’. The other reason we don’t declare the mix is to protect our style, for the same reason
that Coca Cola and Johnny Walker don’t reveal their recipes. Blended Malt Scotch Whiskies can be bottled outside Scotland.
Blended Scotch Whisky (without the ‘malt’ word) follows the same production and ageing rules as Blended Malt Scotch Whisky except that other
grains are used in production, although it can have malt in it. For example our Clubhouse is a blended Scotch Whisky mostly Speyside and Islay. We
don’t declare the age because it is not a significant feature: it has by law to be at least three years old but has some much older whiskies in it (although
we can’t advertise that) and it also has about 20% malt in its make up (we can’t advertise that either). But it is this blend of ingredients which give it its
defining characteristics.
