ADOBO The blackness of soy sauce reminds me of the darkness Of life’s abyss, miseries, and gloom Its thickness and raw taste that deprives any sweetness Disappointing any hope for a flower to bloom Life may get sour a few times or more As sour as the vinegar opaquely white Prolonging shelf life aside from enriching flavor Reminding that life beneath the grey is white Ginger and black pepper adds a bit more spice To bring satiety to the meticulous palate Reminiscent of life’s journeys both bad and nice That slam and strike like a mallet Moments come when happiness is scant And a bit of something can cause a big rant Don’t belittle a pinch of salt dusted in a viand Its sheer size can truly be defiant Life is not sweet all the time But generally most often, if not once in a while 1

Life may get sour a few times or moreAs sour as the vinegar opaquely whiteProlonging shelf life aside from enriching flavorReminding that life beneath the grey is white

Ginger and black pepper adds a bit more spice To bring satiety to the meticulous palateReminiscent of lifes journeys both bad and niceThat slam and strike like a mallet

Moments come when happiness is scantAnd a bit of something can cause a big rantDont belittle a pinch of salt dusted in a viandIts sheer size can truly be defiant

Life is not sweet all the timeBut generally most often, if not once in a whileJust as what sugar in adobo sublimesThat soothes and calms the bileWater brings balance to the myriad of flavorsTo harmonize the sweet, the salty and the sourSo everyone can truly enjoy and savorA good adobo meal to dine and to devour

Whats good in adobo is its versatility and diversityBe it pork, or string beans, or chicken, or frog or catfish for more varietyA reminder that lifes a mix of bits of everythingWithout which this earthly journey become so boring

SISIGIn this times of difficult lifeTrials here and grief aboundThe poor will do everythingJust to turn their life around

Their life they dont treat like it mattersSighing whatever they do becomes of naughtBarely leanrt counting and grammar falterIn tongue-tied scenes theyre often caught

But must we give a damn to their barren soulsThere well find some hope and offer them consoleThe ones we thought were trash and scavengeCan give the rich and educated a real challenge Just like the viand sisig which many far ever knewWhat pig snout, ears and cheeks can ever doA virtual food from swines least edible partNow phenomenal here and afar

Give the filthy poor a chance to show their waresAnd the world will begin to show how much there is to care Just as when once ignored pig parts are grilled, boiled and sautedWith the right twists and turns, a good life can be portrayedPut a dash of shallots and a gracious shower of limeAnd sisig will give a tasteful experience of a lifetimeLifes bittersweet runs give life its purpose and full meaningLike when the thought of pigs head parts for food, can sound at first disgusting

Filthy food initially this humble sisig may seemBut now, folks the world over craving for it teem I hope the poor realize and from sisig they get inspiredThat their life is blissful, if only they will desire

Dala naman nitong pamintat luyaAnghang at init, sidhing nagbabagaPahiwatig sa buhay sa diwa at kutobSa salimuot nitoy tibayan ang loob

Minsan ang buhay sa saya ay salatGaya ng asing dala ay alatGakurot man lang nitoy nagbibigay ng lasa Kung walang asin, ang buhay walang gana

Hindi lahat ng oras ay laging biro ng tadhanaMadalas naman sa hindiy masaya sa tuwi-tuwinaPaalala ng asukal sa adobong nilutoNagbibigay-sarap sa lahat ng yugto

Dulot naman nitong matabang na tubigSabaw na pang-balanse sa alat, asim at tamisPinapantay ang timpla ng lungkot at ligayaKahit sabaw pa lang ay tila ulam na

Kaigihan ng adoboy kahit anoy maaariBaboy, manok, sitaw, o palakang di mawariTila pahiwatig na ang buhay samut sariHalo-halong lasang paghahanday di dali-dali

SISIGSa panahong itong maraming hinagpisPasakit at hirap, mga taoy tumatangisPara lang mabuhay mga dukhat mga yagitGagawin ang lahat, kahit buhay ang kapalit

Sa kanilay tila buhay ay walang halagaHindi na uunlad, magsikap man daw silaWalang pinag-aralan, hindi nakapagtaposPinandidirihan, at laging binubusabos

Subalit kung pagninilayan at ating tutuusin, Silay may halaga, dugyot man sa paninginAng akala nating mga nilalang na basura ng lipunanMay angkin ding talino at ganda ng kalooban

Gaya ng sisig na di mo akalaingPunung-puno pala ng sarap na walang kahambingKahit gawa lang sa tenga, pisngi at nguso Mangingibabaw pa, itapat man sa lomot liempo

Bigyan lang ng pagkakataon ang mga taong dukhaIpamalas kanilang galing na bigay ng LumikhaPatapon man silang ituring gaya ng sahog ng sisigSa tamang ihaw, lagat gisa, lasay walang tulak-kabig

Lagyan pa ng sibuyas at kalamansing maasimUpang malasap sarap na di mo akalainParang buhay-dukhang puno ng hirap at pasakitMayaman sa karanasang kulay sa bawat saglit

Animoy pinilit lang gawing ulam sa unang tinginNgayon, buong mundoy nais tumikimInspirasyon ng sisig, sana silay mamulatMayroong gandat giliw sa buhay na salat
