When you talk to Gary Hirsch about thesecret to his 20-plus years of suc-

cess, he’ll tell you it boils down to onething: quality.

“The whole thing I based mybusiness model on was providing aquality product. When it comes tomeat there is no such thing as a gooddeal. You get exactly what you pay for,”Hirsch said.

Hirsch began his career in the meat businesswhen his friend and neighbor in Michigan de-cided to buy a family-owned grocery store and

hired Hirsch as the butcher.After a number of stints working

in the meat departments of fam-ily-owned grocery stores, Hirsch

decided during a visit to Texas thathe would make the Lone Star Statehis new home.

“My folks were already downhere … In the fall, we packedup and came here,” Hirsch said.Upon arrival, Hirsch decided to

explore the Texas meat market andlearn what types of products inter-ested customers before startinghis own business. He beganworking for the “Original TomThumb” where he met his men-tor, not-to-mention HeatherLocklear’s uncle, Austin Lock-lear.

“He was the most amazingmeat man that I had ever met and

I became his assistant, “ Hirsch said.Hirsch worked for Tom Thumb for 13

years and then decided to branch out on his ownand opened Hirsch’s Specialty Meats. He hasbeen running a successful business ever since.He attributes his continued staying power andmultiple Readers’ Choice awards to customer

focus and a willingness to keep up with changesin the industry.

“I had a lady call me and mention that shehad bought ground beef and mentioned that weshould transition from freezer paper to plasticbags so they wouldn’t leak. I went to my guysand asked them why we weren’t doing this. From

then on, we started putting ground beef in plasticbags.”

Hirsch’s Specialty Meats is located at 1301Parker Road, Ste. 100, in Plano. They offer awide variety of top-grade meats such as prime-grade rib roast in addition to sausage made in-house and Logan Farms Honey Glazed hams.
