2 large eggplants10 cherry tomatoes (different colors best), halved1 yellow pepper, diced1 green pepper, diced1 yellow onion, sliced1 garlic clove, minced Kalamata olives, halvedParmesan Cheese, grated6 – 8 Tbsp Olive OilKosher SaltBlack PepperItalian Basil

Cut the eggplants into cubes and place in a colander, sprinkle with kosher salt and let drain.

Add olive oil to pan over medium heat. Cook onions until clear (about 2 minutes). Add garlic and cook another 2 minutes. Add all peppers and tomatoes and let cook until soft, stirring occasionally. Add eggplant, olive oil, salt, and pepper to taste*. Cook, stirring occasionally until eggplants are soft (about 15 – 20 minutes). Add Kalamata olives.

Top with roughly torn basil and top with grated Parmesan.

*Note: The addition of Kalamata olives and Parmesan cheese will add a lot of salt to your dish. Remember this when salting to taste.

First meet up with Andrea, then go to the grocery and purchase all necessary items to make one of the many fantastic meals from this book. Hopefully, there will be some interesting characters to marvel at/bag on. Also, if you’re lucky, she’ll even let you pay. After all the ingredients have been acquired, help Andrea prepare and cook everything, remembering always to follow her lead because she’s way better at this than you are. While she’s throwing down in the kitchen you should probably set the table and pour her a glass of wine you ingrate. I mean really. In between your helping and wine pouring duties, take and instagram as many pictures as possible to make sure everyone is jealous. After all the food is prepared, sit down with her and nom the hell out of it (Mmm). Quietly reflect on how amazing it
