Wine is a crossroads of nature, history, geography, and culture.
Inside these pages you will find many bottles that will directly interface you with some of the most talented and thoughtful winemakers of our time. All from the comfort of your table, this drink will take you to the beautiful ‘slopes of gold’ in Burgundy, the steepest mountain sides along the Rhine River, the carefully farmed vineyards out in the Blue Ridge Mountains, the
yellow and purple fields in Napa, and anywhere else the grapevine dares to grow. Our wine list spans the globe, but you will notice that we pay heavy homage to the benchmark
wines of France and to the special producers in our own backyard of Virginia.
To me, wine is a simple thing—a beverage to enjoy with your meal. But it is also something that is subtly profound. When we drink wine, it might just rival Chef Brian’s cuisine as the best
way to experience the bounty of the Earth.

When chardonnay is planted in sunlight on this kind of unique limestone, a lustrous terroir manifests in the glass.

Jura Blanc Located east of Burgundy, winegrowers in Jura produce some of the most mysterious wines in all of France.
Think rustic farmland, hearty cuisine, and traditional, old-school winemaking. These are wines for a ponderous mood. You’ll find a wide variety of styles splayed out on a flor spectrum. There are “regular” white wines on one end of the spectrum; on the other end, you’ll find flor-influenced
wines that taste more like a dry fino sherry. The more flor there is, the more you will want to pair this wine with shellfish…

Petit Manseng in France & Virginia
“There is a lot of clay in Jurançon, and humidity. It’s very similar to here.” ~Matthieu Finot, winemaker at King Family Vineyards in Crozet, Virginia
We rarely see Petit Manseng outside of its home in southwest France, particularly in the Jurançon. Aside from a few scattered plantings throughout the world, if you look at Petit Manseng’s diaspora, it pretty
much consists of Virginia. Petit Manseng has open clusters that allow for airflow, which is perfect for the humid climate you’ll find in the Jurançon and in Virginia.
• 1562 ~ ‘mansengue’ is mentioned in Jurançon text
• c1562-1780s ~ It is highly likely that a seed from a Manseng plant grew to become
Gros Manseng, with the parent later distinguished as Petit Manseng
• c1783 ~ Petit Manseng is distinguished from Gros Manseng in text
• 1987 ~ Professor of Viticulture Tony Wolf (Virginia Tech) brings Petit Manseng from New York to
Virginia to evaluate varieties for Virginia’s climate
• 2000 ~ Michael Heny and Graham Bell makes a Petit Manseng wine at Horton Vineyards
• 2002 ~ Jennifer McCloud of Chrysalis releases a 100% Petit Manseng bottling
• 2009 ~ about 2,500 acres of Petit Manseng in France
• 2011 ~ DNA findings imply that Petit Manseng is a parent of Gros Manseng
• 2011 ~ 69 acres of Petit Manseng in Virginia
• 2015 ~ 381 acres of Petit Manseng in Virginia

Sherry This category of fortified wines from Spain ranges from dry to sweet and can accompany a wide variety of foods.
Sherries have inspired the likes of Edgar Alan Poe (‘The Cask of the Amontillado’) and helped drive the early cocktail movement in the 1800s (think ‘Sherry Cobbler’). A dry sherry can be amazing with shellfish, and sweeter sherries pair well with cheeses & desserts.

Amber Wines of the World Amber wine is skin-fermented white wine. It’s a style of winemaking that once pervaded the known world, now used by only a few.
These jewel-like wines are hotly debated in the wine world. Some wine experts disdain amber wines on the assumption that skin-contact wines display aromas and flavors of wine-making technique rather than terroir. These same Amber nay-sayers usually contradict themselves when they also say that
terroir is best expressed in a traditional red ferment with heavy skin maceration, or that terroir is absent in a ‘simple’ rosé. Amber wines force us to re-examine the locus of terroir in wines made from white grapes—does terroir lie in the grape flesh? The seeds? The skins?
It could be a combination…
Amber wine is ‘oddball’ at the moment, but I long for a day when it has its proper place at the table. And this place is with foods that a traditional white wine or red wine may not quite compliment, such as poultry, pork, and fatty foods like foie gras. Amber wines often have the tannin structure of a pinot noir with the lightness of being of a white wine, and this allows them to occupy an alternate universe of food pairing with dishes that require in
concurrence both delicacy and power.

chalk 250 France, Champagne Paillard dry, rouge, still Pinot Noir 2013 135
A rare still red wine from Champagne. Three centuries ago, this type of wine was usual in Champagne, and enjoyed by the Sun King. In the 1700s, wines like this competed with the find pinot noirs from Burgundy. Champagne created its niche apart from Burgundy when producers there controlled a second fermentation.

Cru Beaujolais Rouge It would behoove us all to pay more attention to the region of Beaujolais. The Crus of Beaujolais produce wines that are rich yet approachable.
By law, they must all be hand-harvested; yet despite this meticulous vineyard work, most Cru Beaujolais wines are around $50.
These are some of the greatest values to be found on the planet. These wines ignite a great synergy with food, as they support cuisine without overpowering it. Forget Beaujolais nouveau; below you will find a
carefully curated collection of gems from this overlooked region.

Rhône Valley Rouge The Rhône River winds through the inhospitable rocky hills in the north to the gallet-studded plains in the south. The gobelet-trained vines look
like small shrubs; the fruit they produce is taut and flavorful. Here, there is a democracy between many grape varieties from picpoul to syrah. The biodiversity and variation in the soil translates to a wide spectrum of flavors and styles.

American Red We’ve come so far since the days of Prohibition. Just a century ago we were preparing to shut down American wineries left and right.
Generations later, the wine industry in the US has bounced back with incredible force. The benchmark wineries below have come a long way in exploring and pushing the envelope of what American terroir can express. The next generation of US wine will build upon their work.

Wines of Virginia
Here are a few of our favorites from Virginia’s blossoming wine industry….
Castle Hill Cider - Celestial Merret $45
Only in the last three centuries have we mastered the art of preserving bubbles in bottles. Though Dom Perignon and Madame Clicquot of Veuve Clicquot often get the credit, long before they worked out bubble capture, Christopher Merret figured it out in 17th century England. Castle Hill’s Cidermaker, Stuart Madany, makes this cider with a nod to Merret. It’s had a secondary fermentation in the bottle, and the
lees are still there—just as Merret would have made it centuries ago.
Ankida Ridge - Pinot Noir 2013 $89
This tiny boutique winery nestled in the Blue Ridge Mountains has just a few acres of vines. With this small amount of real estate, they make a truly large impression on the Virginia wine scene. The wines are organically farmed, animals roam free in the vineyard, and a
husband & wife winemaking team look after the operation. They specialize in Burgundian-style pinot noir and chardonnay.
Lovingston - ‘Josie’s Knoll’ Cabernet Franc 2015 $47
This is one of the greatest values in Virginia. It’s not often you find perfectly balanced, rich, structured, cabernet franc grown on red clay slopes. This tasty bottling comes to us byway of the Puckett family & is crafted by the insightful winegrower, Riaan Rossouw.
In the 1900s, a woman named Josie owned the knoll where the grape vines are planted, hence the wine’s namesake…
King Family - Petit Verdot 2014 $89 In 1996, the King family put down roots in Crozet and has been helping to define Virginia wine ever since. Winemaker Matthieu Finot
brings a wealth of experience from his childhood in France. He has great success with Petit Verdot in the Monticello AVA.
Barboursville - ‘Octagon’ Bordeaux Style Blend 2013 $99
Winemaker Luca Paschina culls some very special grapes from Virginia’s red clay to make this landmark wine. We call it a ‘landmark’ wine for a few reasons: it carries the mark of the land and represents the soils of the Monticello AVA, the label depicts a design by Thomas Jefferson of the ruins that rise up from the vineyards thus paying homage to the historic building and the echoes of Barboursville’s past, and
the wine itself is something of a landmark in Virginia’s wine landscape.
