LA CULTURA INCA (1.200 - 1.500 D.C.) FUE POSIBLEMENTE LA CIVILIZACIÓN MÁS IMPORTANTE DE SUDAMÉRICA.
La organización económica y la distri-bución de la riqueza, sus manifesta-ciones artísticas y su arquitectura im-presionaron a los primeros cronistas.
Los Incas adoraron a la tierra (Pacha-mama) y al sol (Inti). El Inca, soberano del Tahuantinsuyo, se consideraba sagrado e hijo del sol, de ahí que las leyendas del origen de los incas nos relatan que el sol envía a sus hijos (Manco Cápac y Mama Ocllo o los cuatro hermanos Ayar y sus esposas) a fundar el Cusco, ciudad sagrada centro del Tahuantinsuyo. La expansión de los Incas es atribuida a que fueron extraordinarios organiza-dores. La población tenía como núcleo central, familiar y territorial, al Ayllu, y al tener que alejarse por razones labo-rales, no perdía los vínculos con éste. El Inca movilizaba grandes cantidades de población como premio o castigo y así fue consolidando la expansión, a la vez que se nutría de los conoci-mientos de las culturas que se habían desarrollado anteriormente. Los cronistas españoles del siglo XVI señalaron que fueron trece sus so-beranos: desde el legendario Manco Cápac hasta el controversial Atahual-pa, quien perdió su vida durante la conquista española.
El Tahuantinsuyo o Imperio Inca, logró extenderse hasta los actuales países de Colombia por el norte y Chi-le y Argentina por el sur, incluyendo totalmente los territorios de Bolivia y Ecuador.El poder del Inca fue tangible en todo el Tahuantinsuyo, pero es en la ar-quitectura cusqueña que alcanza su esplendor: el Koricancha o Templo del sol, las fortalezas de Ollantaytambo y Sacsayhuamán y sobre todo, la ciudad de Machu Picchu.
La ciudad actual del Cusco, antigua capital del imperio incaico, fue decla-rada Patrimonio Cultural de la Huma-nidad por la UNESCO en 1983 y es sin duda uno de los destinos más impor-tantes del país.Entre sus calles empedradas se mezclan edificios de construcción inca (Koricancha y el Palacio de Inca Roca) junto a construcciones colonia-les de estilo barroco andino, como la Catedral y la iglesia de la Compañía; además se puede visitar el pintoresco barrio de San Blas, donde se encuen-tran los talleres de los mejores artesa-nos del departamento. The Inca Empire (1200 - 1500 BC) was possibly the most organized civili-zation in South America. Their economic system, distribution of wealth, artistic manifestations and architecture impressed the first of the Spanish chroniclers.The Incas worshipped the earth goddess Pachamama and the sun god, the Inti. The Inca sovereign, lord of the Tahuantinsuyo, was held to be sacred and to be the descendant of the sun god. Thus, the legend of the origin of the Incas tells how the sun god sent his children Manco Capac and Mama Ocllo (and in another ver-sion the four Ayar brothers and their wives) to found Cuzco, the sacred city and capital of the Inca Empire. The rapid expansion of the Inca empire stemmed from their extraordinary or-ganizational skills. Communities were grouped, both as families and territo-rially, around the Ayllu, their corner of the empire, and even if villagers had to move away for work reasons, they did not lose their bond to the Ayllu. The Inca moved around large populations, either as a reward or punishment, and thus consolidated the expansion while drawing heavily from the knowledge of the cultures that had flourished prior to the Incas. Sixteenth-century Spanish chroniclers recorded a dynasty of 13 rulers, run-
ning from the legendary Manco Capac down to the controversial Atahualpa, who was to suffer death at the hands of the Spanish conquerors. The Ta-huantinsuyo expanded to cover part of what is modern-day Colombia to the north, Chile and Argentina to the south and all of Ecuador and Bolivia.
The power of the clans and the Inca was tangible in every corner of the empire, but the might of the Incas reached its peak in the architecture of Cuzco: the Koricancha or Temple of the Sun, the fortresses of Ollantaytam-bo and Sacsayhuaman, and above all the citadel of Machu Picchu.The city of Cusco, the ancient capital of the Incan Empire, was placed on the World Cultural Heritage List by UNESCO in 1983, and is without a doubt one of the most important desti-nations in Peru.
There are Inca buildings waiting for you to mix them among its cobble-sto-ned streets, (ones like the Koricancha and the palace of Inca Roca) as well as Andean Baroque structures from the Colonial Period like the Cathe-dral and the Church of the Company of Christ. In addition, you can visit the picturesque neighborhood of San Blas where the best artisans in the de-partment have set up their workshops. This magical city also has an exciting nightlife with cafes, restaurants, and bars for all tastes.

Dom y Fes-tivos 14h-18h.Su edificación tuvo dos etapas: prime-ro se construyó la Capilla del Triunfo sobre lo que fue el antiguo templo de Suntur Wasi (Casa de Dios); poste-riormente se levantó la catedral sobre el palacio del Inca Wiracocha. En la fachada y el interior domina el estilo renacentista, con una decoración inte-rior muy rica en tallas. Conserva una colección importante de pinturas de la escuela cusqueña y objetos de plata repujada.

A Renaissance buil-ding in its majority, the interior deco-ration is rich in woodcarvings. An im-portant collection of paintings from the Cusco School and silver wrought prices are also kept there.

Visitas: Lun-Sab 8:30h-18:30h y Dom 14h - 17hEl Qoricancha, de acuerdo a los cro-nistas, era una de las edificaciones más impactantes del Cusco incaico; lucía en el interior paredes enteras recubiertas con láminas de oro, pues era el templo principal del dios Sol. Los españoles edificaron sobre la construcción original, hacia 1534, la iglesia y el convento dominico, los que se derrumbaron como consecuencia del terremoto de 1650 y se reconstru-yeron alrededor de 1681. El convento posee una pinacoteca muy valiosa con lienzos de los siglos XVII y XVIII.

Visiting hours: Mon – Sat 8:30am – 6:30pm and Sun 2pm – 5pm.The Qori-cancha was one of the most impressive buildings of incaic Cusco according to the historians: the glowing gilding of the interior walls illuminated what used to be the main temple dedicated to the worship of the Sun God. The Spanish built the church and Dominican convent on top of the original structure around 1534 but they collapsed during the earthquake of 1650 and were rebuilt around 1681. The convent possesses an art gallery of valuable seventeenth and eighteenth century canvasses.

En la Plaza de Armas encontramos el templo original que se construyó en 1571 sobre los terrenos del antiguo Amarucancha, palacio del Inca Huay-na Cápac. Luego del terremoto de 1650 tuvo que ser reconstruido hacia 1688. La traza original y la fachada son ejemplos del barroco andino. La portada, tipo “retablo”, está decorada con torres de mediana altura y sus muros de piedra han sido cuidadosa-mente trabajados.
Location: Main Square. The original building was raised in 1571 on the grounds of the ancient palace of Inca Huayna Cápac, the Amarucancha. After the earthquake of 1650, it was rebuilt around 1688. The design and the façade are examples of Andean Baroque. The retable style entrance is decorated with medium size towers and the stonewalls are ca-refully worked.
En tiempos de los Incas fue llamada “Huacaypata” palabra quechua que significa lugar de llanto o de encuen-tro. Era un importante lugar ceremo-nial en el que se celebraba cada año el Inti Raymi o Fiesta del Sol. Fue el lugar donde Francisco Pizarro pro-clamó la conquista del Cusco. Con la llegada de los españoles, la plaza se transformó; se edificaron arcos de pie-dra y se erigieron las construcciones que hasta hoy la rodean.
During the Inca Empire, the square was called Huacaypata, a Quechua word meaning “place of tears” or “meeting place”. It was an important ceremonial spot where the Inti Raymi or Festival of the Sun was celebrated every year. It is also the place where Francisco Pizarro proclaimed the con-quest of Cusco. After the Spanish arri-ved, the plaza changed. They erected stone arches and built the structures that surround it today.
A cuatro cuadras de la Plaza de Ar-mas, este barrio es uno de los barrios más pintorescos del Cusco. Llamado T’oqokachi (hueco de sal), se carac-teriza por sus calles estrechas y empi-nadas, y sus hermosas casas de estilo colonial. Es conocido como el Barrio de los Artesanos. COMPLEJO ARQUEOLOGI-CO DE SAQSAYWAMAN SAQSAYWAMAN ARCHAEOLOGICAL COMPLEX 2 km / 1 mile northeast of Cusco (10 mi-
nutes by car). Visiting hours: Mon – Sun and holidays 7am – 6pm .The area con-tains thirty-three archaeological sites. The most famous is Fort Sacsayhua-man. It might well have been a religious structure, but for its location and style, the Spanish and the historians believe it was a military construction. The most im-portant temple in Hanan Qosqo or Upper Cusco might have been located there, dedicated to Andean cosmology and to the worship of the Inti (sun), the Quilla (moon), Chaska (stars), illapa (ray), and other divinities. It is described as mas-sive for the size of some of its stones, which weigh between 90 and 120 tons. This is also the stage of the Inti Raymi every 24th June.

´ OLLANTAYTAMBO CON-JUNTO ARQUEOLOGICO ARCHAEOLOGICAL COMPLEX OF OLLANTAYTAMBO
97 km / 60 miles northwest of Cusco (2 hours and 30 minutes by car). The Incas built it as a fort that included a temple, agricultural terraces, and an urban area. There are two distinct sectors: Araqama Ayllu, the religious and worship zone, and Qosqo Ayllu, the residential area. Ollantaytambo was an important administrative cen-ter with probable military functions if one considers the walls and towers.

Ollantaytambo fue edificado durante la época inca como un área fortificada que incluye un templo, andenes y un sector urbano. La ciudadela de Machu Picchu es el más importante de los atractivos tu-rísticos del Cusco, esta ciudadela es considerada una de las más extraor-dinarias muestras de arquitectura pai-sajística del mundo. Machu Picchu en quechua, significa montaña vieja. Está situada sobre una montaña de estruc-tura de granito. Utilizando ingeniosas técnicas, los Incas lograron transpor-tar pesados bloques de piedra así como tallarlos y pulirlos con pulcritud sorprendente.

En todo el país se realizan fiestas y celebraciones patrióticas para recor-dar la declaración de Independencia del Perú -28 de Julio de 1821- por par-te del Libertador José de San Martín. Tanto en Lima como en las diversas ciudades del Perú, e incluso en algu-nos pueblitos alejados, las casas lu-cen banderas desde los primeros días del mes. La noche del 27 suelen celebrarse se-renatas de música folklórica y criolla en diversas plazas y parques. El ama-necer del 28 es saludado con una sal-va de 21 cañonazos, como preámbulo de la ceremonia de izamiento de la bandera. Al día siguiente se celebra la ceremonia del Tedeum, en la Catedral de Lima, donde asiste el Presidente de la República, para culminar con la famosa Parada Militar.En diversos lugares del interior del país se desarrollan ferias agropecua-rias junto con tres fiestas que marcan el alma del criollismo: peleas de ga-llos, corridas de toros y exposiciones de caballos de paso.

On this day, the following festivals take place: Pachamamaraymi in the District of Ccatca, Wataqallariy in the District of Maras, and Kinturaymi in Huasao in the District of Oropesa. This is an Andean ri-tual that worships and gives tribute to the Pachamama, Mother Earth, in a special ceremony called “payment to the earth” with offerings of coca leaves, chicha de jora, and huayruro seeds - mystical jun-gle seeds. The rite marks the beginning of the Andean New Year.
Across the country, Peruvians throw parties and hold patriotic celebrations to remember the Declaration of Peru’s Independence -July 28th of 1821- by the Libertador José de San Martín. In Lima and cities across Peru, even in remote communities, homes fly the Peruvian flag from July’s beginnings.On the night of July 27, Peruvians often stage serenades to the strains of folk and Creole music in squares and public parks. Dawn on July 28 is greeted with a salvo of 21 cannons, to herald the cere-mony of raising the flag. On the following day, before the famous military parade is held in downtown Lima, the Tedeum ceremony, attended by the president, which is celebrated in Lima’s Cathedral.
In various parts of the country, Peruvians also hold agricultural and livestock fairs (Cajamarca, Piura, Monsefú) together with three festivals that are the soul of Creole culture: cockfighting, bullfighting and Peruvian paso horse exhibitions.

Este ritual marca el inicio del nuevo año andino.

La historia del Señor de Huanca se inicia en 1675 cuando, según se dice, Jesucristo apareció en una caverna ante el indio Diego Quispe. Su vivo relato inspiró a uno de los mejores pintores de la época para representar la imagen en la roca. El culto, recono-cido en 1779, tiene su día central el 14 de septiembre. Hasta este lugar llegan devotos desde apartados lugares del Perú y Bolivia, para curar sus afliccio-nes del cuerpo y alma.
The story of the Lord of Huanca began in 1675 when, it is said, Jesus Christ appeared in a cave to Diego Quispe, an Indian. His vivid story inspired one of the best painters of the time to re-produce the picture on a rock. The worship, recognized in 1779, reaches its climax on 14th September, when believers arrive from all over Peru and Bolivia in search of cures for their phy-sical and spiritual afflictions.

La festividad de la Virgen del Carmen, conocida como Mama-cha Carmen, se convierte en una maravillosa fiesta, principalmente en el pueblo de Paucartambo, a 120 kilómetros de Cusco, entre el 15 y el 17 de julio.Durante los días que dura la celebra-ción se vive intensamente la mezcla del sentimiento religioso que inspira la Mamacha con el espectáculo de colorido teatral de los vestidos y máscaras, danzas, cánticos y bulli-ciosas celebraciones gastronómicas.
Se combina la magia con la realidad y la historia. Existe un mestizaje cul-tural sin perder la identidad andina.
El primer dia, la fiesta se inicia con el estallido de cohetes y bombardas, el repique de campanas y la música contagiosa de las bandas que acompañan a las comparsas en su entrada.Existe el privilegio, concedido a las mujeres que tienen más devoción a la Mamacha Carmen, de ser las encargadas de elegir la ropa que
llevará la Virgen a lo largo de los días que dura la celebración.
Por la noche se encienden fogatas donde los Q’olqas, los Chunchus y los Maqtas, alentados por las lenguas de fuego, escenifican el purgatorio, saltando, corriendo, bro-meando. Por la noche los músicos y comparsas dan la serenata a la Mamacha cantando hasta el amane-cer el “punchauniykipi” (en quechua “en tu dia”)La gastronomía también es una par-
te importante de la celebración. Hay oportunidad de degustar diferentes tipos de alimentos típicos de la zona.
Durante las fiestas de Paucartambo, muchos peregrinos se trasladan de madrugada al paraje denominado Tres Cruces, a 5000 metros sobre el nivel del mar, para contemplar el nacimiento del sol, maravilloso com-plemento del espectáculo humano vi-vido durante los días de celebración dedicados a la MAMACHA CARMEN

The festivity of the Virgen del Car-men, known as Mamacha Carmen, becomes a wonderful feast, mainly in the town of Paucartambo, 74 miles away from Cusco, between the 15th and 17th of July.
During the celebration an intense mixture of the religious feeling that inspires the Mamacha with the spec-tacle of colorful theatrical costumes and masks, dances, chants and bust-ling culinary celebrations floats all over Paucartambo. Combining magic
with reality and history, without losing the andean identity.
On the first day, the party starts with the outbreak of rockets and skyrockets, the pealing of bells and the contagious music of the bands that accompany the masquerade in its entry.There is a privilege, granted to women who are more devoted to Ma-
macha Carmen, to be responsible for choosing the clothes that will carry the Virgin throughout the celebration.
In the evening bonfires are set where the Q’olqas, Chunchus and Maqtas, encouraged by the tongues of fire, represent purgatory, jumping, running and joking. At night the musicians and comparsas offer a serenade to the Mamacha singing until dawn the “punchauniykipi” (in quechua “in your day”)The gastronomy is also an important
part of the celebration. It is a great opportunity for trying different types of local and typical food.
While the festivity takes place, many pilgrims moved to the village, called Tres Cruces, at about 20000 fasl, to contemplate the sunrise, a wonderful accesory to the human spectacle lived during the celebration of Mama-cha Carmen.

Alta Moda es un conjunto de 27 fotografías realizadas por el fotó-grafo peruano Mario Testino entre 2007 y 2011 en la ciudad de Cus-co. Testino empieza a desarrollar esta obra a partir de su encuentro con una colección de trajes tra-dicionales, cotidianos y festivos, pertenecientes a la Asociación Filigranas Peruanas, que provie-nen de las provincias de Cusco, Calca, Chumbivilcas, Espinar, Paucartambo, entre otras.
Debido a su admiración por el pro-minente fotógrafo Martín Chambi y gracias a la generosidad de su nieto, Teo Allain Chambi, Testino utilizó un telón de fondo del estu-dio del Archivo Fotográfico Martín Chambi del Cusco. Creado hace más de treinta años por la familia de Chambi, el telón es una repro-ducción que utilizó el fotógrafo en la década de 1920.
“Crear esta obra ha sido un pro-yecto personal muy especial, no solo porque exploro la herencia
de mi país y el impacto que esta está teniendo mundialmente sino que además, a través de esta ex-posición, tengo la oportunidad de mostrarle al Perú yal mundo la belleza, la riqueza histórica y la importancia de la tradición peruana”, dice Testino.
La exposición estará acompaña-da de una publicación en la que se reproducen las fotografías que conforman ALTA MODA, con una introducción del propio Testino, dos artículos: uno a cargo de las investigadoras peruanas Soledad Mujica y FedoraMartínez y otro de Jennifer Allen, crítica de arte contemporáneo radicada en Berlín y la nota del editor de Vogue America,Hamish Bowles.
ALTA MODA será posible gracias al apo-yo del Ministerio de Comercio y Turismo – MINCETUR - Prom Peru y Marca Perú, y gracias también a la colaboración del sector privado peruano.
Alta Moda is a set of 27 photogra-phs taken by the Peruvian photo-grapher Mario Testino between 2007 and 2011 in the city of Cus-co. Testino started developing this work after getting in touch with a collection of traditional, daily and festive suits from the provinces of Cusco, Calca, Chumbivilcas, Espinar, Paucartambo, among others, belonging this collection to the Peruvian Filigranes Asso-ciation.
Due to his admiration for the prominent photographer Martin Chambi and thanks to the gene-rosity of his grandson, Teo Allain Chambi, Testino used a curtain as a background of the Martin Chumbo del Cusco Photographic File. Created more than thirty years ago for Chambi’s family, the curtain is a reproduction that the photographer used in the decade of 1920.

not only because I also explore the inheritance of my country and the impact that this one is having throughout the world but in addi-tion, across this exhibition, I have the opportunity to show to Peru and the world the beauty, the his-torical wealth and the importance of the Peruvian traditions”, says Testino.The exhibition will be accompa-nied by a publication in which there are reproduced the photo-graphs that shape ALTA MODA, with an introduction of the own Testino, two articles: one at the expense of the Peruvian inves-tigators Soledad Mujica and Fe-dora Martínez and other one of Jennifer Allen, contemporary art critic based in Berlin and the note from the Editor of Vogue America, Hamish Bowles.
Alta Moda will be possible thanks to the support of the Department of Ministry of Trade and Tourism, Prom Peru and Mar-ca Peru and also thanks to the collabora-tion of the private Peruvian sector.

Somos 8 millones 432 mil limeños. ¿Nos miramos lo suficiente?¿Nos conocemos realmente? Con estas preguntas nació un proyecto fotográfico cuyo objetivo pri-mordial es mostrar nuestra diversidad cultural.
Mírame, Lima es una serie de 50 retratos fotográficos que intenta reflejar la diver-sidad cultural, étnica, religiosa de los limeños. Vivimos aislados y en pequeñas burbujas desde las que no salimos por temor, desconfianza y falta de información, entre otros factores. Con este proyecto que-remos contribuir a conocernos mejor, fomentar la integración y el respeto mutuo desde el optimismo y evitando la confrontación. Creemos en la necesidad de abrir un diálogo y despertar la curiosidad de los limeños sobre su propia diversidad. El proyecto es una invitación a conocernos sin prejuicios y a pasear por una Lima plural, en cuyas casas y calles se refleja el mundo entero.
Las familias retratadas son anónimas. Podrían ser unos primos lejanos, unos vecinos de la infancia, la dueña del chifa, el sastre del barrio o la diseñadora de modas. Cualquiera de nosotros podría estar aquí. Todas estas familias abrieron las puertas de sus casas y se dieron a conocer. Eligieron sus objetos más queri-dos para, como en una obra teatral, poner en escena sus propias vidas: quiénes son, con qué sueñan y en qué creen. En muchos de los casos, las familias se extendieron y abrazaron nuevos miembros: trabajadores, amigos o alumnos.

We’re 8 millions and 432 thousands citizens. Do we look at each other? Do we really know who we are? With these questions in mind a photographic project has taken shape, aiming to discover and display our cultural diversities.
Mírame, Lima is a series of 50 family portraits aiming to reflect the cultural, ethnical, religious diversities present within the Peruvian capital. Partly as a result of insecurity, street violence, lack of information, among other things, people in Lima tend to live very isolated from each other, in small groups from which they rarely emerge. With this project we would like to help to get to know each other better, to encourage integration and respect between citizens and to do so with a positive, optimistic tone in order to avoid conflict and controversy. We believe in the necessity to open a dialogue and to awake curiosity within people about each other’s diversity. The project is an invitation to explore without prejudice and stroll ourselves through a plural city, whose houses and streets are a mirror of the entire world.
The families portrayed are anonymous. They could be distant relatives, our childhood’s neighbours, the chinese restaurant’s owner, the local tailor or the fashion designer. Anyone of us could be included. All of these families opened their house to get us to know them. They picked their favourite objects and, as if in a theatre play, they performed their own lives: who they are, what do they dream and in what they believe. In many cases families extended, embracing new members: working partners, friends or pupils.Mírame, Lima is a collaborative project between photographers Jaime Travezan and Morgana Vargas Llosa with art director David Tortora.

Jaime Travezán comenzó su carrera fotográfica como reportero gráfico, añadiendo más adelante a su interés la moda y el retrato. Como fotope-riodista ha cubierto temas como la guerra de Kosovo. En cuanto a moda y retrato su trabajo ha sido publicado en numerosas revistas, entre ellas Vogue y Elle. La mayor parte de su trabajo ha sido publicado en El País y la revista EPS. Con su ONG “Desvela” intenta sacar a la luz temas sociales que necesitan mayor visibilidad dentro de su país, Perú. El nombre de “Lágrimas del Sol” que se le dio en el Imperio Incaico no se sabe si fue debido a lo blanquecino de su color, la pequeñez de sus granos , su alto valor nutricional o por ser un alimento con tantas cualidades que solo podía ser atribuido a una divinidad tan importan-te como el Sol.
Curiosamente fue prohibida durante el periodo virreinal debido a que era una especia asociada a rituales paganos. Este grano que durante un tiempo fue prohibido y tratado con indiferencia, actualmente es muy apreciado y consumido de forma muy importante.La planta además es bonita, tiene hojas verdes y moradas y una espi-ga morada también, que es de donde se encuentra la parte comestible. Un granito de 2 mm de diámetro que se puede cocinar con el arroz, se puede usar para hacer arepas, jugos, y hasta chicha.
Como cosa curiosa podemos añadir que la quinua que fue el alimento preferido por los aztecas, mayas e incas, hoy se ha convertido en el mejor alimento para los viajes espaciales. Investigadores de la NASA consideran la quinua como un alimento excepcionalmente completo y equilibrado, muy útil para ser utilizado por los astronautas.
La quinua es reconocida mundialmente por sus excelentes cualidades alimenticias. Ha sido denominada como el alimento más completo que posee la humanidad.

La historia comienza por saber que los primitivos pueblos andinos y luego los incas fueron expertos en mejorar las condiciones del suelo para la agricultura. Las variaciones climáticas y los terre-nos difíciles y escarpados agudizaron su ingenio, encontrando mu-chas maneras de superar las dificultades.
Entre los sistemas más conocidos está la construcción de andenes o terrazas, de gran importancia para los incas, y en general para los pueblos andinos.¿Qué son los andenes? Los andenes son terrazas agrícolas artificiales escalonadas que sirven para obtener tierra útil para la siembra en las escarpadas laderas andinas. Permitían aprovechar mejor el agua, tanto en lluvia como en regadío, haciéndola circular a través de los canales que comunicaban sus diversos niveles; con esta medida evi-taban al mismo tiempo la erosión hidráulica del suelo.
Con los ojos bien abiertos elegiremos uno de estos alimentos para hablar de él: la quinua y les diremos los motivos ... por ser el cereal nutritivo por excelencia y de mayor y más completa composición en aminoácidos que existe en nuestro planeta y también en considera-ción a que el año 2013 ha estado nombrado por la Asamblea General de las Naciones Unidas como el Año Internacional de la Quinua, pre-cisamente en reconocimiento al esfuerzo de los pueblos andinos, de los que hemos hablado al principio, por proteger y preservar, entre otros, la quinua gracias a sus conocimientos tradicionales y prácticas de vida en armonía con la Madre Tierra. Los incas le llamaron “grano madre” y la veneraron como si se trata-ra de una planta sagrada.

Each year the Inca planted the first seeds of the season in a special ceremony and, during the winter solstice, the priests wore pots filled with quinoa as an offer Inti, the Incan sun god.Quinoa was first domesticated by the Peruvian people around 6000 years ago.
The Incas baptized it as “Tears of the Sun” maybe due to its whi-tish color, the smallness of its grains, its high nutritional value or because of the so many qualities that could only be attributed to a divinity as important as the sun.
Curiously it was prohibited during the viceroyalty period be-cause it was a spice associated with pagan rituals. This grain that during a time, was banned and treated with indifference, now it is very appreciated and consumed in a very important way.
In addition the plant is beautiful, with green and purple leafs and a centered ear containing the edible seeds. A tiny grain of 2.2 mm in diameter that can be cooked as rice, or used to pre-pare arepas, juices and purple corn liquor.
As curious fact we can add that besides quinoa was the Aztec, Maya, and Inca favorite food, nowadays NASA considers it and has proposed quinoa as an ideal food for long-duration space flights.
Quinoa is recognized and accepted around the world for its ex-ceptional nutritional quality and considered ad one of the most complete foods.

It turns out easy to imagine a huge table filled with all the ce-reals that are part of the Andean so rich food, such as:Quinoa, kiwicha, kaniwa, parackai, kulli, pesqoruntu, rice, cha-minco, bruise, barley, tarwi, linseed, wheat, millet, soybean and so many others.... To be able to value it, it’s necessary to go into the origins and look back.
The story begins by knowing that the primitive peoples of the Andes and then the Incas were experts in improving soil conditions for agriculture. Climatic variations and the difficult and steep pieces of land sharpened their ingenuity, finding many ways to overcome the difficulties.
Among the most well-known systems is the construction of an-denes or terraces dug into the slopes of mountains for agricul-tural purposes, of great importance to the Incas, and in general for the Andean peoples.What are these andenes? They are agricultural artificial sta-ggered terraces that serve to obtain useful land for the sowing in the steep Andean hillsides. They were allowing to take better advantage of the water, both in rain and in irrigation, making it circulate across the channels that were communicating their multiple levels. This way the hydraulic erosion of the soil can be avoid.With eyes wide open we will choose one of these grains to talk about: the quinoa and these are the reasons: it’s the most nutri-tious grain par excellence and a very high-quality protein since it has all nine essential amino acids and also because the United Nations General Assembly declared 2013 as the “International Year of Quinoa” in recognition of ancestral practices of the An-dean people, who have preserved quinoa as food for present and future generations, through knowledge and practices of living in harmony with nature.The Incans considered it sacred and called it the “Mother of All Grains.”

Ingredients for one Pisco sour
3 oz. of pure “Quebranta Pisco” 1 oz. of sugar syrup1 oz. of fresh lime juice1 egg white2 ice cubes3 drops of “Amargo de Angostura” (for dressing)
Directions
Pour 3 ounces of Pisco, 1 ounce of sugar syrup, 1 ounce of lime juice and 1 egg white and add the ice cubes into the cocktail mixer. Shake vigorously du-ring 10 seconds. When opening the cocktail mixer all the ingredients should already be well mixed up. It only takes to choose an adequate drinking glass and add 3 drops of “ Amargo de Angostura” to serve our home made delicious Pisco sour.
Ingredientes para 1 Pisco Sour 3 oz de pisco puro Quebranta1 oz de jarabe de goma1 oz de jugo de limón1 clara de huevo2 cubitos de hielo3 gotas de Amargo de Angostura (para adornar)
Preparación
Verter en una coctelera las 3 onzas de pisco, 1 onza de jarabe de goma, 1 onza de jugo de limón y una clara de huevo, añadir el hielo. Agitar energicamen-te durante 10 segundos. Al abrir la coctelera todos los ingredientes ya estan bién mezclados, sólo falta escoger un vaso al gusto para servir nuestro propio Pisco Sour y adornar la espuma con tres gotitas de Amargo de Angostura.
PISCO SOURUna aventura en todos los sentidos de la palabra. El dulce, el frío y la volatilidad se mezclan en este cóctel hecho a base de pisco y limón peruanos. Un paladar sensible, un bebedor sensible y cualquier excusa es suficiente para tomar un pisco sour, ya que sólo se hace en el Perú.
