Overall Review

• This meal plan in some ways was 3 slow cooker meals instead of 2. The ribs were in the over for 4 hours which was a perfect Sunday dinner option.

• Big portions! For a one serving option on the procurement sheet I would have definitely chosen 1 rack of ribs, and 1 whole chicken for the two of us.

• Everyone has their favs when it comes to the meal plans, and this will definitely be one of ours.

Meal Overview• Wed

– Shrimp Scampi– Overnight chili– Made muffins

• Thurs. – Chili

• Fri– Nachos– Overnight Chicken

• Saturday– Chicken– Prepped peach compote for ribs.

• Sunday– Ribs

• Monday and Tuesday– Raid the paleo bank account!

Paleo Nachos

• This is our favorite dish on the site. We love it!

• We add more fresh lime juice when we plate it.

Guajillo Coffee Ribs• Our first time to make

these and they were delicious.

• Guajillo powder was hard to find, we struck out at Kroger, and Sprouts and decided to substitute chili powder.

• We served the meal with cold compote and heated, equally satisfied.

• One rack rather than 3 was completely sufficient for the two of us.

80 clove garlic chicken.

• WHOA That’s a lot a chicken!

• Nothing like slow cooked garlic cloves, sooo good.

• I would have scaled this to .5 serving on the procurement spreadsheet. Two chickens was a lot for the two of us.

Banana Currant Muffins

• We did not like the pumpkin seeds here. The rest of the muffin was really good, we ended up making the recipe over excluding the pumpkin seeds.

Three Pepper Turkey Chili• Another one of our favs. • I never tried it on eggs before

and whoa that was a good one.

• Our slow cooker was too small for the whole thing, we made this in two batches, and put the second into our paleo bank account.

Shrimp Scamp

• This is such an easy recipe with a classy butter sauce!

• This was our first meal while our chili cooked over night.

• For some reason my sauce was not quite as creamy as Nick’s? Still delicious.

• Dogs are fur children not pets, we own two beautiful German Shorthairs. Katie is a 5th grade reading teacher and I am a field rep for Brooks Running, my territory is North Texas and Oklahoma. That’s our family!

• Katie leaves most of the garage work outs and running with the dogs to me! She was a brilliant cook before we found the site and has enjoyed watching me become a culinary ninja through learning from Nick and the meal plans.
