But the most interesting fact about Panettone history and evolution comes in early 1900 when a group of some of the most renovated pastry-shops and pastry chefs in Milan joined forces funding the UNIONE LABORATORI PASTICCERI: a shared laboratory where pastry makers could access share machines, tools and source together better materials and implement economies of scale.
