AYURVEDIC INFUSIONS
The practice of Ayurveda hails from India. It is the oldest science in the
world. Ayurvedic teaching is the search for self-awareness and personal
well-being. These infusions are carefully planned using a measured mix
of botanicals. Ayurvedic blends contain herbs, spices, leaves, flowers,
grasses and pieces of fruit.
Harmony Blend Tulsi herb, green rooibos, ginger, cinnamon, verbena, chamomile
blossom, lavender blossom, rosebuds, harmonise the body and soul and
boost the body’s immune system. Helpful for a good night’s sleep.

Elderflower & Ginger A delicious crisp blend. The strength of ginger root, cardamom,
cinnamon and bruised pepper juxtaposed with delicate elderberry,

ROOIBOS
Rooibos is a plant native to the Cedarberg Mountains of Western Cape,
South Africa.
Organic Rooibos
These finest Rooibos needles taste nutty and smooth. Organically grown
and hand-harvested.
Lemon & Ginger Rooibos Pink pepper, cardamom and ginger are added to lemongrass and
lemon pieces for a punchy mix! Also with basil, rosemary leaves, apple
and orange peel. This tea is designed to boost creativity.
Orange Rooibos A blend of the finest organic rooibos is infused with natural pieces of
orange. Zesty, tangy, Light and fruity, this infusion will lift your spirits.

HERBAL INFUSIONS
Herbal infusions are made from any plant that is not the Camellia
Sinensis bush, from which all teas are produced. The careful creation of
wild and fresh botanicals, herbal infusions may contain dried leaves,
pieces of fruit, flowers and grasses. All herbal infusions are caffeine-free.

Combination of Chamomile blossom, Verbena and the
Chrysanthemum flower. We also added lavender flowers and

WHITE TEA
After it is plucked the bud is simply dried. This gentle treatment retains
the highest anti-oxidant level allowing soft, delicate flavour to emerge.
Because only the 1st bud is used, in leaf form white tea can be picked
for only a few weeks. To produce a kilo requires more than 30,000 buds,
ensuring white tea is highly prized.
Snow White (China)
White ‘Peony’ is the generic name for Chinese white tea. It is so named
after the peony flower that grows alongside the tea plants of Fujian. This
delicate tea is a beautiful combination of bright green leaves and soft
white buds. Refreshing and cool, Snow White delivers a fragrant
lingering liqueur.
Malawi White (Malawi)
This extraordinary tea is grown on the Shire Highlands of Malawi. The
unique terroir produces huge sun-bronzed leaves with dark silver tips.
The small plantation produces this tea only in minuscule amounts.
Malawi White combines the delicacy of white peony, with notes of
caramel and smooth honeysuckle.
Jasmine Silver Needle (China)
From the Da Bai Hao tea bush in Fuding, Fujian province this tea was
harvested this spring and only the first buds were chosen to be naturally
scented over many days with jasmine flowers. Light delicate, extremely
fragrant and clean.
Tropical Tea (China)
Blended with white and green tea are pieces of mango, pineapple,
coconut and lime blossoms. Extremely fruity and vibrant.

Kukicha Toasted (Japan)
Comprised of the ‘kuki’ leaf stalks of Sencha and Bancha tea. Notes of

GREEN TEA
Heat is applied immediately after the leaf is plucked. This protects its
anti-oxidant properties. The process differs greatly according to the
country in which it is produced. In Japan the leaves are steamed while
in China they are wok-fired. This subtle difference produces a wide
variety of tea.
Green tea protects the heart, liver and immune system and treats
arthritis.
Fog Green Tea (China)
Located high up in the mountains of the Jiangxi Province, the plant
benefits from cooler air which allows these wonderfully mellow leaves to
emerge. Fog tea is so named after the mist that envelops the plant.
Each leaf is hand-plucked. A sweet taste that is rich and captivating.
Gardenia Tea (Mixed Origin)
A Japanese green sencha tea is added to a blend of green and white
tea from China. This forms the foundation. For fruitiness we then add a
smattering of redcurrants, blackcurrants and apricot. A combination of
tea, fruit and flower that is wonderfully balanced.
Cranberry & Rose (Japan)
We complement the crisp, sour note of cranberry with pieces of
raspberry and damask rose buds
This quenching cocktail sits behind a base of Japanese green Sencha

PU’ ERH TEA
Pu ‘Erh is one of the oldest teas from China - trade began in the Tang
Dynasty. Today international buyers will pay tens of thousands of pounds
for this valuable tea!
For several weeks very large leaves are twice fermented. This
fermentation brings Pu ‘Erh its distinct earthy flavour and aroma and rich
colour. Pu ‘Erh is widely used to manage weight and cholesterol. It can
be enjoyed at any time although its benefit as a digestive aid means it
is especially satisfying when drunk with a meal
Royal Pu' Erh (China)
This is a royal grade Pu’ Erh. Made with only the freshest, sweetest tea
tips. Earthy, yet mellow and clean, aged deep in the Chinese
mountains. Dark copper notes bring a cup of supreme quality.
11 Year old Pu' Erh (China)
The smell is smoky and earthy. The liqueur ranges from burnt oranges to
deep reds, often with a quite brilliant purple hue. This fine example is dry
and woody. The tea is smooth, surprisingly mild and clean.

OOLONG TEA
This tea sits between black tea and green tea. ‘Oolong’ means ‘Black
Dragon’, a reference to the natural dragon-like curve of the leaf.
Oolong teas stimulate. They increase metabolism and are often drunk
for weight reduction. Craftsmen of Oolong teas are highly-skilled. The
leaves are tossed in giant baskets until only some of the natural juices
are freed, and then roasted by hand throughout the night. This intricate
process allows incredibly diverse teas to emerge.
Formosa Oolong Finest (Taiwan)
This tea literally means ‘beautiful’. It is grown to imitate the first oolong
grown in Taiwan. This 'choicest' grade copper-red leaf delivers an
intense, pungent bouquet.
Iron Warrior Monk – Tie Luo Han(China)
These bushes are found among the rocky cliffs of the Wuyi mountains in
Fujian, China. The name means ‘Iron Warrior Monk’ in honour of a warrior
who, according to legend, created this immensely smooth Oolong.
Though baked to produce a thick, sweet liquor, Tie Luo Han is a highly
refined Oolong. It is creamy and buttery, offering notes of honeysuckle
and caramel.
Iron Goddess of Mercy – Tie Guan Yin (China)
From Anxi county in the Fujian Province. Tie Guan Yin is incredibly light,
with the aroma of orchids and blossoms.

Lapsang Souchong (China) Using larger souchong leaves, this tea is roasted before being smoked
over resin rich pine wood. This delivers a rich, dark and peaty flavour
with the classic smoky taste.
Venetian Rose (Mixed Origin) We complement the richness of black tea from China and Ceylon with
the delicacy of fine rose buds. A delightful alternative to a traditional
Earl Grey.
Traditional Chai (India)
Warm spice mix of ginger, cardamom, cloves, cinnamon, fennel and
aniseed with finest Assam leaf tea. Rich and pungent.
Rwandan Rukeri (Rwanda)
The Rukeri garden was founded only 50 years ago. It is a small plantation
and produces only orthodox (traditional) tea. To produce a long,
twisted leaf, production is handled with great care. The result is a spicy
and fruity tea, the colour of burnt sun.
31 Years Aged Tea (Taiwan)
Yu Chi assam black tea was introduced to Taiwan in the early 19th
century. This is a tea from a long established family business in the hills of
Yuchi, near Sun Moon Lake. In spite of its age, this tea is very aromatic.
Fruity aromas of cherry and grenadine are prevalent. The flavour is
gently earthy with notes of root vegetable.

BLACK TEA
Once picked, the leaves are withered on a rack for up to 18 hours and
then rolled and cooled. Now darkened, the leaves are fired in an oven
to seal in the flavour. In leaf form, black tea delivers a rich variety of
flavour and aroma.

Developed for sole use at Waldorf Astoria – The Caledonian, this blend
is a secret combination of more than 10 different fine teas, fruit, spices
and herbs. The component we are prepared to reveal is the wonderful
cornflower, a modest homage to the immodest peacock!
Breakfast ‘Cuppa’ (Mixed Origin) Made from strong and rich tea leaves, this produces a full-bodied and
malty traditional cup of tea. Robust enough to take milk or cream.
Hot Breakfast (Mixed Origin)
Traditional breakfast tea with a kick. The base is only the very finest leaf
tea. To add a kick-start to the day, we carefully blended cinnamon,
ginger and liquorice.
Earl Grey 1833 (Mixed Origin) Precious black tea infused with pure bergamot oil. The distinct taste and
aroma of Earl Grey deserves a look to match. So we add delightful blue

THE HISTORY OF AFTERNOON TEA Tea consumption increased dramatically during the early nineteenth
century and it is around this time that Anna, the 7th Duchess of Bedford,
is said to have complained of “having that sinking feeling” during the
late afternoon. At the time, it was usual for people to take only two
meals a day, breakfast and then dinner around eight o’clock in the
evening. The solution for the Duchess was a pot of tea and a light snack,
taken in her private rooms during the afternoon. Later, friends were
invited to join her in her rooms at Woburn Abbey and this summer
practice proved so popular that the Duchess continued it when she
returned to London, sending cards to her friends asking them to join her
for “tea and a walk in the fields.” Other social hostesses quickly picked
up on the idea and the practice became respectable enough to move
it into the drawing room. Before long, all of the fashionable society were
sipping tea and nibbling sandwiches in the middle of the afternoon.
