Dry Aged Beef

• Who doesn’t love the taste of well done dry aged beef?

• It may take a little longer to prepare but it is well worth it

• Ever thought about dry aging beef is possible at home?

How does dry aging work?

• All beef should be dry aged for several weeks before it is cooked

• This allows the natural enzymes in the meat to break down muscle tissue

• Breaking down muscle tissue will help make the steak more flavorful and tender

Dry aged beef

• Most beef is wet aged and sealed in plastic wrapping, which seals in moisture and minimizes its weight loss

• Dry beef is uncovered and exposes to air allowing it to dehydrate and better concentrate the flavor

• Dry aging is more expensive than wet aged beef
