• Mechaniza)onof cassavaprocessingopera)onswillplaya pivotal role in removing the nega)ve a7ributes of thetradi)onalprocessingtechniquesandpromote)melylargescaleprocessingofthetubersinhygienicenvironment.
• It has beenwell documented that cassava peeling is themajorchallengeofcassavaprocessing inNigeria(Nwokedi1983; Olukunle et al., 2006; Olajide and Jekayinfa, 2007;Egbeochaetal.,2016).
• Several a7empts have been made at solving theseproblems which resulted in the development of varioustypes of cassava peeling machines (Olukunle andAdemosun,2006;Akintundeetal.,2005)

• The fabricated cassava peelingmachine at the speed of1600 revolu4on per minute had an average peelingefficiency of 79.18% and an average flesh loss of 5.09%forthe2varie4es.
• However, when the speed was raised to 2600 rev/min
therewasanaveragepeelingefficiencyof63.22%andanaveragefleshlossof5.95percentforthe2varie4es.
• Hence, lowspeedofrota4onofthepeelingmachinewill
increase the peeling efficiency and decrease percentagefleshlossandthepeelingprocessiseasiertocontrol..
DISCUSSION

• The configura4on resulted into careful removal of thetuber peels achieving > 90% flesh recovery at averagerota4onalspeedof1600rpm<Nt<2600rpm.
• The average peeling efficiency of the machine was58.6-85.75% depending on the maturity (age) andvariety.
