Edible? Yes. Appetizing? Not always. This week, Tidbits cooks up some unusual foods that you might not eat if you knew what they were! • Is it offal or awful? Maybe both! Offal is the term chefs use to refer to the entrails and organs of animals, such as brains, hearts, kidneys, liver, tongue, pancreas and glands.• When you hear the word “sweetbreads,” don’t think banana or pumpkin bread. It’s actually the culinary term for the thymus glands of a lamb, pig or calf, located in the throat and neck. Most often, the glands are soaked in salt water, then poached in milk, after which they are fried. • Head cheese isn’t really cheese at all, but rather a mix-ture of the meat and tissue found on a pig’s skull, set in gelatin. • Remember the old advertising phrase, “There’s always room for Jell-O”? How about a gelatin mold made with meat stock? Add cold pork, chicken, hard-boiled eggs and some vegetables, and you’ll end up with a concoc-tion known as aspic. Although some cooks add unfla-vored gelatin to the mix for a firmer mold, traditional aspic uses the coagulated broth remaining after boiling an animal’s head and bones.

EDIBLES (continued):• Another place you’ll see slimy gelatin cover-ing a chunk of meat is when you open up a can of SPAM. This little tin contains chopped pork shoul-der and ham meat, hence the name, Spiced Meat And Ham. First manufactured in 1937, the lun-cheon meat was a popular staple for soldiers dur-ing World War II. Since its invention, more than seven billion cans have been sold. • At holiday time, many Norwegians fix a tradi-tional dish known as Smalahove. This yummy dish is prepared first by torching the skin and fleece of a sheep’s head, removing the brain, then boiling the head for about three hours. Arrange some rutaba-gas and potatoes around it on a platter, and there you have your Christmas feast!• You’re not getting dessert when you order black pudding after a meal. Rather you’ll be served a sausage made up of animal blood, fat, rolled oats and spices. Depending on where you live, that blood could come from a pig, cow, sheep, duck or goat. Some recipes add chestnuts, sweet potato or barley to the mix. A yummy Asian snack, the pig’s blood cake, combines blood with sticky rice, fries it and serves it on a popsicle stick. • The process of making Polish blood soup is a tricky one. The head of a live duck must be chopped off and its blood collected in the cook-ing pot. Throw in some vinegar, onions, celery, parsley, sugar and some dumplings, and there you have it! Some cooks like to add dried fruit, such as prunes, pears or apples. • When folks down South talk about eating chit’lins, they are referring to chitterlings. This lip-smacking dish is the small intestines of pigs, boiled for several hours, then battered and fried and served with vinegar and hot sauce on the side.

• Ask for a plate of menudo, and what you’ll get is an order of beef tripe, made from the rubbery lining of the stomach of a cow, sheep, goat, pig or deer. Your favorite Mexican restaurant might gar-nish it with jalapeno peppers.

• No matter what you call them — Rocky Moun-tain oysters, cowboy caviar, Montana tendergroins or bull fries — it doesn’t change the fact that they are bull testicles, coated in flour and deep-fried. The people in some states love this “appetizer” so much, they hold entire festivals around them, such as Eagle, Idaho’s “World’s Largest Rocky Moun-tain Oyster Feed” and Montana’s “Testicle Festi-val.”

• Not all tacos are created equal! Lengueta de la vaca are tacos made with cow tongue, while Tacos de Cabeza include all parts of the cow’s head, in-cluding eyes and lips.

The geoduck has a long meaty siphon it uses to suck in plankton when feeding. That portion of this mollusk is usually cooked fondue-style and dipped in soy or wasabi sauce.• Folks in Sardinia, Italy, may change the way you think about cheese. Their casu marzu starts with a sheep’s milk Pecorino cheese but with one variable. Whole cheeses are left outside so that the Piophila casei or “cheese fly” can lay its eggs inside the cheese, as many as 500 eggs at one time. Once the eggs hatch, the larvae eat their way through the cheese, and their acidic digestive juic-es break down the cheese’s fats, resulting in a very soft cheese. There are usually thousands of little white worms in a casu marzu cheese ready for the market. It’s up to the individual diner whether to scoop out the maggots before eating. • If your plate is filled with the Bosworth, Fal-staff or Bedford Fillbasket varieties, you’ll soon be eating one of the most disliked vegetables, the Brussels sprout. This vitamin-rich cruciferous veggie belongs to the same family as the cabbage, collard greens, broccoli, kale and kohlrabi. Women Business Owners Need Retirement Plans

If you’re a woman who owns a busi-ness, you’ve got plenty of company. In fact, women own more than 10 million U.S. companies, and wom-en-owned businesses account for about 40% of all privately held firms in the U.S., according to the Center for Women’s Business Research.

Clearly, the good news is that women like you are entering the small-business arena at a rapid pace. The not-so-good news is that you may be facing a retirement savings gap in comparison to male business owners. To get a sense of this gap, consider these statistics:

According to the U.S. Small Business Administration’s Office of Advocacy, 19.4% of male business owners have 401(k) or similar plans, compared with just 15.5% of wom-en owners.The percentage of female business owners with Individual Retirement Accounts (IRAs) is about the same as that of male business owners — but the men have more money in their accounts. The average woman’s IRA balance is about $51,000, compared with $91,000 for men, according to a recent report by the Employee Benefit Research Institute. Although these figures change constantly with the ebbs and flow of the market, the difference between the genders re-mains significant.One way to help close this savings gap, of course, is to set up a retirement plan for your business. But for many wom-en business owners (and male owners, too), the perceived cost of setting up and running a retirement plan has been an obstacle. However, the retirement plan market has opened up considerably for small business owners over the past several years, so you might be surprised at the ease and in-expensiveness of administering a quality plan that can help you build resources for your own retirement — and help you attract and retain good employees.

With the help of a financial professional, you can consider some of the myriad of plans that may be available to you: Owner-only 401(k) — This plan, which is also known as an individual 401(k), is available to self-employed indi-viduals and business owners with no full-time employees other than themselves or a spouse. “I am just too busy to read my Bible!” That is a response I hear from many Christians, they get up early, they fall into bed late. In between there is shuffling the kids of to this sport and to that function and to this activity, there is just no time in the day reading their Bible. People’s schedules today are so jammed packed, the demands we have so heavy that it seems difficult or maybe even impossible to give any attention to reading God’s Word.

But if the truth were really told, we don’t have time not to! When you take the time to put the Word of God inside of you, you become so full of the Word instead of the world, that when trouble does come, it is the Word that is the very first thing to come out of your mouth.Listen to Joshua 1:8 (NLT) Study this Book of Instruction continually. Meditate on it day and night so you will be sure to obey everything written in it. Only then will you prosper and succeed in all you do.

We are all busy; we all have tremendous demands that are made on us every day. But God promises us right here, that if we will keep His Word in front of us, make His Word a priority in our lives, then we will know how to prosper and to succeed in all that we do. Now, that sounds like a time saver to me. Because we can be so busy, but just being busy does not translate into success. But putting God’s Word first, meditating and thinking on it, fixing our mind on it, makes it become a reality in our heart. And then God’s promise to you and to me, is that we will prosper and succeed in all you do. I don’t know about you, but that sounds like a sure road to success to me!

What is in a standard homeowners insurance

policy?A standard homeowners insurance policy includes four essential types of coverage. They include:

Structure- This part of your policy pays to repair or rebuild your home if it is damaged or destroyed by fire, hurricane, hail, lightning or other disaster listed in your policy. It will not pay for damage caused by a flood, earthquake or routine wear and tear. Most policies include a small amount for detached structures on the property such as sheds and barns.Personal Belongings- Your furniture, clothes, sports equipment and other personal items are covered if they are stolen or destroyed by one of the covered perils. Most policies do a percentage of the dwelling amount for personal property. Generally, it’s in the 60-70% range of your dwelling amount.

Expensive and unique items such as jewelry and furs are covered but are generally limited to about $2,500. For any unique items/collections that you have, it’s best to contact your agent and ask if there’s a limit. If there is, you might need to schedule it onto the policy. That insures it for full value and eliminates any deductible for that item.

Liability- This is your lawsuit protection. Most policies come standard with $100,000 but it’s usually worth it to increase it to at least $300,000. Doing so will normally only add about $2 a month to your policy and triples your coverage.

Additional Living Expenses- This coverage is used to pay for your out-of-pocket expenses while you’re displaced from your home due to a covered loss. This can range from hotel rooms to dry cleaning. This includes most of the costs that are incurred from not being able to live in your own home.

Remember, this is just a quick summary of the standard coverages. There are a lot of other good options available. The best thing to do is call your agent and compare your needs to your coverages.

¥ On Oct. 9, 1635, religious dissident Roger Williams is ban-ished from the Massachusetts Bay Colony by the General Court after speaking out against the right of civil authorities to pun-ish religious dissension. Williams established a settlement called “Providence” in Rhode Island, open to those seeking freedom of conscience.

¥ On Oct. 6, 1866, in Indiana, the Reno Gang carries out the first robbery of a moving train, making off with $10,000. This new method of sticking up moving trains in remote locations low on law enforcement soon became popular in the American West.

¥ On Oct. 3, 1917, the U.S. Congress passes the War Revenue Act, increasing income taxes to raise money for the war effort. A graduated tax system was introduced, with rates starting at 1 percent and rising to 7 percent for taxpayers with income above $500,000.
