Fair Trade Labeling
Just Us! The Beginnings We called ourselves Just Us! because we were
just a small group of friends who had very
little in the way of business experience or
resources, but really believed we could do our
bit for social "justice".
And it wasn't just talk. We wanted to be true to
our convictions and consistent with the
standards set out for Fair Trade co-ops in the
Third World:
Democratic Work for the common good Environmentally responsible Transparent Accountable to members
This is very unusual, even for businesses
involved in Fair Trade. If you look at our
organization, our mission and our values,
our reporting and distribution of profits, you
will see these standards reflected.
Fair Trade is a trading partnership based on dialogue, transparency and respect, that seeks greater equity in international trade. Fair Trade organizations, backed by consumers, are engaged actively in supporting producers, awareness raising and in campaigning for changes in the rules and practice of conventional international trade.
Our mission is:
People and the Planet before Profits
J U S T U S ! C O F F E E R O A S T E R S C O - O P W W W . J U S T U S C O F F E E . C O M
Fair Trade certified guarantees:
Minimum price for farmers and workers
Funding for community development, through social premiums
Sustainable environmental practices
Trade and production are open to public accountability
International Labour Standards are ensured
This does not mean, of course, that we don't have to make some profits to survive, but that we don't want to make money by
exploiting the people involved or the movement.

As green coffee is roasted, amino acids and reducing sugars combine, turning the coffee brown,
caramelizing and creating hundreds of compounds that contribute to a vast array of aromatics and nuances. Our
artisan roasting team is constantly experimenting and tasting, driven by a passion to bring out the best possible
aromas, flavours, sweetness, acidity and body in each coffee that we source.
J U S T U S ! C O F F E E R O A S T E R S C O - O P W W W . J U S T U S C O F F E E . C O M
All of our coffees are high-grown, specialty grade organic Arabicas, selected for their clean and distinctive flavours.
We purchase green beans from producers in Central America, South America, the Caribbean, S.E. Asia and
Africa seasonally, during harvest time, and store them in a controlled atmosphere to maintain freshness. The beans are sorted at the country of origin to ensure consistency
and quality and lots are selected specifically for Just Us! by the coffee farmer co-operatives. In some cases our lots are selected from specific small farms with micro-climates that
consistently produce exemplary coffees.

Just Us! Handcrafted Chocolate Chocolate in Canada can never be
local and it is usually grown in areas
that have been clear cut, which
means the need for increased
pesticides. It is second only to cotton
as a major pollutant to our eco-
system. Workers are paid very low
wages, usually earning less than $150
per year. There are estimated to be
100,000 children working on
chocolate farms in deplorable
conditions.
We buy our organic chocolate from
Fair Trade Co-operatives in Bolivia
and the Dominican Republic. The El
Ceibo Co-op in Bolivia is made up of
600+ small farmers determined to
improve their lives. The Concando
Co-op in the Dominican Republic has
grown much larger with 9,500
members. The co-op has spun off
more business making wine, liquor,
jams and organic fertilizers.

P A G E 9 F A I R T R A D E & O R G A N I C
Why choose Just Us! Coffee Roasters? The Just Us! Co-op set out in 1995 to become Canada’s first Fair Trade coffee roaster. It was a small, but bold
experiment to show that the coffee business, and all businesses, could be done differently,
putting “People and the Planet before Profits”™ locally and globally. We wanted to make connections with
small-scale organic coffee farmers around the world and conscientious consumers in Atlantic Canada and beyond.
Eventually, we would also get into tea, chocolate and sugar but our collective aim was always the same: To come together to do something meaningful, to make a difference, to make it exciting and hopefully
to make it minimally profitable so we can continue to have our jobs. Thank you for your continued interest, collaboration and support.
