What is IDDSI? IDDSI (International Dysphagia Diet Standardisation Initiative) is a global
standard with terminology and definitions to describe texture modified
foods and thickened liquids used for individuals with dysphagia.
The IDDSI FrameworkThe framework consists of 4 levels of viscosity for drinks identified by:
1. Colour
2. Numerical Reference
3. Text/Word Descriptor
Why?IDDSI is the result of three years ongoing work by the International Dysphagia Diet
Standardisation Committee, a global initiative to improve the lives of people living with dysphagia.
Accordingly, the Australian National Standards for texture modified foods and drinks
published in 2007 have moved to the new IDDSI terminology from 1 May 2019. This has
been adopted by the Dietitians Association of Australia, Speech Pathology Australia and
the Institute of Hospitality in Healthcare.
The IDDSI framework outlines standardised names and descriptions of food and
drink used in medical and community settings to reduce choking risk.
