Glassy, week-old snow crunches underfoot as our small group digs in with snowshoe cleats and climbs the twisting trail past spruce, Douglas fi r and cedar.
We head east, along the south side of the Cheakamus River. The trail isn’t especially diffi cult, but my thighs are burning and I’m quickly out of breath.
The reason? This isn’t my fi rst bout of physical effort today.
We were up with the cloud-covered sun to do a challenging circuit class with trainer Mark Coates (he says it was an hour, but there is no clock in the gym and I’m certain I spent longer than that doing bicep curls and squats and spinning on the stationary bikes).
Now he’s leading us on this far-more-picturesque excursion, and while the fresh air feels good, it’s even better when he stops, unslings his backpack and pulls out bags of nutty, thick-sliced bread, a thermos of miso soup, herbal tea and energy bars.
Now this is my kind of exercise.
Coates is the high-energy coach and managing partner at Innovative Fitness in Whistler, a
new location of the Lower Mainland training company that is tucked into the west wing of the luxe Nita Lake Lodge.
The combination of his workouts matched with Whistler’s epic outdoor playground, comfy accommodations at the lodge, its tranquil new Ashram Spa (which also offers yoga classes), and the wholesome, mouth-watering food available throughout the resort makes for an intriguing, and inspiring, take on wellness.
It is somehow not as diffi cult to crank out one more ab roll on the exercise ball when you know you’re booked in at the spa later for for Udvartana, an Ayurvedic treatment that includes full body exfoliation using a specially blended herbal paste. And there’s nothing that eases aching muscles like a gentle, day-after yoga class. It feels like the perfect place to focus on health; it’s hard not to feel good here.
That matches well with the philosophy of Innovative fi tness, which Coates says is to train toward a fi nal destination, whether it be rehabilitating an injury or training for a triathlon. The notion of getting away for health is one that’s growing in popularity, says Simone Lovell, personal trainer and owner of Eat Play Love Fitness. The company, in operation for six months, coordinates three- and seven-day fi tness vacations to the Painted Boat Resort Spa and Marina on the Sunshine Coast.
“In the States, it’s a trend that’s been growing at a really fast pace, but the concept is not as well known in B.C.” says Lovell. She loves leading the getaways, because she feels like she can have a greater impact on her clients over the course of a few days, rather than in one hour per week.
“When I’m personal training, I feel limited in how much I can help. We work out for an hour, and then the rest of the week you fall back on bad habits.”
During the fi tness vacation, Lovell and other instructors lead participants though fi ve to six hours of fi tness activities a day, including bootcamp, core and ab exercises, hiking and yoga. Healthy meals and a fi tness assessment are also
included. But more than that, Lovell says she gives them tools that will help them achieve success with their fi tness goals.
“When I’m personal training, I feel limited in how much I can help. We work out for an hour, and then the rest of the week you fall back on bad habits.”
“It’s a really nice getaway,” she said. “A lot of people use it as a kickstart to motivate themselves.”

The following is one of the healthy, fl avourful and easy-to-prepare recipes found in Cooking with Cory: Inspirational Recipes for the Fearless Cook:
Spaghetti Squash with Peppers and Parmesan ■ 1 medium spaghetti squash, halved■ ½ cup (125 ml) grated parmesan cheese■ 1 tbsp (15 ml) butter■ ½ tsp (2 ml) sea salt■ ½ tsp (2 ml) freshly ground black pepper■ ½ cup (125 ml) fi nely chopped fresh basil■ ½ cup (125 ml) shredded mozzarella cheese■ 1 red bell pepper, seeded and fi nely sliced■ 2 tbsp (30 ml) red wine
Preheat the oven to 350°F (180°C). Place the spaghetti squash cut side up in a 10-×15-inch (four litre) casserole dish. Add one inch (2.5 cm) of water to the dish. Sprinkle ¼ cup (60 ml) parmesan cheese in the squash halves. Dot with the butter and season with salt and pepper. Bake in the centre of the oven for 30 minutes or until the squash is tender.
Scoop the spaghetti-like fl esh out of the skin and place in a large bowl. Toss with the basil, remaining ¼ cup (60 ml) parmesan, mozzarella, red pepper and wine.

In the face of adversity, Cory Parsons not only committed himself to his recovery, but to helping others similarly reach for their dreams.
A motivational speaker, sports advocate and athlete, the Nanaimo resident has recently added cookbook author to his list of titles.
More than just a cookbook, Cooking with Cory: Inspirational Recipes for the Fearless Cook (published by North Vancouver’s Whitecap Books), references Parsons’ personal story of resilience. Twelve years ago, his life took a turn when, at age 23, he had a diving accident. While he’s come to terms with his life-changing spinal injury and made incredible gains, it’s been a tough road.
“In the book, I speak of a time when I’m in a hospital bed and . . . I’m frustrated because everything is diffi cult and new and not the way it was and I was quite sad and upset about it all,” he says.
Initially, Parsons was extremely paralyzed, almost to the point of being unable to speak. He recalls a nurse offering words of encouragement, telling him he’d one day regain his independence.
“While she’s telling me that, she’s feeding me a spoonful of soup because I’m not able to move my arms at all,” he says. He didn’t believe her, but as time wore on, Parsons’ level of ability did improve. Not only was he able to feed himself, he was able to get back in the kitchen and renew an early interest in cooking.
“I hit the bottom, broke my neck, and that left me in a wheelchair, but that didn’t diminish my passion for cooking or for food,” he says. In recent years, he’s been working on developing a cooking show and opted to write the cookbook.
“I wanted to not lay in a bed and have somebody tell me ‘You’re going to be able to do this or you’re going to do that,’” he says. “I wanted to be able to have something tangible in my hands. And I can show up at that hospital . . . when some new poor guy or girl is in there with a spinal injury and someone’s feeding them soup, I can roll in there and say ‘You know what? I’m not going to tell you that you can be independent and cook, I’m going to show you. Here’s a book, here’s videos and this is me, and I was right where you are 12 years ago.’”
Parsons hopes the book will have widespread appeal, not just to those with spinal-cord injuries, but to anyone who may be timid in the kitchen. “If I can do it, they can do it. That’s the message behind it.”

pork, beef, poultry (with the skin on) and dairy. They can also be found in some vegetable oils, like palm, kernel and coconut oil. The other “bad” fat is trans fat. Trans fats are made through a process called hydrogenation, where manufacturers add hydrogen to unsaturated fatty acids. This increases the shelf life and improves the fl avour of foods that contain hydrogenated oil. Trans fats are found in a wide variety of foods, including potato chips, frozen foods, fast food, cake mixes and margarine. Both saturated and trans fats raise the levels of total and low-density lipoprotein (LDL) cholesterol in our bodies, reduce our levels of high-density lipoprotein (HDL), or “good” cholesterol, and increase the risk of coronary heart disease.
Then there are the “good” fats: unsaturated fats, specifi cally polyunsaturated and monounsaturated fats. These fats are usually plant-based, though they are occasionally found in certain meats, and they are usually liquid at room temperature. Unsaturated fats actually reduce blood and LDL cholesterol and raise HDL, or “good” cholesterol. It is considered benefi cial because it cleans excess cholesterol out of our bodies and transports it to the liver for processing. Unsaturated fats are commonly found in vegetable oils and nuts.
Health Canada recommends no more than 30 per cent of your daily caloric intake be made up of fat, and only 10 per cent of that should be saturated fat. Trans fats are non-essential and should be left out of a healthy diet. In fact, The Trans
Fat gets treated like a dirty word. We avoid it like the plague, searching for “fat-free” labels on food and depriving ourselves of a spoonful of ranch dressing on our salads. But the truth is, fat is an essential part of a healthy diet. Fat helps maintain our body temperature, protects our organs and body tissue and is absolutely essential for carrying fat-soluble vitamins A, D, E and K. In addition, some fats play a large role in brain development, proper wound healing, vitamin absorption, regulating metabolism, controlling infl ammation and skin and hair growth.
So why does fat get such a bad rap? Because over-consumption
can cause serious problems. Obesity is an excessive accumulation of body fat. Excess body fat clogs blood vessels and makes it more diffi cult for the heart to pump blood through our bodies. Obesity can cause strokes, cardiovascular disease, sleep apnea, high blood pressure, gallbladder disease, osteoarthritis, Type 2 diabetes, coronary heart disease and some cancers. Furthermore, excess body weight can lead to depression and anxiety. The key to healthy fat consumption is to discriminate between the “good” and “bad” fats, and remember to enjoy fats only in moderation.

Fat Task Force, a partnership between Health Canada and the Heart and Stroke Foundation, has been pushing the Canadian government to regulate the amount of trans fat found in foods to two per cent of the total fat content in spreadable margarine and fi ve per cent in all other foods.
Fats come with benefi ts, but it’s important to think about consumption. Calories from fats are easily stored in the body and contain more energy than both carbohydrates and protein. If you’re smart about your intake, you will stay fuller longer, and it may cause you to eat less. On the other hand, if you eat an unbalanced
diet high in fat content, you are at risk for over-consumption, leading to excess weight, obesity and all that comes with it.
