Sweet potato is a stem tuber which matures in about 3-4 months and could be harvested at most four times a year. It comes in many varieties which
can all adapt to the Nigerian soil and the FCT in particular. Trails from the soil tests shows that the Orange Flesh sweet potato can be planted in all
the various Area councils. The orange flesh sweet potato is actually a variety that’s outstanding in the
effective use of tuber crop .

In promoting the consumption, Production and Utilization of Orange flesh Sweet potatoes (OFSP) because of the low sugar and Vitamin A content.
We intend to process and the uses of Orange Flesh sweet potato from the traditional boiling and eaten to the next level of baking ,frying, and flouring of sweet potatoes for a better Utilization of the sweet potato products.
Its also a source of Employment and foreign exchange by linking orange flesh sweet potato farmers ,processors, marketers, investors,& equipment fabricators thereby providing employment for the Health sector, both formal and non formal school graduates , women and enables foreign exchange earning. PROCESSING• Potato processing at the rural settings level has considerable
potential to reduce post-harvest losses and to generate income through the manufacture of value-added food products, processed potato products, especially potato flour, is highly versatile in manufacturing convenience foods, because it is rich in starch, potato flour can improve the functional properties of several food products.It has its own distinctive flavour and texture but is sufficiently bland to be incorporated easily into traditional local preparations. The nutritional advantages of potato have been demonstrated in comparison with other major staples and vegetable crops in terms of the total number of people who can be fed, and as a food for individual consumers.

CONTD PROCESSING VALUES
• Potato flour ranks quite high in its supply of principal nutrients. Its protein content is superior to that of cassava and yam flour, slightly inferior to that of refined maize meal and wheat flour, and similar to that of rice, Potato flour has higher levels of fibre than refined wheat flour, maize meal, and rice but lower levels of fibre than cassava and yam flour. Its carbohydrate and energy contents are comparable to those of similar foods and potatoes contain lower levels of phytic acid than other plant foods and reasonable amounts of all the essential amino acids except methionine and cysteine. They are well balanced in terms of protein and energy.
• Raw potato flours were made from cultivars by slicing, blanching, sulphitation, and drying in a hot air dehydrator, and were compared for proximate composition and functional properties.
