Gingerbread PancakesThis gingerbread version spices things up a bit with the inclusion of ginger, cinnamon, nutmeg, and molasses for a warm Christmas morning delight.
Ingredients• 2 cups all-purpose flour • 1 teaspoon ground cinnamon • 1 teaspoon ground ginger • 1 teaspoon ground nutmeg • 3/4 teaspoon baking powder • 3/4 teaspoon baking soda • 1/4 teaspoon salt • 2 eggs, slightly beaten • 1-1/4 cups buttermilk • 1/3 cup molasses • 1/3 cup strong coffee • 3 tablespoons cooking oil • 1 recipe Lemon Sauce(see Recipe Center) or 1 recipe Brandied Lemon Butter (see Recipe Center)
DirectionsIn a mixing bowl combine flour, cinnamon, ginger, nutmeg, baking powder, baking soda, and salt. In another mixing bowl combine eggs, buttermilk, molasses, coffee, and oil. Add to flour mixture. Stir just until combined but still slightly lumpy.
Heat a lightly greased griddle or heavy skillet over medium heat until a few drops of water dance across the surface. For each pancake, pour about 1/4 cup batter onto the hot griddle. Spread batter into a circle about 4 inches in diameter.
Cook over medium heat until pancakes are golden brown, turning to cook second sides when pancake surfaces are bubbly and edges are slightly dry (about 1 to 2 minutes per side). Serve immediately. Makes 16 pancakes.

When it comes to Christmas presents, kids have a sixth sense; they can smell presents the way a Mom can smell chocolate. So here is a list of some of some creative ways to hide presents.
Fool them with the location. They always expect the attic, so store them under the bathroom or kitchen sink, or in the laundry room in brown paper grocery bags.
Put them in storage tubs marked “summer clothes,” or “Valentine’s Decorations.”
Place them on a high shelf in a linen closet.
Hide them in suitcases stored in the attic. Or use the empty Christmas ornament storage boxes and tubs to store the presents.
Place small gifts inside an old purse, plastic bag or briefcase, and hang it in a closet in a spare bedroom that is not used very often.
Office conference rooms are rarely ever visited by kids. Leave your gifts at work.

This soft spoken wife and mother of three is what many would coin a "super-acheiver", though Letty would never use that term herself. To her, what she does in her normal day is ........ well ...... just normal

Can anyone really do it all? Well, no, of course not. But Letty manages to juggle a part-time career, is involved in numerous community groups, stays abreast of everyone’s homework and attend every child’s after school
event in addition to having sparkling bathrooms and floors and folding and putting away all the laundry. For her down-time, Letty runs. Not just a jog around the block, but state-wide marathons.
"My major challenge is time," Letty said of her life. "I feel like I run around all day but by the end of the day what I really want is just some good sleep." Then Letty said, "Oh, I also just volunteered to help run the polls on election
days. Sleep may be just a dream for her active soul.

Letty is the first to admit that her husband Chris has helped afford her the time and support of the choices she makes to be heavily involved in community volunteer work. Letty says she is just “an average Mom” and does not consider all the different hats she wears each day to be special but we do!

Let’s Find a Cure for Curtis
When Curtis was born he was a happy, little boy, with no sign of any problems ahead. But by the age of six months Laura knew that something wasn’t quite right. He couldn’t sit up and other motor skills were not on pace for his age. His pediatrician termed him to be a “floppy baby” which means that he had inadequate tone of his muscles. At one year old, Curtis was still not crawling or pulling up to a standing position. By now, both parents and doctors agreed that medical testing must begin. Through countless tests and therapy sessions he was finally diagnosed with Mitochondrial Disease.
Mitochondrial Disease is a genetic disorders that result from failures of the mitochondria which are the “power plants” inside living cells. They are responsible for 90 percent of the energy needed by the body to sustain life and support growth. When mitochondria fail, less and less energy is generated within the cell. Cell injury and even cell death follow. If this process is repeated throughout the body, whole systems begin to fail, and the life of the person is severely compromised, changed or even ended. Currently there is no cure.
When you look at Curtis on the outside, you cannot tell immediately that he has a life threatening medical condition. However, Curtis is
far from being like his friends. Everyday life is exhausting for Curtis. Just going to school and doing homework wipes him out. Because using your brain also requires energy, he has a hard time studying. He cannot get too hot or cold and therefore cannot play outside with his friends. He cannot ride a bicycle because he does not have the muscle strength to peddle. Curtis cannot play sports. Curtis takes 26 vitamin pills each day. A simple cold could be life threatening for Curtis. Curtis has a 20% chance of surviving his teenage years.
