Signs and Symptoms

Trichinosis

Trichinosis, also called trichinellosis, iscaused by eating raw or undercooked meatof animals infected with a species of wormcalled Trichinella. 

Headache

The first symptoms are nausea, diarrhea, vomiting, fatigue, fever, and abdominal pain. Othersymptoms include headaches, chills, cough, eye swelling, joint pain, muscle pain, itchy skin, andconstipation. Symptoms usually start 1 to 2 days after eating contaminated meat. Most symptomsgo away within a few months. In severe cases, death can occur. 

CoughAbdominal pain

Talk to your healthcare provider if you have any of these signs and symptoms.Let your provider know if you recently ate raw or undercooked food. They canrun a blood test or muscle biopsy to see if you have trichinosis. Several drugsare available to treat the illness. 

Infection can only occur by eating raw orundercooked meat containing Trichinella.

The best way to prevent trichinosis is to:

Visit https://www.cdc.gov/foodsafety/keep-food-safe.html for proper foodtemps and handling. 

For wild game (wholecuts and ground), cookto at least 165°F

Cook all meat fed to pigsor other wild animals

Clean meat grindersthoroughly if youprepare your ownground meats

Cook meat andmeat products tosafe temperatures

Cook wild game meatthoroughly

Freeze pork for 20 days

Freezing pork less than6 inches thick for 20days at 5°F will kill anyworms

Do not allow hogs toeat uncookedcarcasses of otheranimals, including rats

Curing (salting), drying, smoking, or microwaving meat does not consistently kill Trichinella. Freezingwild game meats, unlike freezing pork products, even for long periods of time may not effectivelykill all worms.
