Most Americans never will sip the water-melon margarita at Guy Fieri’s behemothTimes Square restaurant, nor savor thechicken Alfredo at the Olive Garden inGrand Forks, N.D.

Yet both eateries somehow shot to thetop of the nation’s culinary zeitgeist in2012, for this was the year of the viralrestaurant review, when the rants andraves of seasoned pros and naive octoge-narians alike got superstar treatment onthe world wide smorgasbord.

It was a year when drought crippledfarmers while Californians clamored forfoie gras. Twinkies died and Paula Deen en-dorsed a diabetes drug. Which is to say, itwas a year when the unlikely was the norm.

While restaurateurs bemoaned the influ-ence of Yelp and other social media reviewsites, 85-year-old Grand Forks Heraldrestaurant columnist Marilyn Hagerty cutthrough the noise, heaping near rhapsodicpraise on the fine dining at her commu-nity’s latest chain restaurant. All shewanted to do was get to her bridge game,but her review became a must-readsensation.

And lest they be considered elite fordissing her devotion to this fine fare, thenation’s culinary upper crust rushed topraise her. It was an amusing — and embar-rassing — display of the food world’s splitpersonality, an ever growing chasm be-tween how real Americans eat, and howreal foodies want real Americans to eat. Ei-ther way, Hagerty did OK for herself, land-ing a book deal with Anthony Bourdain.

Meanwhile, New York Times reviewerPete Wells scored a celeb smackdown whenhe slammed Fieri’s New York restaurant,Guy’s American Kitchen & Bar, in a scathing1,000-word review written almost entirely inquestions. Wells took heat for beating onFood Network’s bad boy, but the review— which tore across Twitter the instant itwas posted — certainly drove hordes toFieri’s tables, even if only to rubberneckthe culinary accident.

Speaking of restaurants taking a beating,the Chick-fil-A chain earned plenty of scorn— and some support — this summer whencompany president Dan Cathy came outabout his opposition to same sex marriage.The dustup spawned online “Chick-fil-Gay”

mockery, but ended with the company say-ing it would stop funding anti-gay marriagegroups.

Another revelation — Twinkies may notlast forever. Blaming a labor dispute for on-going financial woes, Hostess Brands de-cided to close shop this year, taking with itlunch box staples such as Twinkies, DingDongs and Wonder bread. The companysaid it would try to sell off its many storiedbrands, so maybe there is hope for themysteriously enduring snack cakes.

California’s foie gras fans may not get asimilar second chance. Despite oppositionby the state’s restaurant industry, as of Julyit became illegal to sell foie gras — which ismade from goose or duck livers enlarged byforce-feeding through funnel-like tubes.

Back in New York, the too-cool-for-youfolks spent the summer angsting overwhether Brooklyn really did have a hip din-ing scene. Not that anyone outside NewYork gives a flying (artisanal bacon-wrapped) fig. But silly one-upmanship gaveway to legit worry — and unity — when Su-perstorm Sandy dealt a devastating blow tothe city’s restaurant scene.

For this year’s truly hot food scene, youneeded to head south. Because THE Southis where it’s happening. Hugh Acheson, TimLove, John Besh and a gaggle of others are

putting a fresh face on what it means to eatwell when you’re below the Mason-DixonLine, and the rest of the country started towake up to this.

And then there’s Paula Deen, thedoyenne of butter, deep-frying and — atleast this year — public relations traves-ties. Though diagnosed with diabetes sev-eral years ago, she waited until January— coincidentally when she also had linedup a lucrative drug endorsement deal — togo public with it. She came off lookingmoney-grubbing, and an opportunity to ed-ucate Americans about a devastating dis-ease was mostly lost.

But Americans did learn plenty abouttheir hamburgers. In March, the Internet ex-ploded with worry over so-called pinkslime, or what the meat industry prefers tocall lean finely textured beef. Though it hadbeen part of the food chain for years, bythe end of the kerfuffle the product had allbut disappeared.

Filling your grocery cart was — and willcontinue to be — costly. This summer’smassive drought in the U.S. devastatedfamers and drove up global food prices.And the hardship isn’t over. Analysts saywe can expect food prices here to go up byas much as 4 percent in 2013.

Food safety also was a headline grabber.

For the first time ever, the Food and DrugAdministration used newly granted author-ity to shutter a company without a courthearing. In November, the government shutdown Sunland Inc., the country’s largest or-ganic peanut butter processor, after re-peated food safety violations.

Meanwhile, the nation’s kids seem to besick of being told to eat healthier. Nutrition-ists praised the most significant overhaul offederal school lunch standards in years,but the kids in the lunch lines were less im-pressed; schools reported more food land-ing uneaten in the trash.

But the kids won’t get much sympathyin New York City, where a first-in-the-nationban on eateries selling sodas larger than 16ounces means slurping a monster gulper isgoing to require double fisting.

At times this year it felt like the foodworld belonged to the geeks, and the restof us just eat in it. Nathan Myhrvold’s sci-ence chic approach to cooking continuedto woo foodies, and even the more populistfolks at Cook’s Illustrated magazine got inon the act with a new cookbook, “The Sci-ence of Good Cooking.”

Now let’s talk trends. Kale was the un-likely darling of 2011, but it started to loseits luster this year. Beets are making a bidfor top slot, and would actually stand achance if they didn’t stain your fingers somuch. Americans fell in love with darkmeat, finally realizing what chefs haveknown all along — chicken breasts are thetofu of the meat world. Dark meat actuallyhas flavor.

Craft beer remains a growing market,but hipster drinkers know it’s the hard stuffthat’s happening. Barrel aged cocktails andmicro distilleries are raging hot. Chia seedsalso are trying to be hip, and thoughthey’ve wormed their way into numerousbottled drinks, they will forever suffer fromthe Ch-ch-ch-chia! effect. If you want toseem impossibly hip, saute or bake some-thing with coconut oil. But don’t be caughtdead sipping coconut water. That’s so 2011.

By the way, we get it! Any food servedout of a truck or from a restaurant that“pops up” is outrageously better than anyother food. And eating it makes you impos-sibly cool. Now can we please move on toanother food world flavor of the week?

And would somebody please, for thelove of all that is good, please kill off thecake pop phenomenon?

of the Missouri River, Schelhaas said.“I think there were a lot of really good com-

ments from a lot of trappers,” he said. “Theyhave been trapping for a number of years, andthey knew there were bobcats around. Now,they had the opportunity to get a chance to trapthem. Not everyone was successful, but thatwas part of the fun of it. The people I talked towere excited and happy.”

The seven Yankton County cats consisted offour females and three males, Schelhaas said.Six were trapped and one was shot.

The majority of cats in Yankton and BonHomme counties were trapped among the riverhills and along the Missouri River, primarilyalong Lewis and Clark Lake. The cats were largesized, with one cat weighing nearly 30 poundsand another one 20 pounds.

“Everybody I talked to considered it a tro-phy. Of the seven that were tagged in YanktonCounty, only one decided to sell the fur,” thegame warden said.

“Out by the lake, we had one trapper who gottwo cats in legholds in two different traps. Hewas able to take one and release the other one.”

This initial year, the East River bobcat sea-son was limited to one cat per hunter or trap-per. Schelhaas wasn’t aware of any violations.

A REAL LEARNING EXPERIENCEJohnson, like many hunters and trappers,

was aware of bobcats from trail cameras, tracksand the available food supply. He actuallytrapped two cats, harvesting one and releasingthe other. Surprisingly, he trapped his cats inareas where he expected to find fox andcoyotes.

“I had seen some bobcats in several areaswhere I deer hunted in the past. There isn’t ahigh (bobcat) population, but I do think we havea pretty viable population,” he said.

“I talked to several friends, and they werereal excited, especially at the beginning of theseason. I didn’t hear much negative fromanyone.”

Johnson characterized his harvested bobcatas a large male. He didn’t have it weighed, andthe carcass was sent to officials in Sioux Fallsfor testing in accordance with regulations.

“What they learn will bring in lots of informa-tion about the cats,” he said. “I think they willpull quite a bit of valuable data.”

When it comes to the bobcat season, thedata collection will prove as valuable as thesport itself, Schelhaas said. Biologists will com-pile data such as the bobcats’ age, gender, litterrates and food sources.

“We have known there were bobcats in thearea for years. Most of the deaths came fromroadkill or things of that nature,” he said. “Thisis the first time we will get some data and infor-mation on bobcats east of the (Missouri) river. Ibelieve this season will have a positive impactand will help the future of the bobcatpopulation.”

The five East River counties contain primehabitat, Schelhaas said. Those factors includelarge tracts of river hills, the Missouri Riverbanks, the James River with trees and rollinghills, uninhabited areas and adequate foodsources.

GF&P officials believe some of the SouthDakota bobcats migrated from Nebraska, Schel-haas said.

“The bobcats are looking to expand their ter-ritories,” he said. “During the freeze, they goover the river (from Nebraska) and set up theirhome range in South Dakota. And right now, theriver is way down (because of drought). We be-lieve the bobcats are good swimmers. We imag-ine they are crossing the river at a smallerstretch like the Springfield area.”

With outdoors enthusiasts trapping amongthe hills this fall, the cats were aware of thehuman presence even before the East River sea-

son, Schelhaas said.“I have gained a lot more respect for the bob-

cats,” he said. “A lot of people in YanktonCounty trapped for them, but it’s a tough animalto trap. They are very wary of traps and humanactivity in the area.”

PLANNING FOR THE FUTUREThe East River bobcat season was conducted

as an experiment, Schelhaas said. The Divisionof Wildlife will now analyze the data and makeits recommendations to the GF&P commission-ers. Those recommendations could includechanges in length of season, number of cats perlicense holder or some other variations.

“You don’t want to lose too many bobcats, sothey kept it conservative this season,” the gamewarden said. “I think it will help determinewhether we will have a more restrictive season,a more conservative season, a more liberal sea-son or no season at all.”

Schelhaas remains optimistic that the EastRiver season will continue into future years.

“I think we have more bobcats than peoplesuspected,” he said. “We hope to continue man-aging the animals properly, and it looks like wecan support another season.”

Johnson strongly supports continuing theEast River bobcat season and the GF&P manage-ment practices so far.

“I do like how they went into it slow, with theone cat per person limit. I think it’s pretty im-portant,” he said. “It’s a really secretive animal,and it’s hard to get a lot of data out here. Iwould like to see something similar next year.”

With the success of the recent season, John-son sees the possibility of increasing the limit totwo cats per person or some other formula. Hestrongly recommends holding another round ofpublic meetings to gather input from landown-ers, outdoors enthusiasts and conservationofficials.

“This season, these cats were consideredonce-in-a-lifetime opportunity for some people,”Johnson said.

“At the same time, if there is a viable popula-tion, there is no reason why we can’t have moreopportunities in the future.”

“It involves all of the elementary schools, and we’ve been col-lecting for years now,” he said. “The kids don’t always knowwhere it goes, so this will be good for them. I know it can be apain sometimes for the parents to collect the tabs, but it does goto a good cause.

Schwartz will present workshops in Yankton for three daysbeginning April 25, and will also hold a presentation for teachersand parents to teach them ways to make math and science inter-esting, Struck said.

Holan will also keep collecting pop tabs at her home, whereshe said anyone in the community can drop them off on herfront porch. Her address is 603 Broadway Ave.

“I think if we get the whole community involved, because noteverybody has kids in school or goes to church, we can reachour goal. Although it started as a way to show our kids 1 millionof something, it’s still a good cause to teach children to give toothers.”

The commission attended to a varietyof business related to the new year. ThePress & Dakotan and The Observer weredesignated as the official newspapers forthe county, polling centers were estab-lished and an annual strategic planningsession was set for 8 a.m. Jan. 22.

It was also decided that members ofthe drainage board formed in 2012 will beeligible for $25 plus mileage for eachmeeting — the same as planning commis-sion members.

A variety of zoning requests were alsoapproved, including:

• a conditional-use permit for a lagoon

at the old Jo Dean’s facility north of Yank-ton along Highway 81 to serve the truck-ing business located there. The requestwas made by Doug Marquardt;

• a variance for a camping unit alongSummer Street. Warren White requestedto live in a camper due to his house burn-ing down last year. The commission de-cided to allow the variance for sixmonths as a long-term plan for living onthe property is made. They are also re-quiring White to address some publicnuisance issues on the property; and

• a conditional-use permit for a 30-foot wind tower along Oak Park Road.Ronald Lorenzen made the request, andsome neighbors Thursday expressedconcern it would interfere with their sce-nic views and the nature in the area.However, commissioners didn’t think theplacement of the tower on the 60-acreproperty would be an obstruction andfelt it fit within the zoning ordinance al-lowance for such structures.
