RCAP • Who We Are The Retail Confectioners Association of Philadelphia was founded in 1918 for the purpose of sharing information and knowledge about candy making and retailing among Philadelphia area confectioners. Currently we have over 300 active members and associate members throughout the United States, Canada, Mexico and South America.

RCAP • What We Do Our goals are simple: inform, educate, enlighten. From independently owned mom and pop businesses to multi-million dollar corporations, we aim to provide a network for confectioners to share ideas, solve problems, and develop their candy making skills. The RCAP is perhaps best known as a sponsor of the Philadelphia National Candy, Gift & Gourmet Show held twice a year. It is the largest trade show dedicated to the retail confectioner, and attracts exhibitors and speakers from across the country and around the world. Admission to these shows and all educational seminars are free of charge for trade members. In addition, we sponsor plant tours, educational meetings and a 3-day spring getaway trip.

HISTORY OF THE SHOW

The Retail Confectioners Association of Philadelphia (RCAP), a non-profi t Trade Association, was founded in 1918 for the purpose of sharing information and knowledge about candy making and retailing among Philadelphia area confectioners. Over the years, the local focus has expanded and the RCAP currently has over 300 active and associate members throughout the United States and Canada. Today these candy makers and suppliers still share information to maintain a very high quality chocolate and hard candy. The Association holds educational meetings, plant tours, a spring getaway tour and two national candy, gift & gourmet trade shows each year.

The History of the Philadelphia National Candy, Gift & Gourmet Show

Founded in 1949 by a few local suppliers displaying at Christmas and Easter RCAP meetings, it was an instant success. Housed in Philadelphiaʼs Broadwood Hotel then the Ben Franklin Hotel, the show grew steadily. In 1961 it was moved to the Exhibit Hall of the Sheraton at what is now Philadelphia Suburban Station. Exhibitors numbered 35, some with multiple booths. In 1974, the show celebrated 25 years with the 20 “originals” still in the buyers guide. By the mid-eighties, relocation was critical to accommodate continued expansion and in 1984, the show moved to the Valley Forge Convention Center. By then, 85 exhibitors were showing, many with expanded multi-booth displays. Attendance soared into the thousands and by 1989 fl oor space had doubled again. In 2006, the show moved to The Atlantic City Convention Center in order to accommodate all exhibitors on one show fl oor and provide a destination for attendees to incorporate business, networking opportunities and fun into their visit. In January 2016, the show moved back to the suburban Philadelphia area at the Greater Philadelphia Expo Center, co-locating along with the Philadelphia Gift Show.

Kirsten Pankowski is a Philadelphia native who has been working at Kelly’s Kandy for 5 years. She graduated from the Arcadia University Fine Arts Department in 2011 with a BFA in Painting. After working with standard panting mediums, Kirsten experimented with chocolate. When asked about the challenges of painting with chocolate Kirsten says, “Painting with chocolate is a vastly diff erent process when compared to oil or acrylic paints. Chocolate must be tempered and maintain a specifi c consistency to be workable. Additionally, it dries signifi cantly faster. So you must work quickly which is why it is the most demanding ways to paint.” Since Painting with chocolate, Kirsten has completed numerous works for the RCAP, Candy, Gift & Gourmet Shows and “Hot Chocolate” events raising money for ALS.

Joe Sofi a spent his fi rst 18 years in the confectionery industry working for Nestle USA in engineering, product development, manufacturing, and sales of bulk Peter’s Chocolate. He came to Cargill when Nestle sold the Peter’s brand and has been with Cargill Cocoa & Chocolate the past 14 years, working in sales and as their chocolate specialist.

11:30am - 12:30pm Bean to Bar DemoDR. BALU M. BALASUBRAMANIAN AND MS ANDAL BALUPresented by Cocoa Town, Dr. Balu M. Balasubramanian and Ms Andal Balu. In this demonstration participants will see the different steps used in bean to bar, small batch craft chocolate production. The three-day chocolate making process is compressed into one hour, as attendees are exposed to each processing step including roasting, cracking, winnowing the beans and fi nally grinding the nibs to chocolate liquor. Attendees will also learn how to make chocolate in their kitchen with min-imum investment, using alternative tools.

1:15pm - 2:15pm Scaling Up ProductionCHEF CHARLES NIEDERMYERJoin Chef Charles Niedermyer, 2017 Top Ten Pastry Chef of America, chocolate expert, and instructor at Pennsylvania College of Technology, for a discussion of important considerations when expanding your production capabilities. Extending shelf-life is a vital component to growing the business. Instruction will focus on formulation, handling practices and storage of various chocolate confections.

2:30pm - 3:30pm Chocolate and Island Breezes-Chocolate and Rum PairingLAURA TORNICHIOKick back and enjoy a relaxed approach to the rich, complex fl avors found in these sultry pairings. Learn about strategic partnering through collaborations that elevate your brand. Presented by Laura Tornichio, Guittard Chocolate Company, and featuring Cane Land Rum. 10:30am - 11:15am Cocoa is more than Chocolate- Starting a Cocoa Related BusinessDR. BALU M. BALASUBRAMANIAN AND MS. ANDAL BALUPresented by Dr. Balu M. Balasubramanian and Ms. Andal Balu of Cocoa Town, this is a detailed presentation of opportunities for starting a cocoa related business. From handicrafts and paper making to chocolate, different parts of the cocoa tree provide the components for unique businesses. Learn the diverse options with examples from around the world. Both seasoned and aspiring entrepreneurs can build a strong business while lifting the cocoa farmer’s economic status.

11:30am - 12:30pm Sweet Intelligence – Sugar, what is its purpose and do we need it? Consumers are more health conscious than ever; but sometimes want to have their cake and eat it too! This panel discussion explores the importance of both function and fl avor attributes of sugar in confection; and considerations for using other sweetening alternatives including honey, coconut sugar, and sugar substitutes like Zusto. Join us for an energetic conversation about sweetening power.

1:15pm - 2:15pm Ganache Slabbing with Pate a Fruit; Making Confections using a Confectionary Guitar Cutter. BRIAN DONAGHY AND TOMRIC SYSTEMS This program presented by Brian Donaghy and Tomric Systems, takes attendees through the process of manufacturing pate de fruit (jelly), ganache, and slabbing them both into one delicious, layered, confection. Use of the confectionery guitar in creating this piece of candy will be demonstrated.

2:30pm - 3:30pm Who Knows Current Food Trends? ROSE POTTSHear me, See me, Touch me…Join Rose Potts of Blommer Chocolate Company for a deep dive into the current trends that are all about me (the customer) and my multisensorial experience. We’ll discuss the customer’s perspective as it translates into what’s hot at your candy counter. How do you stay on top of trends? When do you jump on the bandwagon vs. sticking with your tried and true products? This conversation will center around converting trends into concepts, featuring prototypes to taste and experience.

Chef Susan Notter, CEPC Susan Notter is the new USA Sales Professional for Felchlin at Max Felchlin AG; has taught for many years including eight years as Program Director for the Pastry Arts program at The Pennsylvania School of Culinary Arts. She was named one of the top 10 Pastry Chefs in the U.S. by Pastry Arts & Design Magazine. An American Culinary Federation (ACF) Certified Executive Pastry Chef and member of the national ACF Culinary Team, she has published two books, and finished 3rd place in the International Pastry Queen competition in Italy in Jan. 2012, and has appeared on the Food Network, most recently winning the Halloween Wars competition in Oct. 2011.

Chef Charles Niedermyer II Charles is a Chef Instructor at Pennsylvania College of Technology, where he has been teaching baking and pastry arts since 2005. He is a 2017 Top Ten Pastry Chef in America, as named by Dessert Professional Magazine. He holds several awards from the College, most recently a Distinguished Teaching Award in 2015. His nine years of industry experience include bakeries, restaurants, hotels, and clubs, including The Penn State Bakery and The Ritz-Carlton Hotel Company. Charles’ work extends well beyond the campus classroom. He is an active member of The Bread Bakers Guild of America, assisting with educational conferences all over the country. He supervises students at the Kentucky Derby each year, where they cook and bake for thousands of guests. Charles is a guest instructor for the Department of Food Science at Penn State, teaching baking science and product development. In 2015, Charles was a national finalist for Team USA, which competed at the 2016 Coupe de Monde de la Boulangerie. Charles regularly collaborates with

industry partners as well, creating interactive demonstrations and educational experiences for industry trade shows and events.

A Taste of the Industry: Do You Have Great Taste Buds?

Attendees may participate in a taste competition on the show fl oor (Think Blind Pepsi® Challenge) comparing differing fl avors of a specifi c product. Tasting “competitors” will be given a specifi c number of pieces of a confectionery product and must record their guess for the correct fl avor in each category (marshmallows, chocolate or jelly bean). The winners will be awarded a $50 Gift Voucher to be used at any vendor of their choice at the 2018 September Show. The events take placein the seminar rooms.
