3 tablespoons lemon juice1 cup all-purpose flour1 cup whole wheat flour2 teaspoons baking powder1 1/2 teaspoons ground cinnamon1/2 teaspoon allspice1/4 teaspoon salt1/2 cup packed light brown sugar3 tablespoons canola oil1 egg, lightly beaten1 teaspoon vanilla extract
directions:• Preheat oven to 350 degrees.• Coat a 9-inch loaf pan with cooking spray.• Toss peeled and grated apples with lemon juice to prevent browning.
• In a large bowl, combine flours, baking powder, cinnamon, allspice, and salt. Mix well. • In medium bowl, combine apples, brown sugar, canola oil, egg and vanilla. Mix well. add mixture to dry ingredients and mix well just until blended.• Transfer batter to loaf pan.

The Erie Canal is a major attraction and recreational resource in Wayne County. The canal had a huge impact on the surrounding villages of Macedon, Palmyra, Newark, Lyons and Clyde. The canal provided inexpensive and easy transportation of goods, which allowed agriculture and industry to develop. Local museums depict the “Era of the Erie” in many exhibits and remnants of the old canal are plentiful throughout the county. The canal takes center stage at numerous community events throughout the year.Today, the Erie Canal provides recreation for the whole family. Whether you’d care to fish, boat, canoe, kayak, hike or bike, Wayne County’s 35 miles of canal are waiting for you. Modern facilities such as marinas, hiking/biking paths, and canalside parks will make your experience a pleasant one.

Towering 150 feet above Lake Ontario in the Town of Huron, Wayne County, NY these bluffs, which are a large clay drumlin formed six to ten thousand years ago by a glacier, then eroded by waves and weather are now part of 597 acres acquired by New York State in 1963 to create Chimney Bluffs State Park. Hike the trails or walk the shoreline, either one will leave you awestruck! Pack a picnic lunch and enjoy the beauty nature provided.

The Complex includes federally-owned Montezuma National Wildlife Refuge, state-owned Northern Wildlife Management Area, land owned by private conservation organizations and private property. The MWC is an important wetland complex in the Atlantic Flyway which provides habitat for 386 species of fish and wildlife. Visitors can participate in wildlife watching, birding, hiking, canoeing, cross-country skiing, hunting, fishing and trapping.

The 5,200-square-foot facility offers year-round environmental education programs, exhibits and presentations. The MAC houses a large exhibit area, nature store, auditorium, meeting room, classroom and office area. On its 198 acres, there are five types of habitat, two restored freshwater marshes, two miles of trails, and an all-access observation platform. Canoes, kayaks, and snowshoes are available to access the heart of Montezuma’s wetlands, forests, and grasslands. Other recreational opportunities include nature photography, cross-country skiing, fishing, picnicking, wildlife viewing, and hiking.

PALMYRA WETLAND NATURE TRAILThis one mile trail interprets
one of the Erie Canal’s wetland communities. During your walk along level terrain you will be guided by numbered posts that correspond to paragraphs in the trail booklet. The booklet can be obtained from the Village of Palmyra Clerk’s Office or by calling the Wayne County Office of Tourism at (800) 527-6510. You will learn about the animal and plant life along the trail and hopefully spot some wildlife out and about.

BUTTERFLY NATURE TRAILDiscover the beauty of nature. This ¼ mile walkable trail is located in the Village of Macedon at Canal Park-Lock 30.
Enjoy bird watching, view the old/new canal system, picnic areas, camping, boat launch for boats, kayaks and canoes-all free. The trail is a 10 to 15-minute walk to the business district.

natural wooded area where native plants predominate. A viewing platform overlooks Black Brook which winds by the trail. Great stop for birding and The Trail of Hope is located on the campus of the Lyons Community Center.

HUNTINGWith a robust population of whitetail deer, and over 10,000 acres of public hunting grounds, Wayne County offers the perfect combination for the hunting enthusiast. Our deer are trophy-sized bucks. A recent study using New York State Big Buck Club’s trophy records rated Wayne the seventh county in the state for producing “wall hanging” deer.
Hunting for wild turkey has become a very popular addition for outdoor sporting enthusiasts, and Wayne County’s rural habitat has seen this magnificent game bird thrive, as the populations remain healthy year after year.
The majority of the public hunting acres or New York State Wildlife Management Areas (WMA) are located along the Lake Ontario shoreline, which lies within the Atlantic Flyway. Waterfowlers have the opportunity to hunt migratory species as they make their annual flights. The open waters of Lake Ontario flourish with mergansers, buffleheads, and goldeneyes. The calmer waters of Wayne County bays have abundant populations of teals, mallards, black ducks, and pintails.

Wayne County, with land originally included in Ontario and Seneca Counties, became a separate county on April 11, 1823. The county’s history actually begins long before 1823. Little has been written about the early Indians who lived in and around Wayne County. When the first white pioneers arrived in 1789, it does not appear that there were any major Indian settlements in this area. Rather, the Indians made hunting and fishing trips into this region where bear, wolf, deer and a wide variety of fish could be found in large quantities. Sodus Bay was a favorite fishing spot and a well-worn trail extended from its shores to the head of Cayuga Lake, where the Indians had permanent homes. Artifacts found throughout the county, particularly in the town of Savannah, indicate that Indians, at one time, did have permanent or seasonal camps in the area. In fact, as far back as 10,000 years ago, Indian hunters, following the retreating glacier, moved into the area to hunt such animals as mastodon and moose elk. Once agriculture was introduced into the Indian society, permanent settlement moved to the south of Wayne County, and into the area around the Finger Lakes.
