Wow, summer has flown by faster than the blink of an eye.

Thank you to all of the exhibitors who participated in the Curry County Expo. We are very proud of all of your hard work and perseverance. The Expo was a TEAM effort. We had several volunteers and families that helped before and after the show to make it successful. The sale was also a huge achievement. We are very fortunate to have a com-munity that supports our youth.

As we move forward into September, we have several im-

portant events coming up. First of all, we are asking exhibitors to com-plete the livestock survey. This survey will allow us to show the posi-tive impacts livestock exhibition has on youth. We also have several important meetings coming up. We will have a leaders meeting, coun-cil meeting, and county-wide 4-H meeting to discuss the upcoming 4-H year. Our office is also excited to offer work sessions for record books. Each week beginning September 17th, we will have a session to discuss a component of the record book and then you will have 30 minutes of work time. During this time, we will stay on the Zoom so we can answer any questions.

Remember, if there is anything you need, or anything we can

Citizenship Washington Focus is a leadership program for high school youth from across the country. Every summer thousands of young people stay at the National 4-H Center, near Washington, D.C. to participate in this weeklong program. CWF is a pro-gram which provides opportunities for youth to broaden appreciation and practice re-spect for themselves and others in their world; increase individual commitment to citi-zen involvement; and understand the importance of civic and social responsibilities as they relate to the development of better citizens and leaders. Time is provided for 4-H members to report accomplishments in 4-H to their representatives in the Washington, D.C. area as well as participate in sightseeing trips! The cost is estimated at $1,700 de-pending on airline ticket rates. The deadline for first payment of $250 is due October 15, the second payment of $500 is due March 16 with final payment due in May. The pro-gram is open to 4-H members ages 14-18, so get a group of friends together and start raising money for this hands-on opportunity to learn and practice skills that promote "Better Citizens Today. Better Leaders Tomorrow." Contact your County Extension Office for registration information.

** LIVESTOCK SURVEY**

Our office is conducting a survey that analyzes what youth are learning from their livestock projects.

The survey will take approximately 20 minutes and is compatible on both a phone and computer.

Completing the survey will be beneficial to both Curry County youth and the extension office. The

survey will help our office report the critical skills learned and positive impacts of livestock exhibition

for our youth. Additionally, we will use the results to assess what workshops youth need in regards to

livestock projects. The last day to submit the survey is Friday, September 11 by 11:59 PM. If you

have multiple exhibitors in the family, please submit a survey for each kid. Participants will have the

option of entering their name. All exhibitors who enter their name will be put into a drawing for a

prize. You should have gotten a link for the survey. If you did not, please send an email to

[email protected] asking for the link. The link is:

Apple Cinnamon Pancakes

Ingredients:

3/4 cup milk

1 1/2 tablespoons vinegar

1 cup flour

3 tablespoons sugar

1 teaspoon cinnamon

1 teaspoon baking power

1/2 teaspoon baking soda

1/2 teaspoon salt

1 egg

2 tablespoons oil

Apple Topping:

2 tablespoons butter

2 apples, peeled, cored, and diced

2 tablespoons brown sugar

1/2 teaspoon cinnamon

1/3 cup maple syrup

Preheat a skillet to medium-high

heat. Whisk together the milk and

vinegar and allow to rest for 5

minutes. While milk is curding,

whisk together flour, sugar, baking

powder, baking soda, and salt in a

large bowl. Whisk egg and oil into

milk. Add wet ingredients to dry in-

gredients and stir until combined.

(don’t over-mix, it should still

have some lumps). Spray skillet with

cooking spray. Use a 1/4 cup measur-

ing cup to pour batter onto skillet.

Cook about 2 minutes until bubbles

form and the edges start to look

“dry”. Use a spatula to flip the

pancake and cook another 1-2 minutes

on the other side. Set pancakes

aside and repeat with remaining

batter.

Add butter, apples, brown sugar, and

cinnamon to a medium sauce pan. Stir

over medium heat 3-5 minutes until

apples are very tender. Stir in syr-

up. Serve apple topping over warm

pancakes. Enjoy before school!

Freezer-Friendly Baked

Breakfast Taquitos

Ingredients:

1 large egg

Pinch of salt

Pinch of black pepper

1 teaspoon olive oil

3 tablespoons shredded cheddar

cheese

1/4 cup canned black beans, drained

3 small corn tortillas

Salsa, to serve

Preheat oven to 350 degrees

Fahrenheit. In a bowl, add the eggs,

salt, and pepper and whisk to com-

bine. Heat olive oil in a nonstick

skillet over medium heat. Add the

eggs and cook until barely set,

about 1 minute. Turn off the heat.

Add the cheese and black beans to

the egg mixture, stirring to com-

bine. Divide the egg mixture evenly

between three tortillas. Roll the

tortillas into a burrito shape.

Place the taquitos on a parchment

paper-lined baking sheet, seam side

down, and bake for 10 minutes until

barely crispy. Serve with salsa for

dipping.

Have an early morning trail ride?

This is a great meal-prep recipe.

Store the breakfast taquitos in a

freezer. To heat up, place the

taquitos on a place, cover with a

damp paper towel, and microwave for

two minutes.
