Inflammation is a biological response of the body to protect itself from harmful internal and external stimuliand start healing. It is a part of the body's immune system and protects us from infections, wounds and tissuedamage. Inflammation can be acute where it can start quickly and become severe in a short span of time. Forexample, acute inflammation can cause diseases and conditions like sinusitis, a sore throat from a cold, acutebronchitis, and more. Inflammation can also be chronic in response to unwanted toxins in the body likecigarette smoke or excess body fat. This may extend from months to years that may lead to conditions likerheumatoid arthritis, asthma and non-infectious conditions like tuberculosis, peptic ulcer, and hepatitis.
Chronic inflammation can be caused by stress, poor diet, unhealthy lifestyle, and environmental pollutants.Sleeping for a minimum of six to eight hours a night can help relieve stress and lower the occurrence of chronicinflammation. Regular physical activity can also reduce the chances of developing chronic inflammation bylimiting weight gain and relieving the stress on joints while helping to mobilize the joints.
A well-balanced and nutritious diet which includes all of the food groups is another way to combatinflammation. Foods rich in omega 3 fatty acids, fiber, magnesium, carotenoids, antioxidants and lycopenehave anti-inflammatory qualities and include: olive oil, tomatoes, walnuts, almonds, leafy greens (especiallyspinach and kale), fatty fish such as salmon and mackerel, blueberries, oranges, cherries, and spices likeginger, turmeric, oregano and cloves.
Understanding the link between chronic inflammation, diet and exercise will help in aging healthily and keepchronic diseases at bay. Eating an overall healthy diet rather than singling out foods and incorporating theminto your diet is the best way to fight inflammation along with exercise and limiting stress.

Egg knocking may sound a little messy, and it can be, but the tradition of egg knocking is afamily-friendly game played on Easter in Louisiana.
Also known as egg tapping, egg boxing, pocking or pâcques-ing (after the French word forPassover: Pâcques) egg knocking is a competition in which two players line up and strike twohard-boiled (and dyed) eggs together, point to point. Whichever egg cracks first is out and thewinner of that round then moves onto the next opponent. The last person with an intact egg isthe overall winner.
These egg battles have a long tradition among Louisiana families, though a story in Deep Southmagazine says the game has its origins in Europe, where the Greeks have a tradition of duelingeggs. That same article recounts a humorous story about two families in the small town of VillePlatte, Louisiana who would compete each year, with one family arriving in flatbed trucks with alive band and the other arriving via school bus while chanting, "We will, we will Pâcques you."
Competitors have their time-tested methods to produce a winner with one popular techniquecalling for eggs to be boiled points-down to ensure no air pockets. Others claim that boiling eggsin coffee grounds makes them stronger. Other folks get a little crazyand smash eggs side to side which seems to break tradition entirely.
Some towns even hold competitions. In Marksville, Louisiana, thereis “egg knocking” on the courthouse square, while Cottonport,Louisiana, has an "Egg Pocking on the Bayou Easter Festival" onEaster Sunday that features a 5k road race, festival with vendors, andcanoe races.

Ray Rohrbach was born in Allentown, Pennsylvania in1936. He was married for over 30 years. He has 3children and 8 grandchildren. Ray served in the AirForce for several years before moving to California.Ray was a technical writer for the Silicon Valley byday, and a crime fighting Ninja at night. He wroteover 20 tech books throughout his career. You canfind Ray hanging out in the Cafe or speeding down
the hallway to catch the baseball game.

He enjoys watching the Giants and the A’s. Ray really enjoys spending time withhis 2 grandsons, Sven and Jasper. We asked Ray to describe himself in 3 wordsand he said “grumpy, lumpy, dumpy, but we all know he is a very funny, kind, andand sweet man. He’s also a good ninja. Claudia TamayoClaudia Tamayo was born in Mexico City. She moved to
the U.S. 17 years ago. She has been apart of the Carltonfamily for 4 years, and loves interacting with our
residents. Claudia fist started in our house keepingdepartment, and now works in the kitchen as a prep
cook. Claudia has learned to be a better person becauseof all our wonderful residents. She enjoys outdoors
activities such as hiking and sightseeing.Family is very important to Claudia, it is always her first priority. Her words of
wisdom: “Always look forward and never look back”.

The Heart-Mind ConnectionAccording to doctors, chronic high blood pressure is the
single biggest risk factor for Alzheimer’s disease.And recent studies have indeed linkedcardiovascular health to brain health.
Nearly 50 million Americans suffer from hypertension, a condition in which theblood flows through the arteries with too much force. Hypertension increases yourrisk for stroke, heart attack and now it appears–Alzheimer’s. A study conducted by
the University of Pittsburgh showed that blood flow to the brain (critical for normalbrain function) was substantially decreased in the subjects with hypertension and
was lowest in subjects with Alzheimer’s combined with hypertension.
Another study from Northwestern University’s Steinberg School of Medicinefound a correlation between low sugar glucose in the brain, which occurs when
cardiovascular disease restricts the blood flow to the brain, and stickyprotein clumps that appear to be a cause of Alzheimer’s.
Bottom line: It appears what’s good for the heart is good for the mind. Whichmeans monitoring your blood pressure, getting enough exercise and eating right.
Greece is the WordIt turns out a heart-healthy diet is also a brain-healthy one. People who eat what is
known as a “Mediterranean” diet have a lower risk of developing mild cognitiveimpairment and Alzheimer’s disease. This is according to an observation study
done at Columbia University Medical Center. The study involved1,875 elder men who were asked to follow a Mediterranean-stylediet over the course of 4.5 years. The results show that the more
strictly one adhered to the diet, the lower their chances ofdeveloping dementia and Alzheimer’s disease.
So, what is a Mediterranean diet? One that’s rich invegetables, fruits, nut, legumes, fish, olive oil and
cereals. And goes light on dairy products, meat and fat.
Shall We Dance?Stop watching “Dancing With the Stars.” Get out there and
Samba, Cha-Cha and Foxtrot on your own. You’ll notonly have a stronger body, but a stronger mind for your
efforts. That’s what researchers at Albert EinsteinCollege of Medicine have discovered.
In a 2003 study, participants over the age of 75 whoengaged in reading, dancing, playing musical instruments
and board games at least 11 days a month had a 63% lower risk ofdementia. Out of the 22 physical activities in the study, dancing was the only
one that was associated with this reduced risk. According to Joe Verghese, leadresearcher of the study, perhaps one explanations is “dancing involves precise
physical activity, listening to the music, remembering dance steps and taking yourpartner into account. Which is very mentally testing.”
Not to mention an awful lot of fun. So put your dancingshoes on and work out that mind of yours.
