Our main focus is the specialty cheese and food markets, and our Passion is Food. Some of our top sellers are the

Zerto Asiago Cheese brand and Celebrity International Fine Goat Cheeses. Today, it would be extremely rare to find

a delicatessen counter that does not carry our Trend setters for your clients. Our line of cheeses range in origin from

Finland, Austria, Great Britain, Italy, Spain, Holland, and the United States. We also market some new and innovative

Canadian-made specialty cheeses. The United States-based Atalanta Corporation purchased Finica in July 1995 .

For more than 50 years, Atalanta has been the driving force in the food importing and international trading business.

With current sales exceeding $350 million annually, Atalanta has established itself in three continents with agents in

almost every major commerce centre in the world.

Today, Finica Foods Specialties Limited operates as a sister company of Atalanta. We continue to capitalize on

our experience in the importing of cheese and fine food with a clear mandate to represent our suppliers through

aggressive category management. Our customer base includes retail supermarket chains, independent boutiques,

and food service chain and independents. Our Distribution network is made up of specialty cheese and food

distributors across Canada. Some of the brands we represent in the cheese market today are Celebrity International

Goat Cheeses, Beemster, Finlandia, Zerto, Belgioioso and Sartori Foods. Our ever expanding Specialty Food

Brands now include John H Volpi, Trois Petits Cochons, Dalmatia Fig Spreads, 34 Degree Crackers, and Menu Italian

Gastronome.

Our marketing plans involve both manufacturers of cheese, and other food items, who wish to expand their Canadian

Why does goat cheese taste different? With its unique molecular structure, Goat’s milk looks different, smells different and tastes different from cow’s milk. We celebrate these differences, since otherwise we wouldn’t be able to enjoy its unique flavour.

What is “Chèvre?” Chèvre is the French word for goat cheese. Up until 15 years or so ago, most goat cheeses sold in Canada came from France. The use of the French word also contributed to the image of goat cheese as an exotic, elite food. France still accounts for the largest selection, and most-unique varieties of goat cheeses produced in the world today. However, as the health benefits and the delicious taste of goat cheese become better-known, other countries are beginning to increase their production. As individual Artisan cheese making becomes more widespread we will likely see even more varied and unique types of goat cheese become available.

Why does goat cheese cost more? Goats produce much less milk than cows do – about one-tenth as much. Also, goat’s milk curds are more delicate than cow’s milk, so fine cheeses must be made by hand. Fresh cheeses are highly perishable and therefore more costly to ship. However, due to their lighter textures and distinctive taste, most people usually don’t eat as much at a serving.

Is goat cheese better for me? Although some theories suggest goat’s milk is healthier than cow’s milk, different breeds of goats, like different breeds of cows, produce milk that is higher or lower in fat content, so it’s impossible to generalize. As a general rule though, goat cheese contains one-third less fat and half the cholesterol of regular cow’s milk cheeses. It is also true that goat’s milk is easier to digest because of its smaller fat molecules. Many people who cannot tolerate cow’s milk products are able to consume goat’s milk, cheese or yogurt without difficulty. Goat’s milk also contains higher levels of potassium, vitamin A, thiamine, and niacin, as well as a higher mineral content.

Although a relative newcomer to the goat cheese business, Celebrity International has nonetheless created a sensation with some of our new and innovative flavors. Located in Ontario, we are proud to feature cheeses made with 100% pure Canadian goat’s milk that are animal-rennet free. Sea salt is also added to their products, which, because it is iodine free, are preferred by the health conscious and vegetarians.

The past few years have seen a great increase in the number of goat cheeses available in Canada, as well as those produced abroad. Not withstanding the natural delicious flavor of these cheeses, there are a number of health reasons for this increase as well. Goat cheese naturally contains up to a third less fat than cow milk cheese, yet it is often misunderstood. Usually, if someone says they don’t like goat cheese, chances are they either haven’t tasted it or they have tasted a poorly-made or badly-handled one.

Goat Cheese OriginalAnimal Rennet Free, 100% Pure Goat’s Milk made in ONTARIO from ONTARIO Milk. Sea salt is added to the product, which is beneficial for the health conscious person or vegetarian because the salt has no iodine. For persons with lactose intolerance, goat cheese is a healthy alternative to cow’s milk cheese products. Goats are fed roasted soybeans, which are higher in protein and energy, plus corn-fed from products produced on the farmstead.

Goat milk is lower in fat and cholesterol, higher in calcium and Vitamins A & B. Goats convert all the carotene in their diet to vitamin A, leaving the milk and cream pure white. The yellow colour in other dairy products is due to the carotene in the milk.

Tania Sheep CheeseThis beautiful Tuscan-style sheep’s milk cheese from Lenberg Farms is made with 100% Ontario Sheep’s milk, in the burgeoning region of artisanal Canadian cheese making. Luuk Goat CheeseLuuk, inspired by Lindsay Bandaged Cheddar, is a 4 month old, 100% goat cheddar. Luuk is pleasant on the palate, but still offers the sharp, complex taste of goat cheese.

Our new truckles are inspired by the award-winning cheeses currently under the Lenberg Farms brand: Lindsay Bandaged Cheddar, Tania and Zoey. The truckles are younger versions of their counterparts, each with their own distinctive flavour. Graskaas - SeasonalA seasonal cheese, this limited availability product is only produced in the summer. Beemster’s world famous milk becomes even more coveted during the last two weeks of March. The milk taken from the Beemster cows during this period is the creamiest milk of the year. This is the only milk used to create Graskaas, an exceptional Gouda-type cheese enrobed in a vibrant, green rind. During the limited “first grazing” period, enough milk is collected to craft just 2,000 wheels of Graskaas; only half of which are exported to the US. Made in the beginning of April and aged for one month, the recipe for Graskaas dates back to 1901.

XOBeemster XO is matured for 26 months making it Beemster’s oldest cheese. Many people see 3-5 year old cheeses in stores and ask us why we do not make an older product. Once you have tasted Beemster XO you will see the answer is quite simple. As a cheese matures the flavors one tastes in the cheese expands. As this process happens moisture also exits the cheese, thus leaving the cheese tasting crumbly and granular in one’s mouth. Aged goat cheese already has a dynamic flavor, but when finished with olive oil and pepper, it only grows in complexity. After the initial aging period of 3 to 4 months, the rind is carefully cured for another 3 to 4 weeks. Cut into the rind – letting flecks of pepper float down after the knife to speckle the smooth, oil-tinged paste – for a unique experience.
