Place the metal press on top of the grounds, push gently but don’t compress the grounds as they need space to bloom. Add 20ml of hot water to the phin, to just abovethe press but don’t soak them. Wait a few minutes for thegrounds to bloom.

Place the phin on top of the cup. Fill the phin with 45ml of boiled water, about half way, and cover the phin with it’s lid. Wait for the water to filter through the grounds and into the cup below.
