(ARA) - From the barbecue sauce you slather onyour grilled chicken to the frozen dinner you grab between coming home from work and running thekids to soccer practice, sodium is simply every-where in warm-weather fare.

Even if you never add salt to your food whilecooking or eating it, you may still be getting toomuch sodium. If you have an ailment like heartdisease or high blood pressure, following a low-sodium diet is advisable, but may be a challenge toachieve.

If you’ve recently suffered a heart attack or beendiagnosed with heart failure, your doctor likelywants you to reduce your sodium intake becauseheart failure causes the body to retain sodium.Extra sodium can cause fluid to build up in your  body, and extra fluid makes your heart work harder  — not a good thing for a heart muscle alreadyunder strain.

A low-sodium diet means restricting your sodiumintake to just 2,000 to 3,000 milligrams (mg) a day — a little more than one teaspoon. Don’t confusesodium and salt. Sodium is a component of table

salt, making up about 40 percent of salt. Whilecertain kinds of salt, like sea salt, may have a bitless sodium there’s no such thing as a truly low-sodium salt.

While reading product labels can help you beaware of how much sodium is present in the pack-aged foods you eat — thanks to the FDA’s mandateto disclose such information - it can still be diffi-cult to achieve a low-sodium diet.

So how can you cut back on sodium? The HeartFailure Society of America, an organization aimed at improving the quality of life for people diag-nosed with heart failure and helping prevent thecondition in those at risk, offers a few helpful tips:

1. Lose the salt shaker.

If you’re still adding salt to your food when youcook or sit down at the table to eat, stop. You’ll cut

your sodium intake by as much as 30 percent by parting company with your salt shaker. Replacesalt with more healthy seasonings, like black,cayenne or lemon pepper; herbs like garlic, onion powder, dill, parsley and rosemary; lemon juiceand flavored extracts like vanilla or almond.

2. Choose low-sodium versions of favorite foods.

You don’t have to abandon all your favorite foodsin order to reduce sodium. Replace foods tradition-ally high in salt with fresh foods naturally lower insodium. For example, instead of preparing a coun-try ham, cook a fresh, lean pork roast. Substitutefreshly cooked and sliced chicken, turkey, roast beef or pork for lunch meats that usually contain a

lot of sodium. Instead of buying salty canned soups, chop up fresh veggies and cooked meats,toss them in the slow cooker and season with herbsand spices. If you must buy canned soups or veg-etables, look for labels that say “sodium-free,” “no

salt,” “low sodium,” “reduced sodium” or “unsalt-ed.”

3. Pick foods naturally low in sodium.

Generally, you can eat as much fresh food as youwant without counting the sodium content. Freshfruits and vegetables, including freshly squeezed fruit and vegetable juices, have very little sodium.(But remember, please don’t add salt to your fruitsand vegetables.) The same is true for fresh meat, poultry and fish. If you are not eating fresh foods,choose other low-sodium foods as much as possi- ble, such as canned fruits, plain frozen vegetablesand dried beans, peas, rice and lentils.

4. Learn to read food labels.

By reading food labels, you can learn which foodsare high and low in sodium. As a rule, most processed foods, whether they are frozen, canned 

or boxed, are high in sodium, but don’t rule themout entirely. Some packaged foods are available inlow- or no-salt versions.

It can be difficult to change your eating habits, buttry introducing changes slowly instead of all atonce. It may take weeks before you enjoy the tasteof low-sodium foods, but your taste buds willadjust. Be patient. Eventually you won’t even missthe salt.

ARA) - When Margaret Rossretired from a career in nursing,she had no idea that her new lifeas a volunteer would lead her right back into healthcare.

 Neither did Mike Chesnut,

whose work building retail part-nerships looks a lot like his vol-unteer service for a group of Denver nonprofits that are fight-ing homelessness.

The same is true for retireeBerlin Hall. Since leaving hisaccounting executive career,Hall’s desire to help at-risk fami-

lies led him to volunteer to man-age the books for a family serv-ices agency.

As they move into roles in serv-ice and volunteering, older adults like these are discoveringthat what they know is just asimportant as how much timethey can give.

Their help couldn’t have come ata better time.

With demand for nonprofit serv-ices skyrocketing, fundraisingand revenues are way down.Some experts predict as many as100,000 nonprofit organizationscould run out of money for their 

  programs completely.

The recession has spurred moreinterest in volunteering amongolder adults, particularly among boomers, says Jill FriedmanFixler, a nonprofit consultantand co-author of “Boomer Volunteer Engagement.”

“This is a group with abundantskills and profound circles of influence and they believe theycan have an impact in their com-munity right now,” she says.

That was the idea for Chesnut.After leaving his job as a retailsales executive with Procter &Gamble, Chesnut, 64, spent sev-eral years as a counselor for 

small business owners. When hemoved to Denver a few years

ago, he decided to focus onhelping nonprofits.

As he explored his options,Chesnut was struck by Denver’shomeless problem. Millions of dollars were being spent pulling

families out of shelters, but pro-grams that were trying to keepfamilies out of them to beginwith were underfunded.

After organizing a coalition of local nonprofits, Chesnut begana research project that eventuallyled to a successful $600,000grant.

“Coming from the corporateworld and working with largeretailers, you learn to look for common interest,” he says.“What I did was put numbers tothe problem.”

the new funding just wouldn’t be happening.”

For Ross, 72, the serious needs she saw as a volun-teer for SeniorsPlus in Lewiston, Maine, made her rethink the decision to step away from healthcarecompletely.

After retiring as director of nursing for a stateMedicare program, Ross signed up to help answer a referral phone line for SeniorsPlus, an agency

that helps the local aging population get servicesand support.

The organization was so impressed by her knowl-edge of medicine and healthcare benefits that theyasked her to take on a new role as a counselor, and even get additional training.

Seeing the healthcare system from the point of view of at-risk seniors has been an eye-opener,Ross says.

“In my old job, I rarely was aware whether the patient was insured or not,” she says. “Now I’m onthe other side of the fence saying, ‘Let’s get this person the coverage they need.’”

For Hall, a Hughes Aircraft retiree, volunteeringfor Family Assessment, Counseling & EducationServices (F.A.C.E.S.) was a way to shield somefamilies from the challenges his own family faced when his father, an alcoholic, left.

After reviewing Hall’s background, MaryO’Connor, the executive director at the SouthernCalifornia nonprofit, asked him to set up a newaccounting system for the cash-strapped group.

Five months later, the books are on the way to being balanced and Hall has become a strongF.A.C.E.S. supporter. He says his experience get-ting involved on a skilled basis, while frustrating at

times, has been extraordinary.

“If my mother had access to this kind of thing, Ican see how much better off we would have been,”he says with emotion. “But I had no idea that thekind of challenges this organization faces evenexisted.”
