As a kid, I remember planning my outfit for

the first day back at school weeks in advance.

Despite only being in class for an hour or two

that Tuesday after Labour Day, it was one of

the most exciting days of the school year.

Though as adults we don’t have the

countdown to back to school, there’s still a

certain amount of excitement when the first

of the fall fashions start popping up in store

windows; cozy sweaters, fuzzy boots and

bright knitted scarves just beg to be added to

your wardrobe.

Well, this edition of Indulge has no shortage

of fashion. We’ve got some sassy yet casual

outfits, elegant evening wear and everything

in between from some of the Fraser Valley’s

hottest boutiques, plus a look at what’s new in

children’s fashion, in time for the little ones to

head back to the classroom.

A culinary classicChef Bruno Marti dishes on a lifetime in the kitchen

For 30 years, Bruno Marti has defied the pre-

vailing wisdom that location and sensation

are keys to success.

From within the white walls of La Belle

Auberge, the heritage home built in 1905 by

D.B. Grant, Marti has crafted a living legacy.

Both an homage to classic French cuisine

and long-standing proof of purposeful

passion, La Belle Auberge is anything but your

typical success story.

After giving wings to the menus of CP Air

and looking to take flight on his own, Marti

settled on a location that spoke to the great

restaurants of Europe – off the beaten path

and always worth the trip.

“Maybe it is an old Swiss thing, but I always

needed to own my own place. Cooking is

too hard to do for this long

without it being a part of you,”

says Marti. “My years with CP

Air were fantastic, traveling the

world, staying in incredible

places, eating wonderful food. I

just got tired of fighting to retain

food quality and was too passionate to change

my fresh whole butter to whipped butter.

“Call it my ego, but I was incapable of

accepting that type of change.”

Driving the leaf-lined lanes of Ladner to

arrive in the dining room of La Belle Auberge

is undeniably to step not back in time, but

into the timeless domain of one who has

mastered their place in the world.

“Destination dining was quite common in

the Old World, but here in the New World,

I suppose, we have the wrongest location

imaginable,” Marti says with a rueful grin.

“Our key to success is to make our guests

the happiest people in the world. We do

special with great consistency; (cooking) from

scratch in the kitchen, to great attention in the

dining room. It’s all about providing a core

experience, and that philosophy keeps people

coming back to us and spreading the word.”

For Marti, the adherence to classic dishes

is nonetheless balanced by a love of the

contemporary, just as his competitive nature

has benefited scores of up and coming

culinarians. Together with Chef de Cuisine

Tobias MacDonald, and a kitchen crew whose

names will only grow in renown under his

tutelage, Marti has long crafted the future

from the best of yesterday merged with

modern techniques and relentless learning.

From putting Canada on the culinary map

as part of the team that captured gold at

the 1984 Culinary Olympics,

to serving as president of the

Canadian Federation of Chefs

and Cooks, to grooming the

country’s best for the prestigious

Bocuse d’Or competition

in Lyons, France… Marti’s

contributions to Canada’s culinary landscape

extend well beyond the plate.

“Call it classic. Call it what you wish. I

tell our people, ‘We cook good food with

zero gimmicks.’ We don’t spend a lot of

time talking about sustainability. It’s about

supporting your neighbourhood and taking

advantage of the great products available.

“Buying local is a pretty obvious decision

because all fruits and vegetables taste better

when they are ripe. Summer is our four

months of bliss. I love my vegetables as much

as my meat, and that comes across on the

plate. We feed people, not stuff them. There is

always a balance between taste and nutrition,

so we need to look at what makes people feel

better than when they walked in the door.”

That conscious appeal to community

underlies every aspect of Marti’s ongoing love

affair with Ladner, as well as the industry

he so ably represents. From setting up shop

at the summer Farmers Market in town to

running cooking classes in the cooler months

to readying the next Canadian Culinary

Olympics team for the world stage, his

energies verge on indefatigable.

“We continue what we do wherever we are.

I am of a ripe age now and would die if I did

not do what I love. Yes, it is a lot of work and I

still wring out my shirt after a busy night, but

you know something… I can always say, ‘That

was a day worth living!’”

Wild Pacific Spring Salmon with Honey Mustard Glaze

1½ lbs. boneless salmon filet pinch sea salt to taste freshly ground black pepper 2 Tbsp honey 2 Tbsp Dijon mustard 2 Tbsp grainy mustard

Preheat barbecue to high. Combine honey and mustards. Brush salmon with a little olive oil and season with salt and pepper. Place salmon, skin-side up, on hot grill and turn a quarter of the way after one minute to create a nice cross-hatch. After another minute, flip over onto skin side and glaze with the honey mustard. Close the barbecue lid and watch for flare-ups as the honey burns easily. Cook to desired doneness; another minute for rare and

about 4-6 minutes for well done. Remove from grill and serve immediately.

Organic Tomato Soup Flamed with Gin

8 medium tomatoes, roughly chopped1 ½ Tbsp butter1 medium, onion, chopped3 ribs celery, chopped4 cloves garlic, sliced1 cup chicken stockto taste salt and pepper¼ cup gin creme fraiche (optional)

Melt the butter in a medium-sized saucepan over low-medium heat. Add onions, cook for one minute, then add celery, garlic, and a healthy pinch of salt. Cover and continue cooking on low heat until soft, about 15 minutes. Add the

chopped tomatoes and chicken stock, bring to a simmer and cook for another 30 minutes. Purée and strain through a sieve. Discard pulp. Season soup to taste with salt and pepper, divide soup into bowls, pour gin into a soup ladle held over heat for about 30 seconds, then carefully light on fire and pour over the soups. Garnish each bowl with a dollop of creme fraiche and chopped fresh herbs as desired.

Anise Glazed Carrots 4 medium carrots 3 Tbsp onions, finely chopped pinch salt ½ tsp. anise seeds 1tbsp. butter ¼ cup sugar ½ cup water 1 tsp . cornstarch

Finely chop onions and sweat off very slowly on low heat for about 10 minutes in the butter with a pinch of salt; watch for the onions to become slightly translucent. Add anise seeds and cook on low heat until onions are very soft, about 10 minutes, also on low. Peel carrots, cut into desired shapes and add to the onions. Sauté for one minute, then add sugar and water. Cook carrots until al denté, about 8-10 minutes. Make a slurry with the cornstarch and 2 tbsps. cold water and add to the carrots. Cook until liquid thickens enough to a coat the carrots.

Reserve four whole strawberries for garnish, stem remaining strawberries and mash with liqueur using a fork; stir in lemon zest. Fold berry mixture into ice cream, then gently fold in whipped cream and serve immediately in chilled martini glasses. Garnish each with a strawberry.

A young blond woman stares intently at the

man facing her a few feet away. She takes

a few strides towards him, stepping onto his

clasped hands, which throw her high into the air.

She rotates mid-flight and lands upside down

in a handstand position on the man’s strong

hands, toes pointed in opposite directions.

The room is silent, creating a tension that

makes the ambitious trick seem even more

impressive. The two communicate with the

slightest movements of their bodies – no words

are spoken, at the risk of breaking their deep

concentration.

With apparent ease, he bends his knees and

throws her well into the air, where she flips

before he catches her feet at chest level.

After a few more seconds of holding steady, he

gently tosses her up, then gracefully eases her

small, muscular frame to the mat.

The tension breaks once both have two feet

safely on the ground. They quietly discuss

the sequence, scrutinizing every detail of the

remarkable display, which, to the untrained eye,

appeared to be flawless.

They disagree.

They’re both visibly tired after nearly two

hours of training – it’s a hot day at the South

Surrey gymnastics centre, and the man’s T-shirt

is drenched in sweat. But they refuse to move on

to another sequence until both are satisfied with

their performance.

Once again, she steps onto his clasped hands

and is sent flying into the air.

KELSEY WIENS and Preston Jamieson are

enjoying a slightly less hectic lifestyle at their

home base in White Rock this summer.

The couple returned to B.C. in July after

spending five months in New York performing

with Cirque du Soleil’s production of Banana

Schpeel. As one of five specialty acts within the

two-hour theatre production – described as

“vaudeville with a twist” – Wiens and Jamieson

performed their five-minute hand-to-hand

acrobatics routine up to 11 times per week.

“I throw her, she flips, I catch her,” is how

Jamieson, 31, sums up the art of hand-to-

hand acrobatics. With years of professional

dancing experience behind them, however,

they’ve infused their routine with an element

of grace and rhythmic flair well beyond simple

handstands and flips.

It’s been four years since the couple were

first introduced to hand-to-hand, after years of

being dance partners – which already involved

plenty of acrobatic-like lifts. They saw a video

of the challenging hand-to-hand routine by

two Cirque performers and were inspired.

“We thought, ‘that would be so cool if they

could dance,’” 26-year-old Wiens says, noting

that before long the two were training and

auditioning for the National Circus School in

Montreal.

Despite having no gymnastics experience,

they were accepted into the school and were

quickly thrown into a busy training program

– including up to 10 hours a day of acrobatics,

juggling, dance, theatrics, and, of course,

hand-to-hand. Jamieson says the training

within the two-year program – which included

a range of academic classes – was invaluable.

“There are a certain amount of mistakes

that have to happen in the learning process.

That’s why it was nice to go to this school and

work with coaches and have that safety there,”

he says. “It was only four months after we

finished school that we landed with Cirque.”

BORN and raised in Edmonton, Wiens and

Jamieson have been acquaintances for many

years, as both were regular fixtures on the

town’s competitive dance circuit. But it wasn’t

until they both landed a dance contract in L.A.

in 2002 that they grew closer, and soon fell

in love. Since then, they have been practically

inseparable, touring worldwide with

professional dance troupes, before pursuing,

then achieving, their dream of circus stardom.

They’re quick to admit, however, that

finding a balance between their close-knit

professional lives and the routine of a normal

couple presents its share of challenges.

“It’s a constant learning process on how

to work together, and then try to leave it

behind,” Jamieson says.

“Because we know each other’s buttons so

well, when we’re in training we know how to

push that button if things aren’t going right,

or we’re a little bit tired.”

WHILE they may be on a brief reprieve from

the 11-show-per-week schedule they were used

to in New York – allowing them the chance

to house hunt in South Surrey, tone down the

training regime slightly and take in Cirque’s

“kick-ass” production of Kooza currently

running in Vancouver – things haven’t slowed

much for the duo.

They’ve recently started filming a high

school cheerleading TV show – produced by

the CW network, Hellcats stars Ashley Tisdale

(High School Musical) and is set to debut in

the fall. They’ll also be reuniting with their

Schpeel cast mates for a Toronto run starting in

September, and have just signed on for a new

Cirque show in L.A. slated for early next year.

In the meantime, they’re not content to just

sit back and bask in their success.

“We really want to keep improving

ourselves,” Wiens says. “You know you can

be great right now and stay at that level… but

you know there’s going to be some kid that’s

going to do all your tricks and more, so we

have to keep pushing ourselves.”

Jamieson agrees, pointing out that they

couldn’t ask for a better opportunity than

performing with Cirque du Soleil.

“We’re living the dream job.”

with pepper steak or barbecued ribs (that’s

what beer is for, anyway) but the varietal

complements a surprising range of other

foods – salmon, pork and poultry come to

mind. I have enjoyed some delightful bottles

of Pinot Noir with risotto.

Pinot Noir vines thrive in most B.C. wine

regions. Quails’ Gate is believed to have

planted it first, in 1975. Today, it is the second

most widely planted variety after Merlot, and

ahead of Cabernet Sauvignon.

Vancouver Island’s top Pinot Noirs are

made by Averill Creek, Alderlea, Blue Grouse

and Venturi-Schulze. The best Pinot Noirs in

the Okanagan and Similkameen come from

Quails’ Gate, CedarCreek, Blue Mountain,

Kettle Valley, Meyer Family Vineyards, Mission

Frenz and Howling Bluff and probably a few I

have overlooked.

The best budget priced Pinot Noirs are from

Arrowleaf Cellars and Peller Estate.

It has been six years since the movie Sideways

turned Pinot Noir into North America’s

most fashionable red wine.

Wine fashions ebb and flow. It was reported

recently that the sales of Syrah have hit a wall

in the United States. The story did not really

explain why: perhaps big red wines have

limited appeal.

Pinot Noir, however, still is selling well even

if most people have forgotten the movie,

which glorified both the consumption of

Pinot Noir and the chasing of women. (It

beats me why there was no feminist backlash

against the crude

elements of the movie.)

There is no doubt

Pinot Noir got a big lift.

Tony Stewart, the

president of the winery,

told me that Quails’

Gate, before the movie,

had trouble getting restaurants to sell Pinot

Unique fashion line allows kids to be kids, with style

W hile the life of an entrepreneur often

means all work and no play, South

Surrey’s Traci Costa has found a way to

balance plenty of both.

With a successful career in merchant

banking under her belt, Costa’s perspective

on life changed with the birth of her first

daughter Cailin in 2003.

“Because I wanted to have children so bad,

it was like this whole new world opened up to

me,” Costa said of her shift towards all things

playful that came with having a child.

Motherhood also introduced her to the

world of children’s fashion, which Costa felt

was missing an element of practicality at the

time.

“I realized there were so many things that

were fussy on clothes – jeans with buttons and

zippers,” she said. “I thought, ‘why isn’t there

something that’s comfortable, fashionable and

practical?’”

At the urging of some co-workers, Costa

began looking into creating her own line

of comfortable, easy-to-manage children’s

clothes and soon discovered there was a huge

need for such fun fashions.

“I started doing focus groups with moms

and conceptualizing, and I soon realized I

wasn’t the only one out there

experiencing this,” she said.

In 2005 Costa’s clothing line,

Peekaboo Beans – described as

“playwear for kids on the grow” –

was officially launched.

What started as a single-person operation

has steadily grown to a company with several

staff and distribution across North America.

But Costa is quick to note that at the heart of

the company is more than just creating and

selling children’s clothes.

“Through this process, I’ve realized there’s

been this real shift in how children are playing

and how they’re consumed with TV and

computers and different things,” she said.

“I’ve realized the fundamentals of play are so

important, and (the company) is all morphing

into this thing of being passionate for play.”

Along with a growing business, Costa is

also enjoying a growing family – her second

daughter, Colbie, was born in 2009.

While Costa admits balancing

a young family and a thriving

business is always a challenge, she

lauds the great support she receives

both from her family and her team

at Peekaboo Beans.

“There are so many great people on our

team – I always say it’s getting the right people

on the bus, and I definitely have the right

people,” she said. “I love what I do and my

family is very supportive.”

While the kitchen conjures thoughts of delicious meals and the

bedroom is the ultimate place to unwind, a home office is

generally aligned with something a little less enjoyable – work.

However, that doesn’t mean home offices deserve any less attention

than other rooms when it comes to planning, decorating and

customizing. A home office has the potential to be one of the most

essential areas of the house.

Sabina Khan, owner of Advance Tutoring in Surrey,

knows all too well the importance of having a dedicated

office space in the home. As someone who works full-

time from home, Khan said she faced many challenges

conducting work from her previous residence, which

didn’t have room for an office.

“It was very challenging for my family, because I worked out of my

living room,” Khan said. “While I was tutoring, everyone else had to

stay upstairs.”

Since moving into a larger home and creating a dedicated office for

teaching, Khan said things have become much easier for her family.

While an in-house office for people who work from home is essential,

Khan said it’s also important for students to have a consistent, quiet

place to study and do homework.

“You don’t want your child studying in a place where someone’s

watching TV,” she said, adding that an office that has all the necessary

supplies at hand will help students focus. “If you’re sitting down to do

your homework, and you have to wander around to find all the things

you need, by the time you set everything up, your brain is all over the

place and it doesn’t help for focusing on any subject.”

There’s plenty to think about when creating a

functional workspace within your home, according to

Jamie Bamfield of Spacial Effects Design.

“You need to consider what it’s going to be used for,

who’s going to use it and how it’s going to be used,” Bamfield said.

“For an office, the main things are function and storage.”

As an example, Bamfield points to the type of surface one might want

on their desk would vary depending on the kind of work they’ll be

doing on the desk.

“A lot of people have granite in their kitchen and they love it so much,

they want to do granite in their office,” he said. “It’s cold, hard when

your elbows are on it, and it’s not going to be too comfortable.”

Surrey-based interior designer Lyla Veinot said that in addition to

an office’s function, lighting is another essential element in creating

a practical work space.

“Natural light is always good in a room you’re going to be

spending a good portion of your time in,” Veinot said. “If you go

into a closet or an area that doesn’t have a window, it’s not great for

an office space.”

Electronics are another factor for consideration, Veinot said, noting

that a room’s existing wiring can potentially cause layout problems.

While the kitchen conjures thoughts of delicious meals and the

bedroom is the ultimate place to unwind, a home office is

generally aligned with something a little less enjoyable – work.

However, that doesn’t mean home offices deserve any less attention

than other rooms when it comes to planning, decorating and

customizing. A home office has the potential to be one of the most

essential areas of the house.

Sabina Khan, owner of Advance Tutoring in Surrey,

knows all too well the importance of having a dedicated

office space in the home. As someone who works full-

time from home, Khan said she faced many challenges

conducting work from her previous residence, which

didn’t have room for an office.

“It was very challenging for my family, because I worked out of my

living room,” Khan said. “While I was tutoring, everyone else had to

stay upstairs.”

Since moving into a larger home and creating a dedicated office for

teaching, Khan said things have become much easier for her family.

While an in-house office for people who work from home is essential,

Khan said it’s also important for students to have a consistent, quiet

place to study and do homework.

“You don’t want your child studying in a place where someone’s

watching TV,” she said, adding that an office that has all the necessary

supplies at hand will help students focus. “If you’re sitting down to do

your homework, and you have to wander around to find all the things

you need, by the time you set everything up, your brain is all over the

place and it doesn’t help for focusing on any subject.”

There’s plenty to think about when creating a

functional workspace within your home, according to

Jamie Bamfield of Spacial Effects Design.

“You need to consider what it’s going to be used for,

who’s going to use it and how it’s going to be used,” Bamfield said.

“For an office, the main things are function and storage.”

As an example, Bamfield points to the type of surface one might want

on their desk would vary depending on the kind of work they’ll be

doing on the desk.

“A lot of people have granite in their kitchen and they love it so much,

they want to do granite in their office,” he said. “It’s cold, hard when

your elbows are on it, and it’s not going to be too comfortable.”

Surrey-based interior designer Lyla Veinot said that in addition to

an office’s function, lighting is another essential element in creating

a practical work space.

“Natural light is always good in a room you’re going to be

spending a good portion of your time in,” Veinot said. “If you go

into a closet or an area that doesn’t have a window, it’s not great for

an office space.”

Electronics are another factor for consideration, Veinot said, noting

that a room’s existing wiring can potentially cause layout problems.

When it comes to esthetics, Bamfield

Veinot agreed, adding that colour and

she said. “It’s a place you can sometimes

do things you wouldn’t do in the rest

of your home. If you use pieces that are

functional, yet have some pizzazz, that

brings in some sophistication.”

4. PARISAs every fashionista knows, Paris is one of the world’s premier

shopping cities.

Its streets are not only chock full of exquisite shops and boutiques,

but the city’s architecture will take any frenzied shopper’s breath away.

The most famous department store in the city is Galeries Lafayette.

Built in 1893, it offers an extraordinary selection of jewellery,

cosmetics, accessories, gifts and apparel.

In addition to the luxury shopping area of Avenue Montaigne and

Avenue des Champs-Elysées, Ballantyne recommends hitting a Paris

flea market – such as Porte de Clignancourt’s famous “Les Puces” (The

trip would not be complete

without a stop in London to

shop at Harrods, the world-

is best known for its fragrance and beauty products, fashion accessories,

gifts and high-end apparel. Highlighted brands include Stella

Another must-stop is Savile Row, a street in Mayfair, Central London,
