Escape to

Though open from March to December,

Lakeside Farm and Cider Mill in Ballston

Lake radiates the feeling of fall and every-

thing that comes with it. It could be the

apple cider press, dating back to 1880’s, or

the freshly-made apple cider doughnuts,

but this apple cider mill and market is

surely a hot-spot for fall activities.

Dick Pearce grew up working on the

farm with his family after his parents

Robert and Agnes purchased it in 1948,

which was formerly known as Lundy

Farm. The property had been out of use

since World War II when the Pearce fami-

ly stepped in. The farm had acres of fields,

an old barn and farm house at the time,

and since then there have been many addi-

tions to the property. Thanks to Robert

Pearce, the changes on the property have

been well documented.

“We ran a beef and dairy farm and pro-

duced cider primarily, but my father was a

camera man the whole time,” Dick Pearce

said as he thumbed through hundreds of

projection slides containing pictures of the

farm ranging from the late 1940’s on.

The old cider press, which is still in use

today, helped Lakeside Farms grow in pop-

ularity. Each Thursday, Pearce and his

sons press fresh apples and make cider

which he said tourists come back each year to

buy.

“When my father started making cider, he

used to sell if for five cents for all-you-can-drink.

We used to bottle it here as well,” he said. “We

made 250,000 gallons of cider in a two month

period back then.”

Because times are changing though, Lakeside

Farms no longer individually bottles their cider.

It is still for purchase by the gallon, however.

The public loves the cider and fresh apples

available so much that the Pearce family had to

build an apple barn in 1971 to house the vast

supple of apples for both purchase and the pro-

duction of cider. By this time, the property also

housed a small retail store selling locally-pro-

duced goods, including some of the crops grown

on the premises. Most of their farming went to

feed their cows for dairy production. Dick said

that he knew that “Mom and Pop” stores were

being taken over by the big box chains, and it

was important to him to still cater to locals as a

place to get fresh and high-quality produce. He

began to sell crops in bulk, such as onions and

potatoes, which he said customers really liked.

By the 1980’s, though, the farm was producing

beans, tomatoes, corn, squash, pumpkins and

cucumbers. Through growing fresh vegetables,

Lakeside Farms started a sandwich and salad

menu and after a short period of time the break-

fast menu was introduced. Customers grew

fond of Lakeside’s fare and began to pre-

order platters of sandwiches, salads and

desserts for large gatherings. Shortly there-

after suggestions that Lakeside cater special

events came flooding in from local customers.

They began hosting and catering parties and

gatherings for companies, family reunions,

weddings and more. For the past 20 years,

Lakeside Farms has hosted a pig roast in

their pavilion for their customers. In the

1990’s, the family built a pavilion on the

premises to accommodate larger parties and

have hosted at least four weddings since

spring 2010.

“We have a lot of fun. We raise our own

pigs and have a roast each year on the first

Sunday after Labor Day,” Dick said. “We can

host parties and cater barbecues also. We

really just like to have fun here.”

Dick, now 78 years old, said that if he was

younger he’d still grow vegetables and run a

larger farm. While the family-owned and

operated business still produces fresh herbs, they

mainly cater to their market, café and apple busi-

ness. Fresh fruits and vegetables are also available

at Lakeside Farms and they offer locally-pro-

duced goods such as fresh eggs from local farms,

milk from Battenkill Dairy, homemade salsas and

tomato sauces and their ever-popular freshly

made apple cider doughnuts. On a slow day, 18 to

20 dozen doughnuts are made fresh, but during

the height of apple season, they make as many as

40 dozen batches. With such a busy operation,

Dick said that he relies on his family and other

employees to keep the business running. Above

all, though, he likes to have fun.

“We’ve been doing this a long time. If it wasn’t

fun, it wouldn’t be what it is today,” he said.

Lakeside Farms and Cider Mill is still a family-

owned operation today with three generations of

Pearce’s, their relatives and friends working to

keep it going and growing.

Throughout the region we live in, the

landscape is dotted with more than a few

locations that leap out to tantalize the eye and

mind.

As we journey, it can be randomly or with a destina-

tion. But sometimes without forewarning we happen upon

incredible homesteads and estates that appear to have been

there forever; they are built in concert with the land and respect for

architectural history. Down the road we find modern marvels that leave

us breathless in a similar way, but for completely different reasons. Still others

take elements of the past and of the future and make it work today.

They can be situated in the middle of the urban landscape, or off a rural road some-

where. But the common ground between them is that they draw us in with their uniqueness

and creativity; they make us think: “I wish I knew the story behind that place, or “I wonder

what’s inside.” Each issue, the magazines of Saratoga Publishing will spotlight one such wish and

of the nooks and crannies; the

unique places and creative spaces

that add accent and spice to our

area.

Hermance Road closely parallels

the main artery (route 29) as it bus-

tles through the Town of Galway,

but there are spots on it that make it

feel like the two roads are a hun-

dred miles apart.

One such property sits on 63.5

acres; with a 4-bedroom farmhouse

that from the outside looks at least

150 years old; perhaps 200. The

property also has a horse barn with

stalls, with walking paths and

wildlife that add to the ambience

that makes it feel like you are visit-

ing living history. But the house

has a secret:

Center, the farmhouse was less

than one-year-old when Joe

Codacovi and Bev Palazini moved

in… in March of 1992. The house

is not even out of its teens yet,

though it looks as if it might date

back to the early 1800’s!

“He (Center) did a great job in

capturing history,” said Joe

Codacovi. “No one would ever

think that 20 years ago, this wasn’t

even here.” The challenge and joy

for Joe and Bev was in decorating it

in a manner that captured the spirit

of the intended era of the architec-

tural elements, one in which time-

less woodwork and brick detailing,

cathedral ceilings and brick fire-

places sat side-by-side with (albeit

mostly hidden) modern conven-

iences such as central air condition-

ing and security systems.

“We wanted a place that was

peaceful and conveyed the richness

of history, while still taking advan-

tage of 21st Century innovations,

of course,” Joe said.

The results of their efforts are a

“modern Early-American paradise,” if

you will. This is a place where every-

thing old has become new and the con-

temporary blends into the timeless

seamlessly.

In most of the rooms, the utilization

of brick fireplaces sets the tone. The

main living room’s hearth is gigantic,

with an ornate rug sitting atop wide

plank pine floors with leather couches,

exposed beams and historical artifacts

and…a giant entertainment center. The

eat-in kitchen gives the impression

that most of the cooking is done over

the embers, not in a modern range. The

office nook looks like it goes back at

least six generations; you don’t even

notice the computer.

Bedrooms are even more loyal to

the overall architectural framework,

with period-shaped doors, furnishings

and ceiling work that shouts: ‘they

don’t make it like this anymore.’ The

master bedroom’s feature is a classic

4-poster bed, while the guest room fea-

tures a natural cherry sleigh bed. “It

took us 20 weeks to get it manufac-

tured in Amish country and delivered

here,” Joe related. But once in place,

this like many of the furnishings

appears to have been in place for close

to two centuries as opposed to almost

two decades.

On the grounds, a man-made

Japanese koi pond is home to about

100-150 fish. “I’m watching a blue

heron stalking the koi pond now,” Joe

related. It is fronted by a gazebo which

is perfect for soaking in the idyllic

ambience. Elsewhere on the property

is a natural beaver pond where Joe

says “the beaver and I are constantly

fighting as to how big the pond actual-

ly will be. The beaver always wins, but

I don’t mind a bit.”

Dr. Martin Ferrillo started wine collecting three to four years

ago as most people do: a couple of bottles at a time. As his tastes

developed and refined, he would find particular joy in a vintage

and begin those bottles in larger quantities.

At the beginning, storing these containers was the epitome of

basic, “a few wooden crates in a dingy old cellar” which was in

the basement of his otherwise beautifully maintained house in

the Town of Wilton which traces its roots back to the 1770’s.

Looking back, Dr. Ferrillo noted “the only thing inviting about

the space was that it had decent temperature and humidity.”

As he started to pass from a casual accumulator of wine into

the ranks of a true enthusiast/collector, he developed a yearning

to have a space that would truly showcase his wine collection.

For “Marty” and wife Dr. Radka Dooley, this had become much

more than a hobby; wine collecting was a labor of love and an

intrinsic part of their lives, and the desire grew stronger to have

a one-of-a-kind sanctuary that reflected this.

“The basic inspiration was to have something grotto-like with

Tuscan walls; an ‘old-world’ kind of space,” Dr. Ferrillo said.

“At one point I actually thought about doing this myself but real-

ized that the

best I would be

able to do would be fairly

average.”

But a referral from a friend brought custom remodeler Chris

Carney to Dr. Ferrillo’s attention and it became obvious shortly that

the two were going to work well together. “Chris was ingenious in

how he opened up the space, the way he hid what was functional

and made it either look like it always belonged or was able to hide

things like pipes, wires and unfinished ducts completely.”

The project was accomplished in relatively short time, beginning

just before the Holidays in 2009, and was ready by Dr. Ferrillo’s

birthday on March 28. “We celebrated by toasting each other with

a bottle of Chateau Lafite Rothschild from the year of my birth

(1975).”

The walls and staircase leading down to the cellar itself lets you

know that you are in store for something very special. For over a

year, Dr. Ferrillo had been accumulating pine wine crates from var-

ious vintages, and was able to acquire many with the help of a shop

in Scotia known as Freemans Bridge Wine and Liquors. “Anyone

should ask their local retailer(s) to save them. Often times these

might go unclaimed.” Dr. Ferrillo noted.

Perhaps less so when people see what Chris Carney did with

them! Like an intricate puzzle, the crates are utilized in such a way

that the eyes are drawn simultaneously to the individual logos and

designs, and when taking in the overall effect it is nothing short of

dazzling and yet welcoming.

“The challenge was in matching up the thicknesses to create one

consistent plane,” Chris said, “the pine crates’ thickness can range

anywhere from 1⁄4 to 3⁄4 inches.”

The use of the cellar’s original beams is a highlight in the over-

all scheme, imparting a sense of history that dovetails well with the

warm wall colors and modern lighting (that replicates the vintage

effect of wall-candle sconces) and offers accents to various points

of the room while imparting an overall inviting glow. They also

illuminate glass window-boxes that were constructed in the walls

to showcase items such as classic bottles and antique corkscrew,

emphasizing the feel of a history here.

The full barrels which dot the cellar at various intervals come

from France, and the original fireplace was enhanced with

"Wine is about the experience."

American oak half-barrels containing wine-racks that

house some of Marty’s favorites: “My collection empha-

sizes Napa Valley Cabernets and French Bordeaux. In my

opinion, my number one preference is to choose the Napa

Cab, because of its consistent greatness from vintage to

vintage. There is no denying that with Bordeaux, the

‘high vintages’ are higher, but there is definitely more

inconsistency.” He said. “Radka’s taste tends to come

from the area of the world she is from (Czechoslovakia),

where Rieslings dominate, so we have plenty of those that

we enjoy.”

Sitting atop the half-barrels is a tasting table painted

with the apropos logo of “Ferrillo Cellars 2010” and

embellished with the Doctor’s favorite automobile’s

insignia, Aston-Martin.

And it wouldn’t be a sanctuary in 2010 if you weren’t

online! So above the tasting table is a computer and large

flat-screen: Certainly capable for entertaining guests with

the latest blue-ray release, but also has a practical compo-

nent. “I use some software called ‘cellartracker.com.’” Dr.

Ferrillo says, “It keeps a running total of my cellars’ val-

uation, offers great information on each bottle’s prime

‘drinking window,’ it’s a great source to share reviews

from other enthusiasts and hear about the latest estate

offerings.”

Their collection in the maple racks lining the walls cur-

rently ranges between 600 and 700 bottles, and currently

there are plans to add space to house room to store 300 to

400 more.

The cellar will continue to evolve in other ways as well.

Plans are in the works to install café chairs and barstools

out of wine barrels with matching tables for tastings that

can accommodate between 8 and 10 people at a time.

For Dr. Ferrillo and Chris Carney, their association on

this project led to others around the house, such as a

remodeled deck and replacement windows. But when

you hear Marty talk about his love of wine, you have an

idea that the cellar will always be his favorite project:

“Wine is about the experience. It’s always a joy to bring

some home from a trip as the drinking becomes the

remembering… the memories of when and where you

were when acquired it, and the great times you had then,

while enjoying it today.”

Sitting in Donna Talley's Saratoga Springs home is like hanging out in the pages

of a favorite magazine: you know that people do live in houses like this, but you don't

actually know anyone whose environment is this peaceful and perfectly elegant. If

only you had the vision to put it together with such ease and comfort, you'd create the

same space—or at least one that reflects your own favorite colors and genuine style.

You want to take notes at Talley's home, because she has spectacular ideas.

It's precisely because she has the innate, intuitive knowledge of what-goes-with-

what that she is one of the leading Photo Stylists and Producers of sets for some of

the most renowned and trusted home magazines in the country. Donna Talley is a

Field Editor for the Meredith group of publications: you may not know her by name,

but you've seen her work and loved it. She's on the masthead of magazines such as

Better Homes and Gardens, Country Gardens and 100 Decorating Ideas Under $100.

She's the one whose job it is to see a serene garden or home, secure the space for the

photo shoot and bring the scene to life.

The Marriage of Big Shoulders' Sense and Big Apple Style.

Donna Talley's journey to Saratoga began in Chicago, the great city of Big

Shoulders. The native Chicagoan and Juilliard alumna (music composition) exited

the Big Apple and followed her homing instinct northward. The late 1990s found her

in Saratoga, designing topiaries: if you're a long-time local, you've experienced her

charming works of art, and admired them. She had taken her artistic self from the

world of music into the realm of home décor via her artist's eye and her love of green

things. She took that same creative instinct to build on the topiaries to create a career

that is both fulfilling and constantly challenging.

So how did she get from Point A—topiaries in the former Palio building—to Point

B—the position of being one of the country's most respect-

ed and emulated stylists? Dame fortune played a major role,

as people and opportunities came to her in the most unex-

pected ways. It all started with a request that a topiary form

be overnighted to Country Home magazine. This seemingly

isolated incident put her in the "Seen and Noted" section of

that publication. This led to a completely meant-to-be

moment when the editor of Garden Style Projects (a Better

Homes and Gardens book) happened to be in the right place

at the right time to see that same topiary, and asked Talley if

she'd be "interested in doing some projects."

"Some projects" turned into nearly-exclusive work for the

Meredith group. The door of opportunity was opening, and

Talley ran through it.

That photo shoot for Garden Style Projects was an eye-

opener in more ways than one: she reports that the first time

she looked through the lens and saw that picture, that first

fulfillment of her own vision—she knew that this was her

life mission. She could see all the elements coming togeth-

er to help her design her own life and path.

From that one moment of realization, Talley has built a

career that is enviable—but she is quick to point out that

anyone can find their bliss if they seek it. Her moment

came, and could have gone unnoticed—but her ability to

to seize that first opportunity and sculpt it into something as

perfect as her home.

Environment as a Reflection of Self.Every inch of her personal space is based on white; the

background of every room features a shade of white paint

with colors that either complement or pop. One room is

white with sage or coffee, another sees the whites mixing

with summer shades of turquoise and lime. Fresh flowers

from her garden adorn every surface in vases ranging from

enormous to Thumbelina-sized.

A perfect pitcher of lemonade—complete with thick

slices of the fruit bouncing among the ice cubes—sits on the

kitchen counter in the bright room that begs visitors to perch

at the island and chat for hours. Vintage-looking glasses are

poised to serve up the delicious concoction. The visual is

perfect, and none of this is for show. This is the true image

of the artist's inner workings. This is the space in which she

is truly and genuinely At Home. The warmth spurs her to

create, to think, to write and plan. She is comfortable in this

be beautifully done without breaking the wallet. In this eco-

You could say it was love at first sight.

Thirteen-year-old Curt Schreiner

learned about biathlon while watching

from the stands during the 1980 Winter

Olympic Games in Lake Placid, New

York. Already a cross-country skier with

a recreational interest in shooting, Curt

was immediately captivated by the

thought of ski-racing with a bolt action

.22 rifle slung over his shoulder.

So he and his older brother Jim, who

was also a skier and a hobby shooter, set

out to become biathletes.

Their home in Day, New York was the

perfect training ground for their new-

found interest. With 175 acres of wilder-

ness right in their backyard, the

Schreiner family (both young boys and

their parents Betty and Jim) quickly

turned the land into a challenging 5-mile

network of trails with a fully-functional

shooting range containing 15 lanes with

knock-down targets set for offhand and

prone. A small group of area biathletes

pitched in, which is how the effort to cre-

ate the Schreiner’s personal training

facility aptly became the Saratoga

Biathlon Club.

While Jim soon lost interest and took

up kayak racing instead (which he was

quite successful with), Curt became an

increasingly passionate and skilled

biathlete.

He devoted up to six hours each day

six days each week to training; he had to

work on increasing his endurance and

speed, and achieving an accurate shot.

“Biathlon is really how good of a shot

you are under stress. It’s a different level

of shooting; it’s all about controlling

your heart rate and breathing,” he said.

“Most biathletes start out as cross-coun-

try skiers; the shooting is what keeps it

interesting.”

Soon enough, all the hard work and

dedication paid off. Just eight years after

the club was formed, Curt was already a

first-time competing member of Team

USA, as an Olympic biathlete in the

1988 Games in Calgary, Alberta. He

competed in the 10K and 20K races, fin-

ishing 50-something in both, but placed

ninth in the relay event with teammates

Darron Benning, Lyle Nelson and Josh

Thompson.

From there, he went on to compete in

two more Winter Games and hundreds of

yearly events across the world.

Curt’s next Olympic appearance was

in the 1992 Winter Games in Albertville,

France where he once again competed in

the 10K and 20K events; he finished 37th

and in the high 40s respectively, and 13th

in the relay. His final Olympic contest

was in the 1994 Games in Lillehammer,

Norway where he represented Team

USA in the 20K and relay events. In

2000, Curt achieved his top result when

placing sixth in the Military World

Championships.

Today, years after Curt’s Olympic run,

the Schreiner’s backyard trail-system is

still in use. Members of the Saratoga

Biathlon Cup host annual races and train-

ing events on site and the family remains

dedicated to the sport, through recre-

ational competition and maintaining the

grounds.

Although biathlon is primarily a winter

sport, the Club holds between four and

five competitions over the summer, plus

three biathlon and two cross-country ski

races in the winter.

“In the summer, it’s more about recre-

ation. The core of biathletes will general-

ly come to the summer races because it’s

a good way to practice their shooting

skills and get a good workout in,” he

Curt’s whole family is involved with the sport. His wife

Deb Nordyke competed in the 1988 Winter Games in Japan,

and his six-year-old daughter Katrin, nine-year-old son Erik

and 11-year-old son Jon all enjoy cross-country skiing on the

trails, and practicing their shot when their father is around to

supervise.

However, not all Saratoga Biathlon Club members actually

compete in the races throughout the year. Many just take

advantage of the facility and the nominal membership fee. For

just $30 per year for an individual, or $40 per family, mem-

bers can train on the course and practice their shot: during the

winter, they can cross-country ski on the beautiful trail sys-

tem, and in the summer, spring and fall they can run on the

trails.

“People can run on the trails; we prefer them to be club

members, but we won’t have a problem with someone check-

ing it out and then realizing they’ll want to come back,” Curt

said.

The membership fee covers the gas used to maintain the

machines.

“We’re lucky if we break even just so my family (parents,

brother and wife) and the club members can use it,” he said.

“It’s definitely a labor of love.”

Biathlon integrates two sports for two different seasons of com-

petition: winter biathlon, which is the primary sport, combines

cross-country skiing and rifle shooting. The summer variant inte-

grates distance running with the same precision target shooting.

The distance component depends on the event – whether it is an

Individual, Sprint, Pursuit, Relay, Mixed relay or Mass start com-

petition – however, the format is relatively consistent.

As explained by the International Biathlon Union, the clock is

always running in a biathlon event. In a typical winter race, biath-

letes ski a set distance (between six and 20 kilometers) with their

rifle and stop between two and four times to hit five knockdown

targets from 50 meters intermittently from the “prone” – laying

flat, facedown – and “standing” positions in the allotted number of

five rounds. The two different shots involve separate targets: prone

is 4.5 cm in diameter and standing is 11.5 cm in diameter.

Biathletes are penalized with one minute added to their distance

trial for any targets missed in an individual race, and an extra 150

meter penalty loop immediately following the imperfect round in

all other competition formats. In essence, the trickiest part of the

biathlete’s challenge can be their responsibility to keep track of

missed targets and penalty loops, thus making

the trial both physically and mentally com-

pelling.

After firing the final five rounds in the event,

biathletes will ski a final loop, or a penalty loop

followed by a complete distance loop, before

completing the race.

Here is a breakdown of the varying events:

The Individual competition covers the longest

distance out of all biathlon events, and begins

with a staggered 30-second interval start, which

can make it difficult for the “novice spectator” to

keep track of who is in the lead. For the men, a

twenty-mile challenge is completed with a

sequence of four kilometer cross-country skiing

loop intervals set apart by four shooting rounds.

For the women, the race totals 15 kilometers.

Both male and female competitions issue a one

minute penalty for missed targets.

As the title indicates, the biathlon Sprint is a

faster-paced event in which skiing speed takes

precedence over shooting precision. The men

will cross-country ski three loops of three, then

four and then three kilometers with only two

bouts of shooting in between, while the women

will ski three 2.5 kilometer loops, also stopping

twice for shooting. A missed target denotes a

150 meter penalty loop before moving on to the

next distance interval.

The Pursuit event ranks biathletes by their

qualifying times, ordering the start hierarchical-

ly with the fastest competitor at the front. The

format for the men is a 12.5 kilometer challenge

with four bouts of shooting (prone, prone, stand-

ing, standing) interspersed. For the women, it’s

a ten kilometer contest.

Four-member teams compete in the high-

pressure Relay competition. Men team mem-

bers must ski 7.5 kilometers in total, at 2.5 kilo-

meter intervals two bouts of shooting (prone,

then standing) in between loops, while the

women team members must complete a total of

6 kilometers, at three 2 kilometer intervals. The

penalties are distributed differently in this event:

each competitor hopes to knock down all five

targets in the five rounds loaded in their maga-

zine; however, if a target is missed, the biathlete

must load and shoot one of their three spare

rounds, until all targets are hit. The time it takes

to reload and fire the extra rounds function as a

penalty time. The team whose fourth member

crosses the finish line first is the winner.

The Mixed Relay is also a team contest, but

with two men and two women working togeth-

er to achieve the fastest finish. The male team

members must ski a distance of 7.5 kilometers,

stopping twice for shooting, while the two

female members ski a total of 6 kilometers. The

race starting order is female, female, male, male.

Similar to Pursuit, the start numbers are based

on a previous event: they are “based on the sum of the National

Federation’s current Cup Score. The team of the leading

National Federation gets the start number 1, the second the num-

ber 2, and so on,” as stated on the IBU website (www.biathlon-

world.com).

The Mass Start event begins with a simultaneous start and

shooting follows the prone-prone-standing-standing sequence;

however, in the first firing round, competitors will shoot at the

range according to their starting number, while the following

rounds will depend on the biathletes’ actual order of arrival. The

men’s race covers a distance of 15 kilometers, and the women’s

race covers 12.5. If a competitor is lapped in the competition,

they must immediately withdraw, and the 150- meter penalty lap

applies.

“The summer races are kind of like training for the winter,”

Curt said.

Aside from the running distance of the component, the main

difference between winter and summer biathlon is that the sum-

mer event only has two formats: sport and match. As a sort of

practice in the offseason for skilled biathletes, the Match class is

meant for the more serious competitors while the Sport race is

set up for the novice.

One of the first things new-comers realize about Saratoga isthat this is a true community—neighbors really do worktogether, generally harmonious-ly—and when they get togetherfor a cause, the effects are far-reaching.
