There is a story about a Hindu priest from Java called Dang Hyang Nirartha or “Peranda Sakti Wawu Rauh". His life was full of mystical episodes from his arrival until his disappear-ance in Bali. One of the Hindu teachings, which is similar to other religions, refers the world after death or the "here after world". This world is contrasted into two polarizations such as the Garden of Eden and Hell. For those devotees, a promise of all goodness and happiness is there, which is called "sorga". In the Hindu tradition in Bali, it is said that the "sorga" is undescribed by words or pictures. Where truth is an absolute and body is embraced into it, so it only exists as "enlightenment". One cannot enter the "sorga", unless he or she has completed duties or behaving as indicated by the religious teaching and has achieved a holy spirit status. Dang Hyang Nirartha is believed to be the one that has reached such stage and he accomplished his liberation on a piece of land which is believed to be the sacred place. In this sacred place then was built a temple called Ulu Watu as well known as today’s Pura Uluwatu.

Bentar gates. Standing across from each gate, there are two statues of elephant-headed men. When both statues are united, it will form the shape of a sarcophagus.

Built in the 11th century, it is one of nine directional temples meant to protect Bali from evil spirits. The temple perched on its cliffside of Jimbaran is famous for monkeys, as well as the beautiful sunset scenery. At the entrance of the temple, travelers will be provided with sarongs to cover up, as a sign of respect and are also encouraged not to wear any jewelries or sunglasses, in prevention of being taken by the monkeys.

Another popular activity within the temple is watching the famous Kecak Dance, starting around 6 pm (but do come early to get the best seat or contact our concierge). The dancers percussively chant "cak" and throw up their arms, depicting a battle from the Ramayana. The monkey-like Vanara helped Prince Rama fighting the evil King Ravana. Kecak has roots in Sanghyang, a trance-in-ducing exorcism dance. Le Méridien Bali Jimbaran is only 30 minutes drive from the renowned Pura Uluwatu.

Can’t Stand The Heat?Italian born Executive Chef Rossano started his culinary apprenticeship at the age of 16 with the Italian National Army for 4 years and then moved to Kassel, Germany. With more than 22 years of culinary experience covering over 12 different cities including, but not limited to - Kassel, Hamburg, Frankfurt, London, Munich, Kuwait, Jamaica, St. Kitts and Nevis, Jakarta, Turks & Caicos, Norwich and Mumbai. Some of the celebrity he has served includes Lucy Liu, Gene Simmons, Julio Iglesias, Anna Kournikova, Materassi, Gordon Ramsay, Chelsi and Liverpool team.

Chef Rossano’s approach to cuisine, he says “I keep my food simple and let the best local produce delivers its authentic flavor, infusing a bit of my Italian roots flavor or cooking tech-nique, as well as what I have learned through-out my culinary journeys from different regions.” Chef Rossano is fluent in Italian, English, German, Spanish and Bulgarian, he also gets by Bahasa Indonesia.

Chef Rossano heads up a brigade of over 30 culinary specialists at Sheraton Bali Kuta Resort, featuring Bene a light-hearted, upbeat and fun-filled modern Italian trattoria; as well as Feast an all-day market of cuisine with visual explosion over the open kitchens, among other culinary outlets.

In the upcoming Kitchen Table, he shared “we wanted to let real foodies know that there is much going on behind the plates and the cutleries, we allow them to experience beyond the food and get involved in the process”.
