history & PhilosophyLocated in the heart of the Alentejo region, the Herdade do Esporão estate was established in1267. Having passed through various families and counts of the region, the property has beenowned by the Roquette family since 1973. Their first wine was bottled in 1985.

Herdade do Esporão are keen to preserve what is genuine and traditional, but seek to combine thiswith innovation. At the heart of all their projects is the preservation of the environment and biodiversity.

Wine production is overseen by the well respected and highly experienced winemaker DavidBaverstock, who is at the forefront of modern Portuguese winemaking. His philosophy is to createauthentic and exciting wines, taking full advantage of Portuguese heritage and grape diversity andcombining it with a contemporary approach.

Vineyard & climateHerdade do Esporão is characterised by the diversity of its volcanic and schist soils. Warmed by theAlentejo sun, which is tempered by cool Atlantic breezes, the Estate stretches for over 1800 hectaresand includes 500 hectares of vineyards and 82 hectares of olive trees.

Sustainable production methods are used throughout and a large area of vineyards is currentlybeing converted to organic production. Currently there are over 200 grape varieties planted atHerdade do Esporão, of which 31 account for 98% of the total production.

sustainability and BiodiversityEsporão aim to adapt all agricultural activity to organic methods in the next five years. Currentlyintegrated pest management and better agricultural methods are achieved by gathering data fromweather stations, soil humidity sensors and using fully automated irrigation systems. There areapproximately 100 soil profilers installed to assess the level of water in the soil. Irrigation is thenadjusted to cause the plant to experience water stress during the grape’s growth phase, thusachieving lower but higher-quality yields. Herdade do Esporão have also created a manmade damknown as the Caridade dam which further enables effective irrigation systems for the vines andhas attracted new wildlife to the estate. There are now over 111 different species of animals onthe estate including wild pigs, foxes, deer, corkscrew tails, otters, wild cats, hares, rabbits and ahuge variety of birds.

experimentation & commitment to indigenous VarietiesEsporão was the first wine company in the world to sign the “Countdown 2010” initiative, withone of their commitments being to encourage and protect the cultivation of a wide range of originalgenetic grape varieties to help discover alternative solutions for the future. Their AmpelographicField (lab-vineyard) is testament to this commitment. This 9 hectare vineyard is planted with acollection of over 200 Portuguese, and some foreign, grape varieties, which are in danger ofbecoming extinct. This intense experimentation and collaboration between the winemakers andthe viticulturists results in wines such as the ‘Monocastas’ range. The constant trials and researchin to how each variety responds in different soils and micro-climates results in very small quantitiesof unique, high quality single varietal wines being made each vintage.

torre do esporãoHerdade Esporão’s roots date back to the pre-historic times of megalithic cultures and the BronzeAge. Even during the Roman occupation, the wines of Esporão were exported throughout theEmpire.

At the heart of this estate, in the scorching Alentejo heat, lies the Esporão Fortified Enclosure,which includes the Nossa Senhora dos Remédios Chapel and a curious fortified gate, with a windingstaircase that leads up to the ramparts. The Tower of Esporão is thought to have been built byMorgado Álvaro Mendes de Vasconcelos between 1457 and 1490. The main purpose of suchtowers had originally been for housing; however above all, they were a symbol of lordship andmilitary power. Today the tower it is a symbol of Esporão.

history & PhilosophyDocuments indicate that Quinta dos Murças existed as early as 1714. In the early 1800’s – 1900’swine was produced, but in 1950’s wine production advanced significantly under the guidance ofthe young agronomist José de Freitas Sampaio. He revolutionised the farm’s cultivation andvinification techniques, and introduced the first ‘vinha ao alto’ (vines planted on vertical terraces)in the Douro. Today the farm is run by the family owned Esporão company. David Baverstock, whois at the forefront of modern Portuguese winemaking, oversees the winemaking and aims to takefull advantage of the great Douro terroir and grape diversity, and to combine Portuguese traditionwith some of the most advanced vinification techniques.

Vineyard & climateThe 156 hectare farm (60 hectares planted under vine) contains predominantly indigenous grapevarieties, with vines aged from 15-70 years old, and classified as Grade A (the region’s topclassification). Stretching along 3.2 km of the right bank of the River Douro in Cima Corgo, thelandscape is inhospitable, rough and virtually untameable. Flora shyly sprouts among the rocksresting on stony and schist soils, making the vines less vigorous and verdant than in Baixo Corgo.The climate is more severe here than in the other Douro sub-regions: 9 months of cold and 3months of intense heat. The Quinta’s winery is typical of the region with traditional ‘lagares’ forgrape treading and fermentation. The winery has undergone complete modernisation, includinggravity fed operations for wines such as Assobio.

10 Year Old TawnyHarvested from vineyards with an average age of 20 years, only ‘A grade’ grapes are selected. A very complex nose with hints of fig,walnut and a touch of vanilla.

history & PhilosophyPerelada is one of Spain’s most dynamic wineries. It is still family owned and run, based in the 14thCentury Castillo Perelada, in the small town of the same name, in the heart of the Denominaciód’Origen Empordà. Perelada is one of Spain’s principal Cava producers, creating premium Cavas inthe Alt Penedès region of Northern Spain. They also produce premium still wines in the smallEmpordà DO – 2,500 hectares, on the Costa Brava, which has become one of the most prestigiousDO’s in Spain. Chief Winemaker Delfi Sanahuja produces elegant, exciting and highly acclaimedwines, capturing the essence of the region.

Vineyard & climateCatalonia forms the north-eastern corner of Spain and borders France alongside the Pyreneesmountain range. It includes nine Denominació d’Origen, including DO Penèdes, where Pereladacontrols 300 hectares of vineyards at high altitude, and the soil and climate are ideally suited tothe production of grapes for Cava.

In Empordà, Perelada own 125 hectares within five vineyards: Finca La Garriga, Malaveïna, Garbet,Espolla and Pont de Molins. These vineyards produce exquisite single vineyard wines, as well as the3 and 5 Fincas wines that offer exceptional value. Within Empordà there are many soil variations,ranging from sandy and gravelly to stony terraces.

history & PhilosophyThe Priorat DOCa is situated in the most southern province of Catalonia, Tarragona.

The region was elevated in 2009 to Qualified Designation of Origin (DOCa) status. The only otherregion with this Classification in Spain is Rioja.

‘Cims’ is Catalan for ‘summits’ which reflects how the vines and winery sit at the summit of thePorrera village. Cims de Porrera wines are still made in the old village co-operative where thefacilities have been fully modernised to maximise the full potential of the region’s unique vineyards.Their focus is to produce only two premium wines which truly reflect the Priorat region.

Vineyard & climateEach vineyard is situated on the steep, rocky slopes above Porrera village at an altitude between400 and 600 metres. This rugged and steep terrain and the age of the vineyards (between 40 and100 years old) demands meticulous harvesting by hand. The vineyards are harvested and vinifiedseparately, and the wines remain in their separate tanks until final blending.

The combination of unique black, slate soils, a rich variety of micro-climates and vines more than100 years old, results in wines that are widely recognised for their exceptional quality.

history & PhilosophyBodegas Tobía is a recent newcomer to Rioja. Established in 1994, its founder and moving spirit isOscar Tobía, who comes from a local family of wine growers based in San Asensio. His aim is tomake original and distinctive wines which also respect their origins – Rioja – but with a modernslant. Oscar was the first person in Spain to create a barrel fermented rosé wine. He continues toproduce innovative wines which are highly acclaimed and rewarded around the world, and oftenused as benchmark examples by the Rioja Institute.

Oscar has undertaken several research projects, both on his own behalf and for the benefit of thewider winemaking world; these include the role of micro-oxygenation in winemaking, and thedevelopment of ‘smart’ vats where the Carbon Dioxide produced by fermentation is used to pumpover the must.

Vineyard & climateLa Rioja DOCa is located in the centre of Northern Spain, nestled in the valley of the Ebro andsheltered by two mountain ranges from the cold northerly winds and fierce southerly winds thatsweep over the Iberian plateau. The valley has many different soil types, including ferrous,calcareous and alluvial. Bodegas Tobía manage 80 hectares of old, low yielding vineyards, plantedin 15 communes across the region. This allows them to create wines of great quality, showing thecomplexity, originality and essence of Rioja and its indigenous grape varieties.

history & PhilosophyBodegas Fontana, owned by the Cantarero Morales family for over 30 years, has been a majorcontributor in bringing about changes in the area, achieving recognition for Uclés as a new zonewith the ‘Designation of Origin’. Jesús Cantarero, the current owner, has brought together a highlyexperienced, eclectic, multi-national team of wine professionals, including Sam Harrop MW, whoproduce authentic, contemporary wines of great purity and freshness. The wines offered range fromexpressive, organically grown varietals to terroir-driven, single-vineyard selections with real depthand complexity.

The team at Fontana works in a truly inter-disciplinary way, integrating every decision from vineyardto market and combining a deep understanding of the Castillian terroirs with a global outlook. Theiraim is to produce interesting wines that represent a modern interpretation of the local winegrowingtraditions, conveying a true sense of place while always offering outstanding quality and value.

Vineyard & climateThe Fontana estates are located in Uclés, the most Northern tip of Castile-La Mancha, an areaknown for both its fresh, aromatic whites as well as outstanding reds from the Tempranillo grape.At an altitude of 700-900 meters, the wines of Uclés show the purity and freshness typical of theNorth with the intensity and ripe, velvety tannins of the Mediterranean. Fontana manages its estatessustainably and as integrated ecosystems, taking advantage of the low levels of disease in this dry,continental climate. No pesticides are used, organic manure is the only fertilizer applied and weedcontrol is done by light, superficial tilling.

Oveja SeriesThe Oveja Series is a ‘dynamic’ range of limited releases. Singlebottlings of exciting experiments from the vineyard, showing thepotential of the area and grape varieties. Quantities and grapevarieties bottled will vary year to year. The sheep on the labelsrepresent the region and its heritage, and are a symbol of Fontana’shonest approach to winemaking.

Quinta de QuercusQuinta de Quercus is a single-vineyard wine made from the hillsideplantings of 30 year old Tempranillo.Its intense nose combines aromas of blackberries, rosemary and hintsof spicy cloves. Full-bodied and concentrated on the palate, its juicyfruit flavours and muscular tannins are perfectly balanced with fineoak complexity and vibrant acidity on the long finish.

The team at Fontana has an integrative, non-dogmatic understanding of the world of wine. Insteadof seeing art and science in opposition, it seeks constant learning and an ever deeper understandingof nature, carefully applying technology where it contributes to more sustainable viticulture and tocrafting more authentic and expressive wines.

D.O. UclésCreated in 2006, the D.O. Uclés is among the newest and smallest quality appellations in Spain,reflecting homogenous growing conditions in its 1,700 hectares of high-altitude vineyards. Locatedat the most Northern tip of Castile-La Mancha region, the appellation is formed by rolling hills in abeautiful landscape dominated by oak trees and sheltered by mountains and vast pine woods tothe North.

The region has a continental climate with temperature variations of over 20°C between day andnight. In combination with generally deeper and cooler soils than areas further South, the D.O.Uclés produces expressive wines which combine freshness with silky tannins

The appellation follows ambitious environmental policies and is among the first in the world tomeasure its carbon footprint.

Quinta de QuercusQuinta de Quercus is a single-vineyard wine made from the best parcels of the Quinta de QuercusEstate: the 24.3-ha ‘Camino Las Morras’ and the 20.9-ha ‘Viña Ocaña’. Vineyard & climateUruguay has a temperate climate with warm summers and cool winters. The winery is located inthe southern Canelones region which has large diurnal temperature shifts influenced by the AtlanticOcean and the cool winds from the river Plate’s estuary. These conditions allow for dry farming ofthe grapes – without using artificial irrigation. The Canelones region is characterized by its chalkyclay soils and gently rolling landscape which allows good water drainage and guarantees perfectconditions for high quality wines.

history & PhilosophyAs the land acquired in 1988 for the establishment of vineyards by Tony & Susie Parkinson sat onfoothills at the base of Penny’s Hill, east of McLaren Vale, so the vineyard was named. In 1991 theyplanted the initial narrow-rows of Shiraz, aimed at minimum crops for maximum quality, and withthe 1995 vintage the decision was made to bottle and label a small quantity of wine under thedistinctive ‘red dot’ packaging. history & PhilosophyOne of the original McLaren Vale pioneers, Thomas Goss (1810-1890), his wife Mary Ann (1813-1891) and their children arrived in South Australia from Devonshire in 1849. After success in theVictorian gold fields, Goss established an iconic farming property, ‘Ingleburne’ in McLaren Vale,which is now home to some of the region’s leading vineyards. Descendants of Thomas Goss thenventured into the neighbouring Adelaide Hills, where the cool climate was perfect for whitevarietals. Today these wines are a tribute to the persistence of Thomas Goss and his family's longcontribution to the region.

Vineyard & climateMcLaren Vale has an unrivalled reputation in Australia and indeed the world, for constantlyproducing first-class wines. It has one of the most consistent, Mediterranean-style climates ideallysuited to growing premium grapes; Shiraz and Cabernet Sauvignon being the stand-outs.

history & PhilosophySituated in the Cape Winelands of South Africa the barrel-vaulted cellar buildings of EikendalVineyards form a distinctive landmark on the R44 route, positioned between the historic universitytown of Stellenbosch and the residential suburbs of Somerset West. Since 1981, the 76 hectarewine farm has been under the ownership of the Saager family of Zurich. The Swiss ownersrecognised the great potential of the area and wasted no time in modernising and extending thevineyards and the cellar facilities. Since 2006, winemaker Nico Grobler has been producing anexciting range of premium South African classic varietals and blends.

Vineyard & climateThe winery is positioned in the so-called “Golden Triangle” of South Africa’s red wine production.Eikendal have excellent terroir, with ‘koffieklip’ coffee stone and sandy soils with a good layer ofclay beneath. The close proximity to the sea of False and Table Bay provides a cooling andhumidifying effect, aerating the vines leading to less disease pressure, and cooling down the vinesat night. Extended ripening periods leads to better quality grapes and a reduced loss of naturalacidity. Eikendal take a minimal intervention approach in the vineyard, only using chemicals whenabsolutely necessary. Their vineyard team have been on the estate for generations, and areexceptionally skilled and trained. Straddling the slopes of the Helderberg mountain range, some ofthe Cape's finest wines are produced here.

history & PhilosophyThe Van Zyl family has been producing wine on the estate for three generations. The Estate issituated near Bonnievale in the southern part of the Robertson wine region, 150km from CapeTown and 70km from the South Atlantic Ocean. Wines from this area have become householdnames both in South Africa and internationally. Van Zylshof is a small estate where father-and-sonteam Chris and Andri Van Zyl believe in producing limited quantities of handmade, quality wines,using time-honoured methods combined with modern techniques. Since 1984, the Van Zyls haveconcentrated on planting only the best clones available of Sauvignon Blanc, Chenin Blanc,Chardonnay, Cabernet Sauvignon and Merlot. They produce an entry level range that provide easy-drinking, good quality wines that offer excellent value for money.
